Rajma Cutlet is made with the combination of red kidney beans, potatoes and the spices which make this cutlet, a super nutritious snack. 1 cup Rajma (Large Kidney Beans) , soaked and pressure cooked
2 Potato (Aloo) , cooked and smashed
1 teaspoon Red Chilli powder
1/2 teaspoon Garam masala powder
Salt , as required
1/2 teaspoon Fennel Powder
3 tablespoons All Purpose Flour (Maida)
1/2 cup Whole Wheat Bread crumbs
Oil , as required

Steps:

  • To begin with Rajma Cutlet, firstly take the potatoes and kidney beans in a mixing bowl. Add red chilli powder, fennel seed powder, garam masala powder and salt in the mixture and mix everything well.
  • Once it is done, make medium sized patties out of this mixture.
  • In a different bowl, mix all-purpose flour with enough water to make a paste.
  • Dip the patties in the flour paste and roll them gently in the bread crumbs.
  • Once finished, arrange them in the fridge for an hour.
  • After an hour, heat oil in a deep fry pan to fry the cutlets. Drop the cutlets and cook on both sides until they turn golden brown.
  • Serve Rajma Cutlets with Dhaniya Pudina Chutney and Masala Chai during your tea time break.

This is a quick and easy curry made from red kidney beans. Served with either naan (flatbread) or rice. Rajma masala is sold at most food stores in the international section.

2 (8 ounce) cans red kidney beans, undrained
2 teaspoons canola oil or 2 teaspoons corn oil
1 teaspoon cumin
1 teaspoon garlic, chopped
1/2 teaspoon gingerroot, chopped
1 (14 ounce) can tomato sauce
1/2 chopped onion
1 tablespoon rajma, masala if desired (or more) (optional)
1/2 teaspoon salt
1/2 teaspoon chili powder (optional)
sliced onion (to garnish)
1 tablespoon chopped coriander (to garnish)

Steps:

  • In a medium pot, heat oil. When hot, add cumin.
  • Once the cumin begins to brown, add the garlic and ginger. Let it cook for 1 min, stir constantly.
  • Add onions and stir until onion turns clear and add the tomato sauce.
  • Keep stirring the sauce until it's slightly thickens and begins to separate a bit from the oil.
  • Add the Rajma masala, salt and chili powder and stirl for 2-3 minutes.
  • Last, throw in the two cans of kidney beans, undrained. Let it cook for 5-6 mins, stirring occasionally.
  • You adjust the spices accordingly, while tasting along.
  • Serve with some sliced onions, a lemon wedge and garnish with some chopped coriander. Enjoy!

150 g red kidney beans, soaked overnight in lots of water
5 g green chilies, chopped
1 tablespoon ginger-garlic paste
10 g red chili powder
10 g cumin powder
20 g chat masala
salt
10 g chopped fresh coriander leaves
10 g cornflour
oil, to deep fry
10 g carrots, juliennes
10 g red capsicums, juliennes
10 g beetroots, juliennes
10 g sliced onions
10 g chat masala
10 g cumin powder, roasted
100 ml mint chutney
100 ml tamarind chutney or 100 ml tomato ketchup

Steps:

  • Add salt and cook the kidney beans in the same water in which they were soaked overnight. More water may be added if needed. Cook until tender.
  • Drain well, cool and pat on clean kitchen paper towels.
  • Mince or mash the kidney beans.
  • Add the remaining ingredients, except oil and knead to make a dough.
  • Divide the dough into 8 portions.
  • Heat oil in a wok.
  • Deep fry one cutlet first in the oil until golden.
  • If it opens up, add a little more cornflour and knead the mixture well.
  • Then, shape into cutlets and deep fry in the oil.
  • Drain on a clean kitchen paper towel.
  • Sprinkle cumin powder and chat masala powder on the cutlets.
  • Garnish with carrot, beetroot and capsicum juliennes and onion slices.
  • Serve hot with the ketchup or chutneys.
  • Enjoy!

¼ cup grated Parmesan cheese
4 turkey breast cutlets, 1/4 inch thick
½ cup fat free sour cream
1 tablespoon extra virgin olive oil

  • Mix the bread crumbs and cheese in a shallow dish. Spread both sides of turkey with sour cream and press into the bread crumb mixture to coat.
