- Heat oven to 425°. Line rectangular pan, 13x9x2 inches, with aluminum foil; spray foil with cooking spray. Mix bread crumbs, parsley, lemon peel and butter.
- Cut fish into 4 serving pieces. Place fish in pan. Sprinkle with seasoned salt. Drizzle with lemon juice. Spoon crumb mixture over each piece; press lightly.
- Bake uncovered 15 to 20 minutes or until fish flakes easily with fork.

SEA BASS WITH TOMATOES AND GARLIC RISOTTO CAKES

- Preheat oven to 350 degrees F. Place garlic cloves, oil and 3 tablespoons of water in a small dish and cover with foil. Bake for 30 minutes or until garlic is softened. Place in a small food processor and process until smooth. Bring 4 cups of water to simmer in a medium saucepan. Melt 2 tablespoons of butter and 1 tablespoon of olive oil in a medium saucepan. Add the onion and cook until soft. Add the rice and stir until lightly golden brown. Add the wine and cook until reduced completely. Add 1 cup of hot water and stir until absorbed. Continue adding 1 cup of water at a time until rice is just tender. Remove from the heat and add the garlic puree, cheese, parsley, salt and pepper and stir to combine. Let cool for 30 minutes. Place in a bowl, cover and refrigerate until cold, about 2 hours. Shape risotto into 8 (2-inch) diameter patties. Place risotto cakes on a baking sheet. Cover and refrigerate 1 hour. Place seasoned flour in a medium bowl. Lightly coat each risotto cake with flour. Melt 2 tablespoons of the butter in a medium saute pan. Add 4 cakes at a time and saute until golden brown on both sides. Wipe out pan, add the remaining 2 tablespoons of butter and repeat with the remaining 4 cakes. Serve 2 per person.
- For the Sea Bass: Preheat oven to 400 degrees F. With a sharp knife score bass 3 times on each side to the bone. Season bass on both sides with salt and pepper. Heat oil in a large saute pan over medium heat. Add bass to pan and brown it on both sides. Transfer pan to oven and cook bass for 8 to 12 minutes or until cooked through. Transfer fish to a plate. Serve with Heirloom Tomato Salad.
- For the Heirloom Tomato Salad: Sliced tomatoes and arrange them in a shallow bowl. Combine the rest of the ingredients and pour over tomatoes. Serve immediately.
PAN SEARED CHILEAN SEA BASS WITH WILD MUSHROOM GRITS AND FRESH SPINACH

- Season the sea bass with salt and pepper.
- In a large saute pan over medium heat, add the canola oil and heat the oil to a slight smoke. Add 1 sprig of fresh thyme to the saute pan and sear the sea bass skin side down for 3/4 of the cooking time about 7 minutes. This will give the fish a beautiful crisp skin and golden color.
- While the fish is cooking start the grits. In a 2 quart saucepot add 2 tablespoons of butter and 1 sprig of fresh thyme. When the butter begins to brown, add the mushrooms and saute until golden. Using a wooden spoon, stir in the grits, add the chicken stock, and reduce to a simmer. When the grits begin to thicken finish with heavy cream and 1 tablespoon of butter. Season with salt and pepper, when ready to serve, remove the thyme sprig. Keep the grits warm on a low temperature.
- Carefully turn the fish over, to finish the other side. Remove the sea bass and hold in a warm place.
- In the same saute pan, on the same temperature, add the spinach. It will quickly wilt. Finish the spinach with the remaining whole butter and season with salt and pepper.
- For presentation, serve this dish in a large soup bowl. Using a ladle, scoop a small amount of grits into the bottom of each bowl. Layer a small amount of spinach on the grits and finish with the sea bass. Garnish with fresh thyme.

MISO BUTTER-SEARED SEA BASS WITH ROASTED VEGETABLES RECIPE BY TASTY

- Preheat the oven to 400°F (200°C). Line a baking sheet with a reusable baking mat or parchment paper.
- In a small bowl, stir together the butter, miso, ginger, garlic, and sesame oil. Set aside.
- Arrange the potatoes on the prepared baking sheet. Season with salt and pepper and drizzle with ½ tablespoon sunflower oil. Toss to coat.
- Roast the potatoes until tender, 10-12 minutes.
- While the potatoes roast, sear the sea bass. Pat each fillet dry with a clean kitchen towel or paper towel and season on both sides with salt and pepper.
- Heat 2 tablespoons of sunflower oil in a medium skillet over medium-high heat. Once the oil is nearly smoking, add the sea bass, skin-side down, and cook until the skin is crispy, 3-4 minutes. Flip and sear the other side until golden brown, about 3 minutes. Remove the fish from the pan.
- Remove the potatoes from the oven, leaving the oven on. Move the potatoes to a quarter of the pan. Place the fish, skin-side down, on the other quarter and spread the bok choy on the empty half. Brush the miso butter over each fish fillet, then flip and brush more on the skin side. Drizzle the remaining ½ tablespoon sunflower oil over the bok choy and season with salt and pepper. Toss to coat.
- Return the baking sheet to the oven and bake until the fish is completely opaque and just cooked through, 8-10 minutes. The internal temperature should reach 145°F (63°C).
- Divide the fish, potatoes, and bok choy between 2 plates. Garnish with sesame seeds and serve immediately.

CALIFORNIA SEA BASS WITH SHELL BEAN RISOTTO AND GREMOLATA BUTTER
Shell beans are a big part of late summer and early fall in our kitchen. If you happen to come by Lucques on a slow night when they're in season, you'll see runners, cooks, and dishwashers gathered around huge piles of shell beans, shucking, shucking, shucking. For me, shucking provides a much-needed period when my hands can do the work and my brain takes a little time off. Don't worry, shell beans for six won't require a crew of shuckers.

- Season the fish with the thyme, half the lemon zest, and 2 tablespoons parsley. Cover and refrigerate at least 4 hours.
- To make the gremolata butter, mince the remaining lemon zest and combine with the minced garlic and remaining 6 tablespoons chopped parsley on a cutting board. Chop the mixture together until very fine. Scrape the gremolata into a small bowl and mash together with 6 tablespoons butter and 1 teaspoon lemon juice. Season with a heaping 1/4 teaspoon salt and some pepper.
- Heat a large sauté pan over high heat for 2 minutes. (Depending on the size of your pan, you may need to cook the fish in batches.) Season the fish with salt and pepper on both sides. Swirl in the olive oil and wait 1 minute. Carefully lay the fish in the pan, skin side down, and cook 3 to 4 minutes, until the skin is crisp. Turn the fish over, lower the heat to medium-low, and cook a few more minutes, until it's almost cooked through. When it's done, the fish will begin to flake and separate a little and the center will still be slightly translucent. Remember, the fish will continue to cook a little more once you take it out of the pan.
- Spoon the hot risotto onto a large platter. Arrange the fish on top, and smear each fillet with some of the gremolata butter. Squeeze lemon juice over the fish and risotto, and scatter the whole parsley leaves on top.
- Bring the chicken stock and 3 1/2 cups water to a boil over high heat. Then turn off the heat.
- Heat a medium pot over medium-high heat for 2 minutes. Swirl in 3 tablespoons butter, and when it foams, add the onion, thyme, chile, 1/2 teaspoon salt, and a few grindings of black pepper. Sauté about 5 minutes, stirring often, until the onion is translucent. Stir in the rice, 1 1/2 teaspoons salt, and a pinch of pepper. Cook 2 minutes, stirring continuously, until the rice just begins to toast and the grains of rice have a white dot at their center.
- Pour in the white wine, and once it has evaporated, quickly add 1 cup of the hot stock, stirring continuously. When the stock is completely absorbed, begin adding the liquid in 1-cup batches, stirring all the time with a wooden spoon in a rhythmic back-and-forth motion. Wait for each batch of liquid to be absorbed before adding the next. The rice should be bubbling and quickly absorbing the stock. After about 15 minutes, taste the rice for doneness. It should be slightly but not too al dente. The risotto may need more liquid and more time, so keep cooking until it's done. It should be neither soupy nor dry; each grain of rice should be coated in a flavorful, starchy "sauce."
- When the rice is almost done, turn off the heat and stir in the shell beans. Let the risotto "rest" for a minute or two and then quickly stir in the remaining tablespoon butter, the spinach, parsley, and basil. Taste for seasoning. The rice will keep absorbing liquid so add a little more stock if it seems dry.
- Season the fish with the lemon zest and herbs in the morning. You can cook the shell beans ahead of time, but the risotto must be cooked "to order." To time this well, start cooking the fish when the risotto is just about done. (The risotto can "rest" for a moment while you pull everything together.)
