1 1/2 tablespoons lemon juice
2 cloves garlic, minced
1/2 teaspoon thyme
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1/2 cup nonfat plain yogurt
3 cups cubed cooked chicken
1 cup thinly sliced green onion
1/2 cup diced green bell pepper
1/2 cup diced celery
3 cups seeded and diced fresh tomatoes (about 1 1/2 lbs.)

Steps:

  • Combine lemon juice and next five ingredients.
  • Beat in yogurt.
  • Gently fold chicken and next 3 ingredients into dressing and chill.
  • Just before serving, fold in tomatoes.

4 chicken breasts (cooked and shredded)
1/2 cup mayonnaise
1/2 teaspoon mustard
1/2 teaspoon Old Bay Seasoning
1/4 cup celery (diced)
1/8 cup red onion (diced)

Steps:

  • Mix all ingredients together in a large bowl. Allow to chill covered for at least 15 minutes to allow flavors to blend together. Enjoy!

5 ounces boneless skinless chicken breasts
cajun seasoning
8 ounces mixed salad greens, of lettuce shredded carrots and red cabbage
1/2 tomatoes, cut in 4 wedges or 4 cherry tomatoes, halved
8 medium yellow banana pepper rings
8 medium red banana pepper rings
4 Spanish olives
4 black olives
2 cups mayonnaise
3/4 cup bottled white wine vinaigrette
1/2 teaspoon lemon juice
1/2 teaspoon Tabasco sauce
1 tablespoon honey

Steps:

  • Season both sides of chicken breast with Cajun seasoning.
  • Grill or broil about 3 to 4 minutes each side, until juices run clear.
  • Slice into thin strips when cool.
  • Place salad mixture in a large salad bowl, preferably glass.
  • Add tomato. On salad place yellow pepper rings inside red rings with olives in center.
  • Top with sliced chicken.
  • Serve Cajun dressing on the side.
  • FOR DRESSING.
  • Combine all ingredients. Refrigerate overnight to blend flavors.

1/4 cup Dijon mustard
2 tablespoons olive oil
2 tablespoons wine vinegar
2 tablespoons honey
salt and pepper
mixed salad green (Boston, Red Leaf, Green Leaf, Romain, etc.)
3 medium plum tomatoes, thinly sliced
1 small red onion, thinly sliced
cajun seasoning (many recipes on Recipezaar)
2 chicken breast halves (boneless, skinless, flattened)
1 tablespoon vegetable oil

Steps:

  • Whisk together first 5 ingredients; set aside.
  • Toss together lettuce, tomatoes and onion. Divide between 2 plates.
  • Liberally coat chicken breast with Cajun seasoning.
  • Heat 1 tablespoon vegetable oil over medium-high heat; add chicken and fry until cooked through and crusty, about 4 minutes per side.
  • Transfer cooked chicken to plate and cut into crosswise thin strips.
  • Arrange chicken atop salad.
  • Spoon dressing over and serve.

2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 head romaine lettuce, chopped
½ red onion, thinly sliced
1 avocado, thinly sliced
10 oz cherry tomato, halved
8 oz black beans
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
¼ cup greek yogurt
¼ teaspoon garlic, minced
2 tablespoons lime juice
1 tablespoon olive oil
1 ½ teaspoons reserved seasoning

Steps:

  • Preheat oven to 375˚F (190˚C).
  • In a small bowl, combine paprika, cayenne, garlic powder, oregano, thyme, and salt. Reserve 1½ teaspoons of the seasoning. Set aside.
  • Coat both sides of the chicken breasts with the seasoning mixture.
  • In an oiled cast-iron skillet, cook chicken on medium-high heat 4 minutes per side, or until chicken is browned.
  • Bake for 15-20 minutes, or until the internal temperature of the chicken reaches 165˚F (72˚C). Let the chicken rest for several minutes.
  • In a small bowl, combine yogurt, minced garlic, lime juice, olive oil and reserved seasoning mixture. Set aside.
