LOADED CAKE MIX COOKIES
Cake mix is the secret shortcut to light, fluffy cookies. Crispy cornflakes, pretzels and big chunks of dark chocolate give these an irresistible combination of crunch and gooiness -- and we also added sprinkles, just for fun!

Steps:
- Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
- Stir together the cake mix, eggs, butter and 1/4 cup water in a large bowl with a wooden spoon or rubber spatula until smooth and combined. Stir in the chocolate and sprinkles until they are completely coated, then gently fold in the cornflakes and pretzels.
- Scoop the dough onto the lined baking sheets using a 2-ounce ice cream scoop or a large spoon, about 2 inches apart (6 per sheet). Bake, rotating and switching the positions of the baking sheets halfway through, until the cookies start to turn golden brown on top, 8 to 10 minutes Repeat with the remaining cookie dough.
- Let cool slightly and serve, or cool completely and store in an airtight container up to 5 days.
ANY FLAVOR CAKE MIX COOKIES
Very simple recipe to turn your favorite flavor cake mix into perfect cookies! (You know, the kind with a nice cracked pattern on top, and a tiny bit of almost under done center). We went on a diet so I no longer keep white flour in the house, however a single cake mix managed to elude me. I found it when I was looking for something to bring to church. Now I keep a cake mix for bringing cookies, it's a lot less dangerous than a bag of flour! (Its best with a mix that has pudding in it for chewiness; you can also use the dry ingredients from your favorite from scratch recipe).

Steps:
- Toss all ingredients into a bowl, using enough Crisco to form a stiff dough. (I found it to take less time than pulling my mixer out, so I mix by hand).
- Form into little balls, place on a baking sheet 2 inches apart, gently flatten the balls, and bake at 350°F for 8-10 minutes, till puffy, and just barely golden around the edges. (They do spread a little while baking).
- Remove from heat, cool 5 minutes before removing to a rack to cool. (Okay, I didn't use a rack the second time, they still turned out great!) They will shrink down a little in height and form a perfect cookie!
CAKE MIX COOKIES
This recipe is very easy to put together and takes practically no time to make. Try other flavors of cake mixes if you like. When I make them, I use 2 cups (total) of peanut butter chips and chocolate chips mixed together. Very easy to whip up at halftime!
