Steps:
- Cook pasta in boiling water in large skillet 2 min. Drain pasta in colander; set aside.
- Heat oil in same skillet over medium heat. Add chicken; sprinkle evenly with 1 tsp. Cajun seasoning. Cook 5 min. or until chicken is done, stirring frequently. Spoon chicken into bowl; cover to keep warm.
- Add peppers to skillet; sprinkle with 1 tsp. of the remaining Cajun seasoning. Cook and stir 5 min. or until peppers are crisp-tender. Return chicken to skillet. Add spinach; cook and stir 2 to 3 min. or just until spinach is wilted.
- Add cream cheese, milk and remaining Cajun seasoning to chicken mixture; cook and stir 2 to 3 min. or until cream cheese is completely melted and sauce is well blended. Add pasta; cook 3 to 5 min. or until heated through, stirring frequently. Remove skillet from heat.
- Top chicken mixture with onions and Parmesan.

- Toss chicken with 1 tsp. Cajun seasoning. Mix cream cheese spread and 2 Tbsp. milk until blended.
- Cut sausage lengthwise in half, then crosswise into thin slices. Heat oil in large skillet on medium heat. Add chicken and vegetables; cook 6 to 7 min. or until chicken is done and vegetables are crisp-tender, stirring frequently. Add sausage; cook 3 min., stirring frequently.
- Add cream cheese mixture, remaining milk and seasoning; cook and stir 2 to 3 min. or until heated through.
- Stir in pasta.

- Cook pasta. Cook your penne pasta to al dente, per box instructions. Drain and set aside.
- Saute the peppers & onions in oil. In a large skillet (with high sides), over medium heat, add 1 tbsp olive oil and saute the onions, peppers, and garlic for 4-5 minutes.
- Add all additional ingredients, except cream. Stir in the 1/2 lb. pasta, 12 oz. smoked beef sausage, 14.5 oz. drained diced tomatoes, 1 heaping tsp cajun seasoning, 1 heaping tsp smoked paprika, 1/2 tsp onion pwd, garlic pwd, dried oregano, pinch of red pepper flakes. Stir for 1 minute to coat the pasta and warm the spices.
- Stir the the heavy cream and simmer until thickened. Stir in 1 1/4 cups heavy whipping cream and simmer over medium heat until the cream has thickened and coated the pasta, about 5-10 minutes.
- Taste for seasonings & serve!

- Toss chicken with Cajun seasoning; let stand 15 minutes. Cook pasta according to package directions; drain., In a large skillet, heat 1 tablespoon butter over medium-high heat; saute chicken until no longer pink, 5-6 minutes. - In a large bowl add the chicken, shrimp, sausage, cajun spices, red bell pepper, green bell pepper, red onion, garlic, Kosher salt and black pepper in a bowl and toss.
- In a large skillet or a cast iron skillet add the canola oil on high heat.
- In two batches sear off the ingredients until they're cooked through, about 4-5 minutes.

SPICY AND CREAMY CAJUN CHICKEN PASTA

- Combine ingredients for Cajun seasoning in a small bowl. Or, alternatively, use 2 tablespoons of your favorite Cajun seasoning. My recommendation is Frontier Cajun seasoning.
- Place 2 chicken breasts in a shallow bowl and coat on both sides with 1/2 of the Cajun seasoning. Save the remaining 1/2 of the seasoning for pasta. Note: be sure to use thinly sliced chicken breasts. That means if you bought large chicken breasts, slice each one in half horizontally.
- Heat 2 tablespoons of olive oil in a large skillet on medium-high heat. Add the chicken breasts seasoned with Cajun spice and cook for about 4 minutes on each side. Turn off the heat, cover the skillet with the lid, and let the chicken sit, covered, off heat for about 10 minutes until it's completely cooked through. Remove the chicken to a plate and slice chicken thinly.
- In the meantime, bring a large pot of water to boil. Add pasta and cook according to the package instructions (that usually means somewhere between 10 or 15 minutes). Drain pasta.
- Add diced bell peppers to the same, now empty, skillet that you just used to cook chicken. Cook on medium heat for about 4 minutes until bell peppers are slightly softened. Remove 1/2 of the cooked bell peppers to a plate, leaving the remaing 1/2 in the skillet.
- To the same skillet with 1/2 of the cooked bell peppers, add the cream, the remaining 1/2 of the Cajun seasoning, and freshly shredded Parmesan cheese. Bring to a brief boil, reduce to simmer, and cook, constantly stirring, until the cheese starts to melt, for several minutes.
- Add drained cooked pasta to the skillet with the cream sauce and heat through on low heat. Season with red pepper flakes, more salt and extra cayenne pepper, if desired. Top with sliced cooked chicken and the remaining 1/2 of cooked bell peppers.

- Bring a large pot of salted water to as boil and cook the penne pasta according to the package instructions. Drain and set aside.
- Combine the cajun seasoning and the shrimp in a small bowl and set aside. Heat a large cast iron skillet (or other heavy duty pan) over medium heat. Once the pan is hot, add the sausage and cook until browned. Do not stir constantly, allow the sausage to brown. Add the seasoned shrimp and cook about 2 minutes, until cooked through. Remove sausage and shrimp to a clean plate and set aside.
- Turn down the heat to low. Place the butter in the skillet. Pour the cream in (it will bubble up) and stir the pan to mix all the seasonings into the cream. Add the lemon zest parmesan cheese and stir. Allow the cream sauce to simmer 1-2 minutes until slightly thickened. Add in the cooked sausage and shrimp and combine. Taste for seasonings and add additional salt and pepper if needed.
- Add the cooked pasta and stir. Serve immediately, garnished with parsley and extra parmesan cheese, if desired.
