SOUTHERN HUSHPUPPIES RECIPE
Light and fluffy deep fried hushpuppies are a real treat when served with a plate of fish and seafood, or with some good old Southern barbecue. Easy to make.

Steps:
- Place flour in a medium sized mixing bowl.
- Add the corn meal.
- Add the sugar.
- Add the salt.
- Mix all the dry ingredients together.
- Gradually add enough warm water to make a thick batter. Set aside.
- Heat cooking oil in a deep pot until oil reaches 350F degrees for frying.
- Scoop batter by the Tablespoonful and carefully drop into the hot oil.
- Let the puppies cook until golden brown on the bottom.
- Flip puppies over in the oil if they do not flip on their own.
- Fry until golden brown all over.
- Remove when done and place in a paper towel lined bowl to cool.
- Enjoy!
CALABASH FISH FRY HUSHPUPPIES
There's nothing like a Friday night fish fry with a big ol' table full of whole fried fish, crab legs, scallops, oysters, pinto beans, cole slaw, macaroni and cheese, collard greens... need I go on? And a baskets of piping hot hushpuppies.

- In a bowl combine the grits, flour and 1/4 teaspoon sea salt. Add the egg, milk and diced onion to the grits and flour. Stir together just until moist.
- Heat the shortening or oil until it is hot and shimmering (375°F is ideal). Drop the batter by tablespoons into the deep hot fat. Alternatively, spoon batter into a plastic zip-top bag, seal it and snip one of the bottom corners of the bag with shears and use it like a piping bag to drop dollops of batter into the hot fat. Fry about 3 minutes or until golden brown, turning once.
- Drain the hush puppies on paper towels and season with additional, to taste. Serve with honey butter, ketchup or tartar sauce.

- 1. Pour buttermilk in shallow bowl. Add fish filets, turning to coat. Refrigerate for about one hour.
- 2. Mix together flour, cornmeal and seasonings. Remove fish from refrigerator. Shake off excess buttermilk. Roll fish in seasoned corn meal mixture.
- 3. Heat oil in deep fryer to about 375 degrees. Drop fish pieces in hot oil and deep fry for about 4 to 5 minutes or until golden brown. Drain on paper towels. Sprinkle with additional salt/pepper, if desired and serve hot with hushpuppies, slaw and your favorite potato.

- 1. In a large mixing bowl, mix together flour and cornmeal. Add egg, onion, sugar, and spices.
- 2. Add buttermilk and stir with a fork just until blended. The mixture should be fairly stiff. Add a little bit more buttermilk, if necessary.
- 3. Heat oil in deep-fryer to 375 degrees.
- 4. Drop dough by teaspoons into hot oil.
- 5. Fy until hush puppies rise to the top and are golden brown.
- 6. Remove from the fryer and drain on paper towels.
- 7. Serve hot with honey butter, if desired. Enjoy delicious Southern-style hush puppies!

CALABASH STYLE FRIED SHRIMP
My favorite part of visiting coastal North Carolina, besides the coast, is the Calabash style seafood. So good! My kids beg me to make this all the time. It is my most favorite food in the whole world!

- stir together flour and cornstarch in a shallow baking dish until well combined.
- In a separate dish, mix eggs & 1 cup of milk together
- Place a heavy cast iron skillet over medium heat. Pour oil to a depth of 2 inches or so, into the skillet.
- Heat oil over medium-medium high heat.
- When oil reaches roughly 375 degrees, dip shrimp in egg mixture and dredge in flour, then place shrimp in hot oil, being careful not to crowd the skillet. Turn shrimp as needed.
- Line serving dish with paper towels near skillet.
- Cook shrimp for about 2 to 3 minutes or just until golden and crispy. . Remove to paper towels. Salt to taste before serving.
