WINTER SQUASH IN COCONUT MILK



Winter Squash in Coconut Milk image

1 1/2 pounds dense-fleshed winter squash, like butternut, peeled, seeded and cut into big chunks
2 tablespoons butter (optional)
3 cups (2 cans) coconut milk
1/2 cup brown sugar, or to taste
Pinch salt
1/2 teaspoon vanilla extract

Steps:

  • In a saucepan, combine squash, butter, coconut milk, sugar and salt and bring to a slow boil. Cook, stirring, until squash is very tender, 15 to 20 minutes. Cool to room temperature or refrigerate.
  • Just before serving, stir in vanilla. Purée mixture in a blender or leave it chunky; serve cold or at room temperature.

1 small onion, chopped (1/4 cup)
1 pound Hubbard or acorn squash, peeled and cut into 1-inch pieces
2 medium yams or sweet potatoes, (3/4 pound), peeled and cut into 1-inch pieces
1 cup coconut milk
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • Heat oil in 10-inch skillet over medium heat. Cook onion in oil, stirring occasionally, until tender.
  • Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer 10 minutes. Simmer uncovered about 5 minutes longer, stirring occasionally, until vegetables are tender.
