Cajun Salmon One Sheet Pan - An easy no-fuss weeknight meal featuring moist and flaky salmon, green beans, baby potatoes, and cherry tomatoes. All of these are seasoned with exceptional flavors from herbs and spices and cooked on a single sheet pan. A fantastic low carb and keto-approved meal baked in a single pan ready in just 25 minutes!

1-2 teaspoons minced garlic
2-3 tablespoons fresh herbs (thyme, parsley, and basil)
1 tablespoon Cajun/Creole seasoning
¼ cup or 60ml canola oil (or more)
2-3 fillet (4-6oz) Salmon Steaks (room temperature)
salt and pepper (to taste)
1 pound or more green beans (or any vegetables)
1 cup cherry tomatoes
baby potatoes

Steps:

  • Clean and cut the baby potatoes in half. Then place them in a large pot and pour water into it; enough to cover the potatoes. Season with salt.
  • Bring it to a boil or until fork tender. Drain the water and let the pot with cooked potatoes simmer for 2-3 minutes until all excess water is gone. Set aside.
  • In a small bowl, combine garlic, thyme, parsley, Cajun/Creole seasoning, and canola oil. Mix thoroughly. Set aside.
  • Place the salmon steaks on a plate and season with salt and pepper. Brush the salmon steaks with the spice mixture. Set aside.
  • In separate bowls/plates, coat the veggies (tomatoes, green beans, and cooked potatoes) with the same Cajun spice mixture.
  • Position a rack in the center of the oven and preheat the oven to 400ºF. Line a baking sheet with foil or parchment. Spray with a cooking spray or lightly oil.
  • Place the seasoned salmon, tomatoes, potatoes and green beans on a parchment-lined sheet pan.
  • Allow the salmon and vegetables to bake for 15-18 minutes or until cooked through. Cooking time will vary depending on the thickness of your salmon and preference.

2 medium sweet potatoes, sliced into 1/4-inch wedges
1 tablespoon olive oil
½ teaspoon kosher salt, divided
¼ teaspoon ground black pepper, divided
¼ cup Dijon mustard
2 tablespoons honey
¼ teaspoon cayenne pepper
5 cups broccoli florets
4 (5 ounce) salmon fillets
2 tablespoons everything bagel seasoning
2 teaspoons soy sauce

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a large, rimmed baking sheet with foil and coat lightly with cooking spray.
  • Toss sweet potatoes with 2 teaspoons oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper in medium bowl. Place on one half of the prepared baking sheet.
  • Bake in the preheated oven for 5 minutes.
  • While the potatoes are cooking, stir together Dijon, honey, and cayenne in a small bowl. Toss broccoli with remaining oil, salt, and pepper in a separate bowl.
  • Remove potatoes from the oven. Add salmon to the other half of the baking sheet. Place 2 teaspoons of the mustard mixture on each salmon filet; brush evenly to coat, then sprinkle evenly with bagel seasoning. Add broccoli to the sweet potatoes. Return to the oven and bake until salmon flakes easily with a fork and the veggies are golden, about 12 minutes.
  • Stir soy sauce into the remaining mustard mixture and drizzle over veggies.

2 lb small red potato, or yellow, quartered
4 tablespoons olive oil
salt, to taste
pepper, to taste
4 cloves garlic, minced
4 tablespoons lemon juice
2 tablespoons fresh thyme
2 teaspoons ginger
2 salmon fillets
1 bunch asparagus, roughly 1 pound (455g)

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • Cover a sheet pan with foil or parchment paper. Spread out potatoes on the pan and drizzle with olive oil. Season with salt, pepper, 2 cloves of garlic, and 1 tablespoon lemon juice.
  • Bake for 30 minutes.
  • Make salmon glaze. Combine salt, pepper, 1 tablespoon thyme, 2 garlic cloves, ginger, 2 tablespoons of olive oil, and 2 tablespoons of lemon juice. Mix well.
  • Remove potatoes from the oven and push them to the top or side of your pan. Place your salmon fillets on the pan. Brush both sides of the salmon with the glaze.
  • Place asparagus on the pan and top with 1 tablespoon olive oil, 1 tablespoon lemon juice, salt, and pepper. Sprinkle 1 tablespoon of thyme on the asparagus and potatoes.
  • Bake for 10-12 minutes. (The salmon should flake easily with a fork when it's ready.)
