A satisfying open-face vegetarian sandwich with avocado, almonds and mushrooms.

4 slices whole-grain bread, lightly toasted
1 avocado, sliced
1 cup sliced mushrooms
⅓ cup sliced toasted almonds
1 tomato, sliced
4 slices Swiss cheese

Steps:

  • Preheat the oven broiler.
  • Lay the toasted bread out on a baking sheet. Top each slice of bread with 1/4 of the avocado, mushrooms, almonds, and tomato slices. Top each with a slice of Swiss cheese.
  • Broil the open-face sandwiches until the cheese melts and begins to bubble, about 2 minutes. Serve the sandwiches warm.

I have no idea why this is called California Breakfast Bread or where it comes from. I found this recipe typed, by a real typewriter, on a sheet of note paper. Goes to show that it has been around for awhile. It is scrumptious.

2 cups low-fat buttermilk
1/2 cup honey
1/4 cup molasses
2 teaspoons baking soda
1 teaspoon salt
1 1/2 cups whole wheat flour
1/2 cup wheat germ
1 cup all-purpose flour
1/4 cup raisins or 1/4 cup chopped dates
1/4 cup chopped nuts (I use pecans.)

Steps:

  • Preheat oven to 400 degrees.
  • Prepare a non-stick loaf pan by spraying with cooking spray.
  • Mix together all ingredients and pour into prepared pan.
  • Place pan in oven and lower oven temperature to 350 degrees.
  • Bake for 1 hour.
  • Turn loaf out on rack and cool.
  • Allow bread to cool at least 8 hours before slicing and toasting this bread.

I tried to create a recipe after a delicious bread loaf that I had that had smoked sausage baked in. It is not exactly the same, but it is my family's favorite!!!!

2 cups Jiffy baking mix
1 cup Jiffy cornbread mix
3/4 cup milk
4 eggs, beaten
1/4 cup oil
1 cup cheese, grated
1 lb smoked sausage, browned

Steps:

  • Brown Smoked Sausge (you can use any type you prefer i.e. pork sausage).
  • Mix first five ingredients.
  • Fold in cheese (you can yse any type you prefer i.e. cheddar, monterey).
  • Fold in cooled sausage.
  • Grease baking dish ( I use 9x12).
  • Spread the batter in the dish.
  • Bake at 350 degrees until browned (about 45 min).
