Honey Calamansi Mojito image

A calamondin or Philippine lime is a citrus native in the Philippines. With its sour taste like lime and lemon, it's good for savory dishes and drinks as flavorings. Mixed with different alcoholic spirits, it makes an exciting drink. It can be enjoyed as well for its medicinal benefits.

1 tbsp hot water
1 tbsp of honey
8 pcs calamansi
Sugar with Red food color
Fresh mint
Ice
1 oz. Calamansi liquor
1 oz. White rum
2 oz. soda water

Steps:

  • Mix hot water and honey in a bowl. Set aside.
  • Squeeze out the juices from the calamansi which is a great fruit.
  • Put the sugar on a small plate, add a few drops of red food color, and mix until all the sugar becomes red.
  • Rim the glass with calamansi juice and colored sugar then set aside.
  • Put the mint, calamansi juice, and honey and water mixture in a highball glass, using a muddle stick, crush them to release some of the oil from the mint leaves.
  • Put ice and garnish with calamansi.

1 lb calamansi lime, washed and stems removed
2 cups sugar
1 cup water

Steps:

  • Cut each calamansi lime in half, and then squeeze the juice through a sieve and into a small container. Set aside the calamansi rinds. Discard the seeds in the sieve and save the calamansi juice for another use.
  • Place the reserved rinds, sugar, and water into a saucepan over high heat and bring to a boil while stirring frequently. Reduce the heat to low, and simmer for 10 minutes, stirring until the sugar dissolves. Remove from the heat, and then cover the pot and allow the syrup to cool completely to room temperature.
  • Pour the syrup through a fine mesh sieve set over a large bowl. Press down on the rinds in the sieve to extract as much liquid as possible. Discard the rinds. Store calamansi syrup in a lidded container and refrigerate for up to a month.
