CAESAR'S PASTA SALAD

3 cups 1/3-inch-diced day-old bread
2 tablespoons olive oil
1/2 cup freshly grated Parmesan
1/4 teaspoon kosher salt
1 cup freshly grated Parmesan
1/2 cup reduced-fat buttermilk
1/4 cup reduced-fat Greek yogurt
1/4 cup extra-virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 cloves garlic, smashed and peeled
2 hearts of romaine lettuce, cut into 1/3-inch pieces
2 ears of corn, kernels removed
8 ounces tricolored fusilli, cooked and cooled

Steps:

  • For the croutons: Preheat the oven to 400 degrees F.
  • On a small rimmed baking sheet, toss the cubed bread with the olive oil, Parmesan and salt. Bake until golden brown and crispy, about 15 minutes.
  • For the dressing: Meanwhile, in a large bowl, whisk together the Parmesan, buttermilk, yogurt, olive oil, salt, pepper and garlic. Set aside to let the flavors marry for 5 minutes.
  • For the salad: Remove the cloves of garlic from the dressing and discard. To the bowl of dressing, add the lettuce, corn, pasta and croutons. Toss well to coat.

1 package (20 ounces) refrigerated cheese tortellini
1 pound boneless skinless chicken breasts, cut into 1-1/2-inch pieces
1/3 cup finely chopped onion
1 tablespoon olive oil
2 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon pepper
1 package (10 ounces) hearts of romaine salad mix
1-1/2 cups grape tomatoes
1 can (6-1/2 ounces) sliced ripe olives, drained
3/4 cup creamy Caesar salad dressing
3/4 cup shredded Parmesan cheese
6 bacon strips, cooked and crumbled

Steps:

  • Cook tortellini according to package directions. Drain; rinse with cold water., Meanwhile, in a small bowl, combine chicken, onion, oil, garlic, salt and pepper; toss to coat. Heat a large skillet over medium-high heat. Add chicken mixture; cook and stir 4-6 minutes or until chicken is no longer pink. Remove from heat., In a large bowl, combine salad mix, tomatoes, olives, tortellini and chicken mixture. Drizzle with dressing; toss to coat. Sprinkle with cheese and bacon. Serve immediately.

1 head broccoli, cut into small florets
3 ears corn
1 cup creamy Caesar salad dressing
Juice of 1 lemon
2 carrots, thinly sliced
4 tomatoes, diced
Kosher salt

Steps:

  • 1.Cook tortellini according to package directions; drain and cool. 2.Steam broccoli until tender, about 6 minutes; cool. 3.Cook corn in boiling water, 5 minutes; cool, then slice kernels off cob. 4.Toss tortellini, broccoli, and corn with dressing, lemon juice, carrots, tomatoes; salt to taste.

1/4 cup POLLY-O Shredded Parmesan Cheese

Steps:

  • Toss all ingredients except cheese in large bowl; cover.
  • Refrigerate at least 1 hour.
  • Sprinkle with cheese just before serving.

My family *LOVES* this salad, I make often in the summer with sweet cherry tomatoes from my garden, feel free to adjust all ingredient amounts and add in other ingeredints also, you can sub feta for Parmesan, use your favorite Caesar dressing or use my recipe#116849. Prep time does not include cooking the tortellini.

1 (9 ounce) package cheese tortellini (cooked and rinsed under cold water)
1 head romaine lettuce (torn into small pieces)
1 cup prepared creamy caesar salad dressing (can use less, I use Kittencal's Famous Caesar Salad)
1/4 cup grated parmesan cheese (or to taste)
10 large cherry tomatoes (cut in half)
2 cups caesar-flavor croutons (see my Kittencal's Garlic Croutons)
black pepper (to taste)
salt (optional and to taste)

Steps:

  • In a medium bowl combine the cooked tortellini with chopped lettuce, Caesar dressing and Parmesan cheese; toss well to coat.
  • Season with black pepper to taste and salt if desired.
  • Top with sliced cherry tomatoes and croutons.
  • Serve immediately.
  • Delicious!

1/4 cup gorgonzola, crumbled

1/3 cup roasted red pepper, drained and diced
1 cup caesar salad dressing

Steps:

  • Mix the ingredients together and chill for at least half an hour.
  • Serve!

  • Preheat oven to 325°F and position a rack in the center of the oven. Line a baking sheet with foil or parchment paper and arrange bread on baking sheet.
  • When cool enough to handle, break bread into pieces and add to a bowl. Toss with melted butter, garlic powder, and 1/2 teaspoon of salt. Place back on baking sheet and bake until golden brown and crispy, about 5 minutes more. Remove and set aside.
  • While bread bakes, make the dressing so flavors have time to come together. Whisk together garlic cloves, anchovy paste, lemon juice, mustard, Worcestershire sauce, mayonnaise, and Parmesan cheese. Season to taste with salt and pepper and chill until ready to use.
