Provided by Florence Fabricant

Categories     dinner, soups and stews, appetizer

Time 55m

Yield 4 servings

Number Of Ingredients 8

1/2 cup creme fraiche or sour cream
1 tablespoon chopped fresh mint
4 cups shelled fresh peas (about four pounds peas in pods)
2 cups vegetable stock or water
Salt and freshly ground black pepper
1 cup milk
1 cup heavy cream
Sprigs of mint for garnish

Steps:

  • Mix creme fraiche or sour cream with chopped mint. Let stand for 30 minutes if serving the soup hot; refrigerate if serving it cold.
  • Combine peas with stock in a medium-sized saucepan. Add salt and pepper to taste. Bring to a boil, reduce heat to medium low, cover and simmer about seven minutes or until the peas are barely tender. Remove two tablespoons of peas with slotted spoons and reserve for garnish. Continue cooking remaining peas about 10 minutes, or until very tender.
  • Transfer peas and cooking liquid to a blender or food processor. Puree until very fine. With the machine running, gradually pour in the milk. Continue to process until very smooth. Return to saucepan and simmer over low heat two minutes, stirring often.
  • Stir in heavy cream. Bring to a boil, stirring, and simmer soup to desired consistency, about five minutes. Taste and adjust seasoning. Chill or plan to reheat before serving.
  • To reheat soup, place in a saucepan over medium-low heat, stirring. Reheat reserved peas for 30 seconds in boiling water. Drain well. To serve, ladle soup into shallow bowls, spoon mint cream in the center of each serving and garnish with reserved peas and sprigs of mint.

Serve this fresh-tasting spread with wedges of our Herb-Scented Flatbread.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 9

1 medium leek (8 ounces), white and pale-green parts only
2 tablespoons olive oil
1 teaspoon minced garlic
6 tablespoons finely chopped shallots (about 3)
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 cups frozen peas, thawed
2 tablespoons Homemade Chicken Stock, or low-sodium canned chicken broth, skimmed of fat
1/4 cup chopped fresh mint

Steps:

  • Quarter leek lengthwise, then slice crosswise into 1/4-inch-thick pieces. Place leeks in a large bowl of cold water, and let stand for 5 to 10 minutes to rid them of dirt and sand. Lift leeks out of the water with a slotted spoon, and drain on paper towels.
  • In a medium skillet, heat 1 tablespoon olive oil over low heat; add garlic, shallots, leeks, salt, and pepper. Cook until very soft but not browned, about 15 minutes. Add peas, raise heat to medium, and cook, stirring, until peas are heated through, 3 to 5 minutes.
  • Transfer the pea mixture to the bowl of a food processor. Add chicken stock and remaining tablespoon of olive oil; pulse until mixture is a coarse puree, about 12 pulses. Transfer half the puree to a medium bowl. Process the remaining half for 15 seconds, then combine with the coarsely pureed peas. Adjust seasoning with salt and pepper, if necessary.
  • Transfer smashed peas to a serving dish. Stir in mint. Serve immediately or at room temperature.

  • Heat a large skillet or saute pan over medium-high heat. Add the olive oil and butter and swirl to coat. Add the sugar snap peas, salt, and pepper, and cook for 3 to 5 minutes, stirring occasionally, until sugar snaps are crisp-tender. Stir in the thawed green peas and cook while stirring for 1 minute more, until just heated through. Transfer the peas to a bowl and set aside.
  • Add bacon to skillet and cook over medium heat until crispy. Remove bacon to a paper towel-lined plate to drain. Once bacon has cooled, crumble or dice it.
  • Discard all but 2 tablespoons of the bacon grease (and if there's not enough bacon grease in the skillet, add olive oil so that the total drippings in the pan equal 2 tablespoons). Add flour to the drippings and whisk continuously for 1 minute. Slowly and gradually stir in the chicken broth, whisking until smooth. Add the heavy cream. Whisk continuously until the sauce is reduced by 1/3, about 5 to 10 minutes.
  • Add peas back to the sauce. Cook, stirring, until heated through, about 2 to 3 minutes. Stir in the fresh lemon juice and season with additional salt and freshly ground black pepper, to taste. Transfer peas in cream sauce to a serving bowl or platter, and top with crumbled bacon and fresh minced mint. Serve immediately.
