THE BEST MONKEY BREAD RECIPE
Steps:
- Grease a large, 12 cup bundt pan with softened butter, use about 3 tablespoons or so.
- In the bowl of a stand mixer add the warm milk, water, sugar, butter, and yeast. Mix to combine. Let mixture sit for 5 minutes, then add the flour and salt. Using the dough hook mix on low speed. Once the dough comes together increase the speed to medium and mix for 6-8 minutes. The dough should come away from the sides of the bowl, should be tacky but not sticky, shiny and smooth.
- Transfer the dough to a large lightly oiled bowl. Turn the dough over once so that the top of the dough is lightly covered in oil. Cover with plastic wrap and let rise until doubled in size, about 1 hour.
- While the dough is rising, combine the brown sugar and cinnamon in a medium sized bowl, stir to combine. Place the melted butter in a separate small bowl.
- To form the balls: Remove the dough from the bowl and pat it into an 8 inch square. Cut the square into 64 pieces. Roll each piece into a ball.
- Roll the balls, one at a time, into the butter and then roll into the cinnamon sugar mixture. Place the sugar coated balls in the bundt pan, layering, staggering, and filling in the gaps as you go.
- Once all dough balls have been dipped in the butter and sugar mixture and then placed into the bundt pan, COVER the bundt pan with plastic wrap and let rise for 45-60 minutes or until puffy. (The dough should rise and be just 1 inchesfrom the top).
- Unwrap the bundt pan and bake at 350°F for 30-35 minutes or until bubbly and deep brown in color. Cool in the pan for 5 minutes(no longer!!!) then turn out onto a platter. Let cool for 10 minutes and then pour the glaze overtop.
- To make the glaze: whisk the powdered sugar, milk, and a splash of vanilla in a large liquid measuring cup.

Steps:
- In a large bowl, stir 2 cups of the flour, 1/3 cup sugar, the salt and yeast with wooden spoon until well mixed. In 1-quart saucepan, heat water and 1/3 cup butter over medium-low heat, stirring frequently, until very warm and an instant-read thermometer reads 120°F to 130°F. Add water mixture and egg to flour mixture. Beat with wire whisk or an electric mixer on low speed 1 minute, stopping frequently to scrape batter from side and bottom of bowl with rubber spatula, until smooth. Beat on medium speed 1 minute, stopping frequently to scrape bowl. With wooden spoon, stir in enough of the remaining flour, 1 cup at a time, until dough is soft, leaves side of bowl and is easy to handle (dough may be slightly sticky).
- Place dough on lightly floured surface; roll ball of dough around 3 or 4 times to cover with flour. Knead by folding dough toward you, then with the heels of your hands, pushing dough away from you with a short rocking motion. Move dough a quarter turn and repeat. Continue kneading about 10 minutes, sprinkling surface with more flour if dough starts to stick, until dough is smooth and springy.
- Spray large bowl with cooking spray. Place dough in bowl, turning dough to grease all sides. Cover bowl loosely with plastic wrap; let rise in warm place 1 hour to 1 hour 30 minutes or until dough has doubled in size. Dough is ready if indentation remains when touched.
- Spray 10-inch angel food (tube) cake pan or 12-cup fluted tube cake pan with baking spray with flour. (If angel food cake pan has removable bottom, line pan with foil before spraying to help prevent the sugar mixture from dripping in the oven during baking.) In a small bowl, mix 3/4 cup sugar, the nuts and cinnamon.
- Gently push fist into dough to deflate. Shape dough into about 25 balls, 1 1/2 inches in diameter. Dip each ball into melted butter, then into sugar-cinnamon mixture. Place single layer of balls in pan so they just touch. Top with another layer of balls. Cover pan loosely with plastic wrap; let rise in warm place about 40 minutes or until dough has doubled in size. Remove plastic wrap.
- Move oven rack to low position so that top of pan will be in center of oven. Heat oven to 375°F. Bake 35 to 40 minutes or until golden brown. (If bread browns too quickly, cover loosely with foil.) Run a metal spatula or knife around edge of pan to loosen bread. Place heatproof serving plate upside down on pan; holding plate and pan with pot holders, turn plate and pan over together. Let pan remain 1 minute so butter-sugar mixture can drizzle over bread, then remove pan. Serve bread while warm, pulling it apart using 2 forks or your fingers.

Steps:
- To make King Cake Monkey Bread, start by preheating your oven to 350 degrees and spraying the inside of a bundt pan with non-stick spray.
- Next, remove the biscuits from their tubes and cut each biscuit in half and then in half again so you have four pieces from each biscuit. In a small bowl combine brown sugar, pecans, vanilla extract, pecan pieces and a dash of salt. In a separate bowl, add the melted butter. Start by taking one piece of biscuit, dipping it in the melted butter and then rolling it through the brown sugar mixture. Lay in the bottom of the bundt pan and repeat until you have used up all of your biscuits. About half way through placing your biscuit pieces, add the plastic baby in your monkey bread and keep placing the biscuits around it.
- Once you have used up your biscuits, bake for 40 - 45 minutes. Remove from oven and let sit for 15 minutes before running a butter knife around the outside of the monkey bread. Place a plate upside down on the top (bottom) of the bundt pan and firmly holding both, flip both the plate and the pan upside down so that your top is now your bottom. Give the pan a little shimmy and your King Cake Monkey Bread should slide right out. Let cool completely.
- Once cool, add sifted powdered sugar, milk and vanilla to a medium sized bowl and using an electric mixer, beat until well combined. Drizzle the glaze over your monkey bread and decorate with yellow, green and purple sprinkles or sanding sugar. Serve immediately. Leftovers can be kept in an airtight container in the refrigerator.
