CAJUN CHICKEN ALFREDO WITH BROCCOLI
One of my most popular restaurant copycat recipes, Cajun Chicken Alfredo gets an extra punch of flavor from broccoli, homemade cajun seasoning, and a creamy homemade Alfredo sauce. All of this can be yours after just 10 minutes of prep time!

- Preheat oven to 200 degrees. In a large pot, bring 4 quarts water and 1 tablespoon salt to boil. Add pasta and cook until al dente, about 9 minutes. Remove pasta and reserve pasta cooking water in the pot.
- Return pasta cooking water to boil. Add broccoli and blanch until just tender and bright green, about 1 to 2 minutes. Immediately drain and plunge in to a bowl of ice water to stop the cooking and set the color.
- Meanwhile, sprinkle both sides of the chicken generously with cajun seasoning. In large skillet, heat oil until shimmering.
- Add chicken to skillet in a single layer and cook, flipping once, until the temperature on an internal thermometer reaches 165 degrees, about 5 minutes on each side. Transfer clean baking sheet or oven-safe plate, cover with foil, and place in oven to keep warm.
- Clean skillet if desired (see note 2). Return skillet to stove and melt butter until foaming over medium-high heat. Stir in garlic until fragrant, about 30 seconds.
- Whisk in wine to deglaze the pan. Simmer until sauce has reduced by half, about 2 minutes (your pan is hot at this point so it should go pretty quickly).
- Whisk in cream and simmer until slightly thickened, about 2 minutes. Fold in parmesan cheese. Season to taste with salt and pepper (I like 1 teaspoon salt and 1/2 teaspoon pepper).
- Return pasta to skillet and toss gently to coat. In skillet or in a large warmed bowl, pile broccoli on top of pasta, top with chicken, and garnish with more parmesan cheese.

Steps:
- Prepare the linguine according to the package directions in a 3-quart saucepan. Add the broccoli during the last 4 minutes of the cooking time. Drain the linguine mixture well in a colander.
- Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook until it's well browned, stirring often.
- Stir the soup, milk, cheese, black pepper and linguine mixture in the skillet and cook until the chicken is cooked through, stirring occasionally. Serve with additional Parmesan cheese.
- Grilled Chicken & Broccoli Alfredo: Substitute grilled chicken breasts for the skinless, boneless chicken.
- Shrimp & Broccoli Alfredo: Substitute 1 pound fresh extra large shrimp, shelled and deveined for the chicken. Cook as directed for the chicken above, until the shrimp are cooked through.
- Serving Suggestion: Serve wth a mixed green salad topped with orange sections, walnut pieces and raspberry vinaigrette. For dessert serve almond biscotti.
- You can substitute spaghetti or fettuccine for the linguine in this recipe.

CAJUN CHICKEN ALFREDO
Steps:
- Preheat the oven to 350 degrees F.
- Dredge the chicken breasts in the blackening spice and place in a cast iron skillet over very high heat. Blacken both sides of the chicken and place in the oven for 10 minutes, or until internal temperature of chicken reaches 165 degrees F on an instant-read thermometer. Slice in strips on the bias and set aside.
- In a saute pan over medium heat, add 2 tablespoons of extra-virgin olive oil. Add garlic and lightly caramelize. Then add the sun-dried tomatoes and the chicken slices. Deglaze the pan with the white wine. Add the heavy cream, increase the heat to a simmer, and reduce the cream sauce by half.
- When the cream sauce is to desired consistency, stir in 1/2 cup Parmesan, salt, pepper, and pasta.
- Nest the pasta on large rimmed plates, pour sauce over pasta, and garnish with scallions and the remaining 1/4 cup Parmesan.
CAJUN CHICKEN ALFREDO
This is from Guy's Big Bite, on Food TV. It comes out great, and is similar to the cajun alfredo at Copeland's restaurant, which is now defunct in our area. I used Tony Chachere's creole seasoning because I had it on hand, and cooked the chicken on the grill. I didn't use a cup of seasoning, just sprinked the chicken with less than a tablespoon, and let it set for about a half hour. I used pinot grigio for the wine. I added a pat of butter to the olive oil, and cut back on the garlic, tomatoes, and cream (personal taste). It came out nicely spiced, not too hot. If your finished dish is not spicy enough, just add a few dashes of tabasco sauce. I dumped the chicken and pasta into the pan, and heated it all together before serving.

- Cut chicken into bite sized pieces. Slightly moisten shrimp/chicken with water. Shake chicken/shrimp and cajun seasoning in container until thoroughly coated. Cook pasta following directions. In large skillet, sautee in 2 tbsp butter, over medium heat, turning when necessary. When half-way done, combine heavy cream, 2 tbsp butter, and remaining seasonings in pot over medium heat, stirring occasionally. Cook broccoli according to directions. When cream mixture begins to bubble, lower heat and add cheese to taste. Combine cooked pasta, sauce, broccoli and chicken and toss.

- Bring a quart (950 ML) of water in a large pot to a boil over high heat, and salt to taste.
- Cook pasta for 8 minutes, or until slightly underdone.
- Add broccoli to pasta and simmer for 4 minutes with the lid on.
- Strain the pasta and broccoli in a colander, and run cold water over to prevent the broccoli from over cooking.
- Heat the olive oil in the pot over medium-high heat, and add the chicken. Season the chicken with season salt and pepper.
- Once the chicken is cooked through, remove it from the pot and set aside.
- Add the butter to the pot, and melt it. Once butter is fully melted, add in garlic and stir continuously for 10 seconds.
- Add the heavy cream, salt, pepper, and nutmeg. Stir often, and cook until sauce starts to bubble slightly.
- Once the sauce is bubbling and begins to cook down, add in Parmesan cheese and stir until the sauce thickens.
- Add in the cooked chicken, pasta, and broccoli, and stir until fully combined.
- Top with Parmesan cheese or red chili flakes.
