Peanut chicken lovers will appreciate this quick Peanut Chicken Broccoli Slaw Stir Fry. An easy weeknight dinner that also makes great leftovers for lunch.

185 grams fettuccini, linguine, spaghetti or rice noodles ((about 1/2 of some pasta boxes))
2 teaspoon oil
1 pound boneless skinless chicken breast, cut in bit size pieces
salt and pepper to taste
2 cup broccoli slaw (about 1/2 package)
1 head fresh broccoli florets, chopped (optional)
1 red pepper, chopped
1/4 cup green onion, chopped
2 cups fresh baby spinach or more (optional)
sesame seeds (optional)
3 tablespoon peanut butter
2 tablespoon soy sauce - low sodium
1 tablespoon rice vinegar (or lemon)
1/4 cup warm water
1 tablespoon brown sugar
2 teaspoon sesame oil
1/2 teaspoon each, grated ginger and garlic
3/4 teaspoon sriracha

Steps:

  • MAKE NOODLES: Boil noodles in salted water as per package directions. Drain - reserving a cup of pasta water - and set aside.
  • MAKE PEANUT SAUCE: Place all peanut sauce ingredients in a small bowl and whisk until smoothly combined.
  • STIR FRY CHICKEN: Season chicken with salt and pepper. Heat oil in a pan (preferably non stick) to medium high. Stir fry chicken for 3-4 minutes until cooked through. Remove chicken to a plate and cover to keep warm.
  • STIR FRY VEGETABLES: Add a little more oil if needed and heat to medium high. Add onions, peppers, broccoli florets (if using) and broccoli slaw. Stir fry for 5 minutes until tender.
  • FINISH STIR FRY: Add cooked chicken, cooked noodles and peanut sauce to the vegetables. Add baby spinach if using. Stir to combine everything and cook for a couple of minutes until heated through and spinach wilts. Add a bit of pasta water at a time until you get the consistency you want (you will likely not need it all). Sprinkle on sesame seeds and serve.

This salad is one of my favorite ways to stretch a little extra chicken into a light yet complete (and really easy) meal. If you like your salads with a liberal coating of dressing or add multiple extras, double the sauce recipe and drizzle a little extra over top when serving. Yields 4 servings (and approximately 1/3 cup sauce).

1 tablespoon creamy peanut butter
1 tablespoon sesame oil
2 tablespoons soy sauce (use a gluten-free or low-sodium option, if necessary)
1 tablespoon packed brown sugar*
Optional: 1/2 teaspoon sriracha sauce
1 (10-ounce) bag broccoli slaw
2 cooked chicken breasts, chopped (I love using leftover chicken cooked with this 3-ingredient marinade )
1/4 cup roasted sunflower seeds or 1/3 cup peanuts
Optional extras: 1 small red bell pepper, chopped; 5-6 sliced radishes; 2 thinly sliced scallions; 1/4 cup chopped cilantro or parsley

Steps:

  • In a small bowl, thoroughly combine all of the peanut sauce ingredients.** (If the peanut butter is cold, warming it slightly in the microwave or allowing it to sit at room temperature for a few minutes will allow it to mix more easily with the other ingredients.) To a large bowl, add the broccoli slaw, chicken, and optional extras. Pour the sauce over top and toss to thoroughly coat. At this point, you may cover the salad and refrigerate until ready to eat. Sprinkle with the sunflower seeds or peanuts just before serving.

1/4 teaspoon garlic powder
1/8 teaspoon black pepper
Nonstick cooking spray
2 cups packaged shredded broccoli (broccoli slaw mix)
1/2 cup Cascadian Farm® frozen shelled soybeans (edamame), thawed
1/4 teaspoon ground ginger
3 10-inch whole wheat flour tortillas, warmed*
1 recipe Homemade Peanut Sauce (below)

Steps:

  • Sprinkle chicken strips with garlic powder and pepper. Coat an unheated large nonstick skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Add seasoned chicken; cook and stir for 2 to 3 minutes or until chicken is no longer pink. Remove chicken from skillet; keep warm. Add broccoli, edamame, and ginger to skillet. Cook and stir for 2 to 3 minutes or until vegetables are crisp-tender.
  • Spread tortillas with Homemade Peanut Sauce. Top with chicken strips and vegetable mixture. Roll up tortillas. Cut each wrap in half. Serve immediately.
  • Homemade Peanut Sauce: In a small saucepan, combine 2 tablespoons creamy peanut butter; 1 tablespoon water; 1 tablespoon reduced-sodium soy sauce; 1 clove garlic, minced; and 1/4 teaspoon ground ginger. Heat over very low heat until melted and smooth, whisking constantly.
  • *Note: To warm tortillas, preheat oven to 350°F. Wrap tortillas tightly in foil. Heat in the oven about 10 minutes or until heated through.

This is a very tasty Asian-inspired dish made with chicken and broccoli in a spicy peanut sauce. If you like it mild, use less cayenne, like it spicy, use more. If you're salt conscious, use low sodium soy sauce.

2 cups uncooked white rice
4 cups water
3 tablespoons soy sauce
2 tablespoons creamy peanut butter
2 teaspoons white wine vinegar

4 skinless, boneless chicken breast halves - cut into thin strips
3 tablespoons chopped garlic
1 ½ tablespoons chopped fresh ginger root
¾ cup chopped green onions
2 ½ cups broccoli florets
⅓ cup unsalted dry-roasted peanuts

Steps:

  • Combine the rice and water in a saucepan over medium-high heat. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender. In a small bowl, stir together the soy sauce, peanut butter, vinegar, and cayenne pepper. Set aside.
  • Heat oil in a skillet or wok over high heat. Add chicken, garlic and ginger, and cook, stirring constantly, until chicken is golden on the outside, about 5 minutes.
  • Reduce heat to medium, and add green onion, broccoli, peanuts, and the peanut butter mixture. Cook, stirring frequently, for 5 minutes, or until broccoli is tender, and chicken is cooked through. Serve over rice.

2 lbs boneless skinless chicken breasts
1 tablespoon red curry paste
2 teaspoons fresh ginger, finely grated
1 teaspoon garlic, crushed
1/2 cup peanut satay sauce
2 tablespoons fish sauce
14 ounces unsweetened coconut milk
4 cups broccoli florets
2 tablespoons basil, chopped (optional)
1 tablespoon green onion, tops only, chopped (optional)

Steps:

  • In a sealable plastic bag combine chicken, red curry paste, ginger and garlic.
  • Massage bag until ingredients are well mixed and chicken is thoroughly coated.
  • Refrigerate for 30 minutes.
  • In a saucepan combine peanut satay sauce, fish sauce and coconut milk; blend well and cook until heated through.
  • Broil chicken about 8 to 10 minutes, turning occasionally, until chicken is cooked.
  • Meanwhile, blanch broccoli in boiling water; drain and set aside, keep warm.
  • Arrange broccoli on a serving platter and top with chicken.
  • Pour sauce over chicken and sprinkle with basil and green onion.

4 fluid ounces fat-free evaporated milk
1 cup low-fat vanilla yogurt
2 tablespoons peanut butter, creamy
2 tablespoons soy sauce
1/4 teaspoon ground red pepper or 1/4 teaspoon cayenne pepper
2 tablespoons peanuts

Steps:

  • Cook and drain spaghetti according to package directions.
  • Set aside.
  • Toss chicken, lime juice, curry powder, ginger, and garlic.
  • Heat oil in a non-stick skillet over medium-high heat.
  • Cook chicken mixture and broccoli in oil 5-7 minutes.
  • Remove mixture from skillet; keep warm.
