"It was given to me by a co-worker and has turned out to be a family hit!" relates Kathie Deusser of Church Point, Louisiana. "I adapted it to our tastes, adding onion, potato and Cajun seasoning. We often invite family and friends to share it with us. Serve it with your favorite fruits, coffee and juice."

6 large eggs, lightly beaten
2 cups 2% milk
1 pound sliced bacon, cooked and crumbled
6 slices bread, cubed
1 medium potato, peeled and diced
1 cup shredded cheddar cheese
1/2 cup finely chopped onion
1 to 1-1/2 teaspoons Cajun seasoning
1 teaspoon salt

Steps:

  • In a large bowl, combine all ingredients. Transfer to a greased 11x7-in. baking dish. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary for a knife inserted in the center to come out clean.

This creamy Cajun-inspired casserole gets its irresistible flavor from smoky Andouille sausage, shrimp and fresh okra.

6 oz andouille sausage, chopped
2 lb uncooked large shrimp, thawed if frozen, peeled and deveined
2 tablespoons olive oil
1 bag (10 oz) frozen diced celery, onion, and red and green bell peppers, thawed
3 teaspoons finely chopped garlic
2 cups sliced fresh okra
1 can (10 3/4 oz) condensed cream of shrimp soup
1/2 cup dry white wine
1/2 teaspoon freshly ground black pepper
1/4 to 1/2 teaspoon ground red pepper (cayenne)
3 cups cooked long-grain rice
Chopped fresh parsley, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In nonstick 4-quart Dutch oven, cook sausage over medium-high heat 6 minutes, stirring frequently, until browned. Add shrimp; cook 3 minutes, stirring frequently, until shrimp are pink. Remove sausage and shrimp to bowl; set aside.
  • In Dutch oven, heat oil over medium heat. Add thawed vegetables, garlic and okra; cook 3 to 5 minutes, stirring constantly, until okra begins to soften. Reduce heat to low. Stir in soup, wine, black pepper, red pepper and rice. Stir in sausage mixture. Spoon into baking dish.
  • Bake uncovered 15 to 20 minutes or until bubbly and lightly browned. Garnish with parsley.

1 teaspoon salt
¼ cup chives, chopped

2 egg yolks
1 tablespoon lemon juice
½ teaspoon salt
cayenne pepper, to taste
4 tablespoons butter, hot

Steps:

  • Preheat oven to 350°F (180°C).
  • Cut each biscuit into 9 pieces. Set aside.
  • In a bowl, mix eggs, milk, pepper, salt, and chives.
  • In a 9x13 inch (23x33 cm) glass baking dish, evenly spread out the biscuit pieces and the ham.
  • Pour the egg mixture over everything.
  • Bake for 35 minutes.
  • To make the Hollandaise combine the egg yolks, lemon juice, salt, and cayenne in a blender. Gradually add the hot butter until fully mixed.

WAY TOO EASY CAJUN POTATOES

These were a staple in the Irish Channel in the good ole days. I still make mine in a cast iron pan but you can use any oven proof pan. For those who must have heat, add extra cayenne. To shorten baking time we sometimes nuke the potato chunks a little before adding to the oil.

4 -5 medium potatoes
1 tablespoon cajun seasoning
1 tablespoon oil
cayenne pepper
salt and pepper

Steps:

  • Pre heat oven to about 375-400.
  • With a fork score all over the potatoes (peeled or not), this will make them more crisp.
  • Chop the potatoes into 1 1/2-2 inch chunks.
  • Put the oil in the pan (warming the pan first is good, but not vital), add potatoes, sprinkle all seasonings over (go easy with the salt; more can be added after cooking) and toss and stir potatoes with two forks until all chunks are coated.
  • Bake for 15 mins, stir well (again with the forks), bake a further 10-15 minutes.
  • Note: If you've nuked them, the potatoes will need a little less time. Watch them towards the last few minutes.
