LAMB WITH SAUTEED VEGGIES

Lamb With Sauteed Veggies image

My parents raised sheep for more than 30 years, so I have several lamb recipes. Not only are these chops tender, but they cook quickly. While the lamb broils, I saute zucchini and red pepper to accompany it. People always comment on this great combination. -Ruth Lee, Troy, Ontario

Categories     Dinner

Time 20m

Yield 6 servings.

Number Of Ingredients 11

3 tablespoons olive oil, divided
2 tablespoons Dijon mustard
2 tablespoons balsamic vinegar
2 teaspoons dried thyme
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
12 lamb loin chops (1 inch thick and 3 ounces each)
1 medium sweet red pepper, thinly sliced
2 small zucchini, thinly sliced
1 medium sweet onion, thinly sliced

  • In a small bowl, combine 2 tablespoons oil, mustard, vinegar, thyme, garlic, salt and pepper; set aside 1 tablespoon. Place the lamb chops on a broiler pan. Spread remaining mustard mixture over both sides of chops. Broil 4-6 in. from the heat for 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Meanwhile, in a large skillet, saute the red pepper, zucchini and onion in remaining oil until crisp-tender. Stir in reserved mustard mixture; toss to coat. Serve with lamb chops.

FOREVER ROASTED LAMB WITH ROASTED VEGETABLES

Forever Roasted Lamb with Roasted Vegetables image

Provided by Michael Chiarello : Food Network

Categories     main-dish

Time 9h5m

Yield 6 to 8 servings

Number Of Ingredients 19

1 cup fennel seeds
3 tablespoons coriander seeds
2 tablespoons white peppercorns
3 tablespoons kosher salt
2 pounds sweet potatoes, peeled and cut into 3/4-inch cubes, place in cool water
1 1/2 pounds Brussels sprouts, cleaned, trimmed and cut in 1/2
1/4 cup olive oil
1 1/2 tablespoons fresh sage, chopped
3 tablespoons garlic, sliced
1 tablespoon orange zest
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 medium onions, peeled and thinly sliced
Salt and freshly ground black pepper
1 1/2 teaspoons finely chopped fresh sage leaves
3/4 cup water
4 pounds leg of lamb, at room temperature
About 1/4 cup Fennel Spice Rub
4 carrots
4 stalks celery

Steps:

  • Preheat the oven to 400 degrees F.
  • Make the Fennel Spice Rub: Put the fennel seeds, coriander seeds, and peppercorns in a heavy pan over medium heat. Watch carefully, tossing frequently so the seeds toast evenly. When light brown and fragrant, stir in the salt and pour the seeds onto a plate to cool. (They must be cool before grinding, or they will gum up the blades.)
  • Pour the seeds into a blender or spice mill and blend to a fine powder, shaking the blender occasionally to redistribute the seeds. Store in a tightly sealed glass jar in a cool, dry place, or freeze. (Makes about 1 1/4 cups.)
  • In 1 pot, bring sweet potatoes and water up to a boil with 1 tablespoon salt. Reduce heat to a simmer and cook until tender. Strain and lay out to cool.
  • In another pot bring 1/2 gallon water to a boil with 1 tablespoon salt, add sprouts and cook for 3 minutes Strain and lay out to cool.
  • For the lamb: Preheat the oven to 250 degrees F. Place a roasting pan in the oven.
  • Heat the olive oil in a large saute pan over medium heat until hot. Add the onions and a pinch of salt and pepper. Reduce the heat to medium-low and cook for about 1 minute. Add the sage and cook about 3 minutes. Add the water, cover, and cook until the onions are very tender, about 10 minutes. Uncover and saute until the onions are very soft and the pan is dry again, about 2 minutes.
  • Slice open the leg of lamb and lay flat. Season meat well all over with the Fennel Spice and salt and pepper. Spread half of the sauteed onion mixture directly on top of the seasoning, inside the leg of lamb. Roll up the meat and tie with kitchen twine. Set aside the other half of onion mixture.
  • Rub the outside of the lamb with more Fennel Spice. Remove the roasting pan from the oven and lay the carrots and celery on the bottom. Place the lamb on top of the carrots and celery, drizzle with some extra-virgin olive oil and cook for 7 hours. Spread the remaining onion mixture on top of the lamb, place a foil as a tent over the lamb and roast for an additional hour. The lamb is ready when it pulls away easily if picked at with a pair of tongs. Remove the lamb from the oven and keep warm.
  • Increase the oven heat to 425 degrees F.
  • Heat a large saute pan on high heat. Add 1/4 cup olive oil and reserved sweet potatoes and Brussels sprouts; Toss lightly to coat with oil and do not touch for 2 minutes or until the bottoms begin to brown. Turn and cook for 3 more minutes until brown on that side. Season with salt and pepper and place in oven for 15 minutes After 15 minutes open oven and add sage and garlic. Stir well and continue to roast for 5 minutes more or until the garlic is light brown. Remove from oven and sprinkle with orange zest.
  • Serve lamb warm with roasted vegetables.

SAUTEED SICILIAN LAMB

Sauteed Sicilian Lamb image

Provided by Guy Fieri

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 15

1 tablespoon olive oil
1 1/3 pounds boneless lamb cutlets (leg or loin cut), sliced into 1/2-inch strips
Kosher salt and freshly cracked black pepper
2 cloves garlic, minced
1 tablespoon fresh oregano leaves, chopped
1/2 teaspoon crushed red pepper flakes
1 large yellow onion, sliced
1 whole roasted red bell pepper, seeded and sliced
One 10-ounce package sliced white button mushrooms
1 cup dry white wine
1/2 cup pitted large green olives, roughly chopped
2 teaspoons capers, rinsed
1/4 teaspoon lemon zest
Rice pilaf, for serving
1 tablespoon chopped fresh flat-leaf parsley, for garnish

Steps:

  • Set a large saute pan over high heat and add the oil. Sprinkle the lamb with salt and pepper. Add the lamb to the pan along with the garlic and saute until just cooked through, 3 to 4 minutes. Add the oregano and pepper flakes and stir. The lamb is done when browned all over but still tender. Transfer to a dish and set aside.
  • Set the pan back over the heat and reduce the heat to medium. Add the onions, roasted peppers and mushrooms to the pan. Season with salt and pepper. Saute until the vegetables begin to soften, stirring occasionally, about 5 minutes.
  • Deglaze the pan with the wine, scraping up any browned bits. Stir in the olives, capers and lemon zest. Bring to a simmer and reduce by two-thirds, 3 to 5 minutes. Season with salt and pepper. Return the lamb to the pan and stir together to incorporate the flavors and heat through.
  • Serve the lamb with rice pilaf and garnish with the parsley.

BRAISED LAMB SHOULDER CHOPS WITH ROOT VEGETABLES

Braised Lamb Shoulder Chops with Root Vegetables image

Categories     Lamb     Braise     Sauté     St. Patrick's Day     Dinner     Root Vegetable     Carrot     Parsnip     Turnip     Winter     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 8 servings

Number Of Ingredients 19

For the root vegetables:
10 small carrots, peeled and cut into medium dice
8 small turnips, peeled and cut into medium dice
8 small parsnips, peeled and cut into medium dice
3 tablespoons sugar
3 teaspoons fine sea salt
3 tablespoons unsalted butter
For the lamb shoulder chops:
8 (1-inch-thick) lamb shoulder blade chops (also called round bone lamb shoulder chops)*
3 to 4 tablespoons olive oil
2 heads garlic, cloves peeled and left whole
6 medium carrots, peeled and roughly chopped
4 medium celery stalks, roughly chopped
2 medium onions, roughly chopped
5 sprigs fresh rosemary
10 sprigs fresh thyme
4 whole dried bay leaves
3 quarts lamb or beef stock
* If lamb shoulder blade chops are unavailable, substitute bone-in lamb loin chops.

Steps:

  • Blanch the root vegetables:
  • Place diced carrots, turnips, and parsnips in a large saucepan. Add sugar and salt and cover with cold water. Place over high heat and bring to a boil. Reduce heat to moderately high and simmer, uncovered, until tender, about 3 minutes. Drain, then immediately plunge into ice water to stop cooking. Drain again and pat dry. DO AHEAD: The root vegetables can be prepared in advance and refrigerated, in an airtight container, up to 24 hours.
  • Roast the lamb:
  • Position a rack in the middle of the oven and preheat to 275°F.
  • Trim any excess fat from the lamb and sprinkle all sides with salt and pepper. In a large cast-iron pan or skillet over high heat, heat 1 tablespoon olive oil until smoking. Working in 3 or 4 batches (wipe the pan clean and add 1 tablespoon oil between batches), sear the lamb, turning with tongs, until golden brown on all sides, about 8 minutes per batch. Transfer as done to a large roasting pan. Add the garlic, carrots, celery, onions, rosemary, thyme, bay leaves, and lamb or beef stock. Place over high heat, using two burners, and bring to a simmer. Cover the roasting pan with foil, transfer to the oven, and roast until the meat is tender but not falling off the bone, about 2 hours.
  • Allow the lamb to cool in its braising liquid for about 45 minutes. Using tongs, carefully transfer the lamb to a large bowl and cover with foil to keep warm. Pour the braising liquid through a fine-mesh sieve, pressing on any solids. Discard the solids and return the braising liquid to the roasting pan. Skim any fat from the braising liquid, then place over high heat on two burners and bring to a boil. Lower the heat to moderate and simmer, uncovered, until the braising liquid is slightly reduced, about 30 minutes. Check the seasoning, then lower the heat to low, return the lamb to the roasting pan, and cook until warmed through, about 15 minutes.
  • While the lamb is heating, finish the root vegetables:
  • In a medium sauté pan over moderate heat, melt the butter. Add the carrots, parsnips, and turnips, and cook, stirring occasionally until heated through, about 8 minutes. Season to taste with salt and pepper.
  • To serve:
  • Divide carrots, parsnips, and turnips among 8 plates. Arrange 1 lamb shoulder blade chop on each plate, then drizzle with reduced braising liquid and serve immediately.

ROASTED LAMB WITH ROOT VEGETABLES

Roasted Lamb with Root Vegetables image

This recipe makes a fantastic holiday meal, but everyone likes it so much that you won't wait for a holiday to make it again. Impressive as it looks and tastes, it is actually quite simple to make, and it's basically a meal in one roasting pan so even clean-up is a breeze.

Provided by DarlisJ

Categories     Meat and Poultry Recipes     Lamb

Time 3h40m

Yield 8

Number Of Ingredients 17

1 (6 pound) leg of lamb
5 cloves garlic, minced
2 teaspoons coarsely ground black pepper
1 teaspoon crushed red pepper flakes
1 bay leaf, crushed
1 tablespoon chopped fresh rosemary
½ cup olive oil
2 tablespoons balsamic vinegar
2 tablespoons honey
2 tablespoons coarse salt, or as needed
8 carrots, peeled and trimmed
16 small potatoes, unpeeled
1 large beet, peeled and cut into wedges
1 yam, peeled and cut into wedges
8 baby turnips, peeled
2 tablespoons olive oil
salt to taste

Steps:

  • Allow the leg of lamb to rest at room temperature for 1 hour before cooking.
  • Preheat an oven to 400 degrees F (200 degrees C). Place the oven rack in the lower third of the oven.
  • Whisk the garlic, pepper, red pepper flakes, bay leaf, rosemary, 1/2 cup olive oil, vinegar, and honey together in a small bowl. Rub the mixture over the lamb, then season with 2 tablespoons coarse salt. Set aside. Place carrots, potatoes, beet, yam, and turnips in a large roasting pan. Toss with 2 tablespoons olive oil and a pinch of salt. Arrange the seasoned leg of lamb on top of the vegetables.
  • Roast the lamb in the preheated oven for 20 minutes, then reduce oven temperature to 325 degrees F (165 degrees C). Continue roasting to your desired degree of doneness, about 90 minutes more for medium-rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).
  • Allow the leg of lamb on a cutting board, tented with aluminum foil, for 30 minutes before carving. Place the vegetables on a serving platter and cover with aluminum foil to keep warm until ready to serve.

Mar 24, 2021 - My parents raised sheep for more than 30 years, so I have several lamb recipes. Not only are these chops tender, but they cook quickly. While the lamb broils, I saute zucchini and red pepper to accompany it. People always comment on this great combination. —Ruth Lee, Troy, Ontario
