1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup butter or margarine, softened
1 egg
1 1/2 cups Gold Medal™ all-purpose flour
1 tablespoon instant coffee granules or instant espresso coffee (dry)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped pecans
1 bag (11.5 or 12 oz) semisweet chocolate chunks (2 cups)
1/2 teaspoon instant coffee granules or instant espresso coffee (dry)
1 tablespoon water
1/2 cup powdered sugar

Steps:

  • Heat oven to 350°F. In large bowl, beat granulated and brown sugars, butter and egg with electric mixer on medium speed, or mix with spoon, until creamy. Stir in flour, 1 tablespoon coffee granules, the baking soda and salt. Stir in pecans and chocolate chunks.
  • Drop dough by 1/4 cupfuls about 2 inches apart onto ungreased large cookie sheet.
  • Bake 12 to 15 minutes or until golden brown and edges are set. Cool 4 minutes; remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
  • Meanwhile, in small bowl, dissolve 1/2 teaspoon coffee granules in water. Stir in powdered sugar until smooth and thin enough to drizzle. Drizzle cooled cookies with Coffee Drizzle.

1 ⅓ cups hot freshly brewed dark roast espresso coffee

Steps:

  • Heat milk in a saucepan set over medium-low heat. Whisk briskly with a wire whisk to create foam. Brew espresso and pour into 4 cups. Pour in milk, holding back the foam with a spoon. Spoon foam over the top.

Steps:

  • Preheat oven to 400 F and line a baking sheet with parchment paper.
  • In a large bowl, cream together butter and sugars. Beat in egg, milk and vanilla.
  • In a small bowl, whisk together flour, coffee powder, cinnamon, salt, baking soda and baking powder. Stir the flour mixture into butter mixture.
  • Drop dough by rounded spoonfuls, forming 1-inch in diameter mounds, on the baking sheet.
  • Bake until cookie are golden at the edges, about 8-11 minutes.
  • Cool on baking sheet for 10 minutes before transferring to a wire rack to cool completely.

1/3 cup shortening
1/2 cup packed brown sugar
1/3 cup sugar
1 large egg, room temperature
2 tablespoons hot caramel ice cream topping
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
4 teaspoons dark roast instant coffee granules
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups (9 ounces) dark chocolate chips

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, shortening and sugars until light and fluffy. Beat in egg, ice cream topping and vanilla. In another bowl, whisk flour, coffee granules, baking soda and salt; gradually beat into creamed mixture. Fold in chocolate chips., Drop dough by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake 8-10 minutes or until set. Cool on pans 2 minutes. Remove to wire racks to cool. Freeze option: Drop dough by rounded tablespoonfuls onto waxed paper-lined baking sheets; freeze until firm. Transfer to airtight container; return to freezer. Dash ground cloves
3 cups water
1/2 cup vanilla-flavored fat-free soymilk
4 tablespoons reduced-fat whipped cream topping in aerosol can
4 cinnamon sticks (3 inch), if desired

Steps:

  • In coffee filter or basket of 8- to 12-cup coffeemaker, place ground coffee, nutmeg, allspice, ground cinnamon and cloves. Add 3 cups water to coffeemaker; brew according to manufacturer's directions.
  • In microwavable measuring cup, microwave soymilk uncovered on High about 30 seconds or until warm. Add warmed milk to brewed coffee in coffeepot; stir.
  • Pour into mugs. Top each with 1 tablespoon of the whipped cream topping. Garnish with cinnamon sticks. Serve immediately.
