How to Make Caipirinha image

The classic caipirinha is the mother of all Brazilian cocktails. This refreshing 3-ingredient drink, is the perfect treat to spend a great summer afternoon with your amigos and familia. It's a delicious cocktail that pairs wonderfully with a churrasco, and all things grilled. Your summer bbq festas will never be the same! - recipe makes 2 servings.

5 whole limes
3 tbsp sugar
3/4 cup cachaça
ice (to taste)

Steps:

  • juice 3 of the limes and set aside - you'll want about a 1/3 of a cup of juice, give or take
  • cut the other 2 limes in 8 pieces each
  • Add the sugar and the lime pieces to a cup and muddle until you've juiced all the little pieces and they're nicely combined with the sugar
  • add the lime juice and the cachaça to the muddled limes and stir gently to dissolve the sugar - approx. 2 minutes
  • fill 2 cups with ice, and top them with caipirinha

3 limes
1/2 cup sugar
1 1/2 quarts ice
1 cup cachaca (Brazilian brandy made from sugar cane)

Steps:

  • Cut the limes in half, and then cut each half into 8 pieces. Place 12 pieces of lime in each of 4 double old-fashioned glasses (or other 12-ounce glasses.) Sprinkle 2 tablespoons of sugar into each glass. Using a muddler or the butt end of a large wooden spoon, mash the limes into the base of the glass. Try to dissolve the sugar as you do this, and stir occasionally. Fill each glass with 1 1/2 cups of ice and 1/4 cup of cachaca. Pour the contents of the glass into a shaker, and invert the glass into the shaker to act as a lid. Shake the glass and shaker to combine the sugar and cachaca for several seconds. Lift the glass from the shaker, and pour the contents back into the glass. Repeat the process with the remaining 3 glasses.

2 limes , chopped into wedges, plus extra lime wedges to serve (optional)
5 tbsp golden caster sugar
200ml cachaça
ice

Steps:

  • Put the lime wedges in a large jug with the sugar, then use a muddler or the end of a rolling pin to break them down. Release as much juice from the wedges as possible, and let it mix with the sugar to create a syrup - you can also do this with a large pestle and mortar. Discard the lime peel.
  • Divide the syrup and cachaça between four glasses, then top with the crushed ice. Serve garnished with lime wedges, if you like.
