Basic instructions on how to make sushi in your very own home! This recipe can be substituted to include meat, and any other vegetable you can imagine!

Steps:
- Rinse rice until water runs clear. Combine rice and 1 1/2 cups water in a saucepan and bring to a boil, about 5 minutes. Reduce heat to low, cover, and simmer until water is completely absorbed and rice is soft, 8 to 10 minutes.
- Use a wooden spoon to transfer cooked rice to a non-metal bowl and set aside to cool.
- Meanwhile, combine vinegar, sugar, and salt in a small saucepan and bring to a boil, about 5 minutes. Reduce heat and simmer 1 minute more. Combine vinegar mixture with the cooling rice a few tablespoons at a time until rice is coated; you may not need all of the vinegar mixture. Set aside to finish cooling completely, about 15 minutes.
- Place a sheet of nori on a sushi mat with the rough side facing up. Place a small bowl of water nearby. Use wet hands to evenly spread a handful of rice onto the nori. Arrange cucumber and crab across the nori, about 1/2 inch from the edge closest to you. Roll the wrap starting at the close edge and rolling away from yourself. Press and roll again to seal. Repeat with remaining nori, rice, cucumber, and crab.
- Dip a sharp knife into water and slice each roll into 8 pieces, rinsing the knife after each cut to prevent sticking.

CALIFORNIA ROLL
A California roll is a fresh take on traditional Japanese rice rolls. Filled with avocado, crab, and cucumber, it's fresh and crunchy and makes a filling meal. You can use real or imitation crab.

Steps:
- Wrap a sushi rolling mat completely in plastic wrap and set aside.
- Bring water and rice to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes. Transfer rice to a bowl and cut in rice vinegar using a rice paddle or wooden spoon. Season with 1 teaspoon sugar and 1 teaspoon salt, or to taste. Allow to cool to room temperature, about 30 minutes.
- Combine crab meat with mayonnaise in a small bowl.
- Place a sheet of nori on a flat work surface. Spread a thin layer of rice on top of the nori. Place the nori, rice side down, on the prepared rolling mat. Place 2 to 3 avocado slices on top of the nori in one layer. Top with 2 to 3 tablespoons of the crab mixture. Spoon 1 to 2 teaspoons tobiko lengthwise on one side of the avocado-crab mixture, and 2 cucumber strips on the other side. Using the mat as a guide, carefully roll the California roll into a tight log. Remove the rolling mat. Top roll with more tobiko, cover with plastic wrap, and gently press the tobiko into the top of the roll. Remove the plastic and cut roll into 6 even pieces using a wet knife. Repeat with remaining sheets of nori and filling. Serve garnished with pickled ginger, soy sauce, and wasabi paste

Steps:
- Season the sushi rice with the rice vinegar, fanning and stirring until room temperature.
- On a rolling mat, place one sheet of nori with the rough side facing upwards.
- Wet your hands and grab a handful of rice and place it on the nori. Spread the rice evenly throughout the nori without mashing the rice down. Season rice with a pinch of sesame seeds, if using, then flip it over so the nori is facing upwards.
- Arrange, in a horizontal row 1 inch (2.5 cm) from the bottom, the crab followed by a row of avocado and a row of cucumber.
- Grabbing both nori and the mat, roll the mat over the filling so the extra space at the bottom touches the other side, squeezing down to make a nice tight roll. Squeeze down along the way to keep the roll from holding its shape.
- Transfer the roll onto a cutting board. Rub a knife on a damp paper towel before slicing the roll into six equal portions.

CALIFORNIA BURRITO
Never heard of these until a surfer pal from San Diego introduced me to this culinary naughtiness. Pretty much a Mission street monster burrito where you replace the rice and beans with french fries.

- Combine the Cilantro, Lime Juice, Olive oil, Garlic, Jalapeno, salt and pepper in a food processor for less than one minute or until the texture is nice and chunky. Be sure the garlic is fully processed. If you don't have a food processor you can make the marinade by dicing the cilantro, jalapenos and garlic very lightly and then mix the ingredients in a bowl with a fork.
- Marinate the steak in the cilantro lime marinade for 2-3 hours in the fridge (*do not marinate overnight as the lime has begun the cevice process!).
- Cook the steak. Lightly grease the grill grates of an outdoor grill. Heat the grill to medium-high heat. Remove the steak from the marinade and season it on both sides (lightly) with salt and pepper. Cook the steak on the grill, flipping once, until the steak has reached your desired doneness. Once the steak has finished cooking, remove it from the grill and allow it to rest for 5 minutes. Slice the steak across the grain into thin slices.
- Cook and salt the fries in the oven according to package directions, we want the big soft poofy fries, not the small hard little ones.
- Warm the tortilla and lay it out on a flat surface. Place your toppings from one edge of the tortilla about 2/3 of the way to the other edge. Steak, cheese, guac. sour cream and top with the french fries (or your prefference) Don't stack your pile more than 1-2 inches wide and an inch high. If you fill your burrito too full, you might not be able to seal it.

MIXED MUSHROOM TART

- Put oven rack in middle position and preheat oven to 375°F (or as per pie shell directions). Bake pie shell following package directions.
- Cool completely in pan on a rack, about 15 minutes.
- Make filling while shell bakes:.
- Heat butter and oil in a 12-inch heavy skillet over moderately high heat until foam subsides, then sauté mushrooms, shallot, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper, stirring frequently, until mushrooms are tender and any liquid given off is evaporated, 8 to 10 minutes. Transfer to a bowl and cool to room temperature.
- Whisk together crème fraîche, heavy cream, whole egg, yolk, and remaining 1/4 teaspoon salt and 1/8 teaspoon pepper in a medium bowl until combined.
- Fill and bake tart:.
- Reduce oven temperature to 325°F
- Scatter mushrooms evenly in tart shell and pour custard over them. Bake tart in pan on a baking sheet until custard is just set and slightly puffed, 35 to 45 minutes.
- Cool tart in pan on rack at least 20 minutes, then remove side of pan. Serve tart warm or at room temperature.

MUSHROOM TART

- Preheat oven to 425 degrees F.
- Heat 2 large saute pans over high heat.
- Working in batches divide the olive oil between the 2 pans.
- When the oil is hot but not quite smoking, add the mushrooms, season with gray salt and pepper, add the butter to each pan and allow to caramelize.
- Once mushrooms have cooked down to half their volume, transfer all mushrroms to 1 pan.
- Add the shallots and garlic and cook until the light brown and fragrant.
- Add the thyme until it crackles.
- Add the cream and bring up to a simmer.
- Reduce the cream by about half and stir in the grated parmesan, and the lemon juice.
- Shut off the flame and quickly stir in the beaten egg.
- Remove from the stove and let cool to room temperature.
- Add parsley and stir.
- While mushroom mixture is cooling, roll out the pastry dough on a floured surface.
- Roll the dough out so that it will line a 10-inch removable bottom tart pan.
- Line the dough with parchment paper and fill with the dry beans.
- Bake for 10 to 12 minutes, remove from the oven and let cool to room temperature.
- Remove beans and paper.
- Lower oven temperature to 400 degrees F.
- When both the filling and shell have cooled to room temperature fill the shell with the mushroom mixture and top with the crumbled blue cheese.
- Arrange the tart mold on a cookie sheet and bake for 20 to 30 minutes.
- Remove from the oven and allow to cool to room temperature before serving.
- Slice in wedges and serve.

Steps:
- Preheat the oven to 350 degrees F.
- Place crust in a 10 inch tart pan.
- Prick the bottom of the crust all over with a fork.
- In a medium saute pan, over medium heat, melt the butter.
- Add the onions.
- Season with salt and pepper.
- Saute for 1 minute.
- Add the mushrooms.
- Season with salt and pepper.
- Continue to saute for 3 to 4 minutes or until the mushrooms are wilted.
- Stir in the garlic and remove from the heat.
- Cool completely.
- In a mixing bowl, whisk the cream and eggs together.
- Season with 3/4 of a teaspoon of salt, pepper, hot pepper sauce, and Worcestershire sauce.
- Mix well.
- Pour the mushroom mixture into the pastry shell.
- Sprinkle the cheese over the mushrooms.
- Pour the cream mixture over the cheese.
- Bake until the center sets and the top is golden, about 55 minutes.
- Remove from the oven and let cool for 5 minutes before slicing to serve.

- preheat oven to 200°C.
- Place the mushrooms on a baking tray and brush generously with olive oil, season and bake for 8 minutes and then remove and leave to cool.
- Mix the goats cheese with thyme leaves and lemon zest and season.
- Meanwhile, roll out pastry to a 33cm x 13cm rectangle and place on a lined baking tray and spread goats cheese mix along the centre.
- Using a sharp knife, lightly score a border 1 to 2 cm in from the edge and then arrange the mushrooms on top.
- Brush exposed pastry with beaten egg and bake for 15 to 20 minutes until puffed and golden.
CALIFORNIA MUSHROOM TART
A meatless main course or delicious side. Or cut in smaller slices as an appetizer. Uses humble, button mushrooms. Looks tricky, but is very simple once you have the veggies sliced. Depending on your cheese, you may want to use a different herb than basil. Note: do not try to substitute frozen spinach for fresh - it will be too wet, and make your tart soggy.

- Press pie dough into 9" tart pan. Press dough into pan's fluted edge, trim excess. Cover dart shell with aluminum foil and fill with dried beans or baking weights. Bake according to package instructions. Let cool 5 minutes and remove weights. (you may do this earlier in the day, and hold at room temperature til needed).
- Slice veges into 1/8" slices. Pat dry with paper towels. Sprinkle cheese, spinach and basil over bottom of tart.
- Arrange vegetables around the edge of tart shell, repeatedly overlapping 2 slices each of mushroom, red bell pepper, and onion. (the onion tends to fall apart - just use a generous pinch of shreds.) Arrange a smaller circle inside the first. Put onions in the center, covered by more mushrooms. Sprinkle with diced sun-dried tomatoes.
- Drizzle the tart with olive oil. Season with salt and pepper. Bake at 350F until tart is golden brown around the edges, about 30 minutes.
RUSTIC MUSHROOM TART
Don't let phyllo dough's fussy reputation put you off: our method of brushing olive oil and sprinkling breadcrumbs between the layers makes this tart actually quite simple to assemble, and helps keep it healthy. - Combine ricotta, goat cheese, rosemary and peppers in a medium bowl; set aside.
- Heat butter in a large skillet over medium-high heat.
- Add mushrooms, leek and salt and cook, stirring, until the leek starts to soften and the mushrooms release their juices, about 3 minutes.
- Pour in wine and simmer until the liquid has evaporated, about 2 minutes & set aside.
- Preheat oven to 400°F
- Line a large baking sheet (approximately 12 by 17 inches) with parchment paper.
- Lay one large sheet of phyllo on the prepared pan. (If using the smaller size, slightly overlap two sheets to form a rectangle.)
- Keep the remaining phyllo covered with plastic wrap or wax paper and a damp kitchen towel.
- Lightly coat the phyllo with oil using a pastry brush.
- Sprinkle with 1 teaspoon breadcrumbs.
- Repeat this step, layering the remaining phyllo on top.
- Carefully roll about 3/4 inch of each side toward the center to form the outer rim of the tart.
- Spread the reserved cheese mixture evenly over the phyllo.
- Top with the reserved mushroom mixture.
- Bake the tart until the crust is brown and crispy, 25 to 30 minutes.
- Let cool in the pan on a wire rack for 5 minutes.
- To serve, lift the parchment paper and slide the tart onto a cutting board or large platter & serve warm.

BASIC CALIFORNIA ROLL

- Slice the ends off of the cucumber, then cut into quarters lengthwise. Thinly slice each quarter lengthwise to make spears.
- Stir chopped crab sticks and mayonnaise together in a small bowl.
- Lay 1 sheet of nori on a bamboo mat. Pat a thin, even layer of rice over the nori with wet hands, leaving a 1/3-inch edge at the bottom. Sprinkle rice with sesame seeds. Carefully flip over.
- Add 1 tablespoon of the crab mixture in a line across the sheet about 1/3 of the way from the top. Layer with 1 to 2 cucumber spears and 1 to 3 slices of avocado.
- Using the bamboo mat, roll the sheet tightly into a cylinder, starting at the top edge. Moisten the uncovered edge with water and finish rolling once you reached the bottom. Repeat with the remaining ingredients.
- Slice each roll into 3/4-inch pieces. Garnish each piece with 1/8 teaspoon tobiko.

CLASSIC CHOCOLATE TART
An easy recipe for a chocolate ganache tart. Very rich, buttery, and chocolaty. I cut into small slices and serve with a cold glass of milk or a hot cup of coffee.

- Combine flour, sugar, and salt in a food processor. Pulse to combine. Add cold butter and pulse until crumbly. Slowly add water to food processor until mixture comes together. Refrigerate for 1 hour.
- Flour a work surface and a rolling pin. Roll out dough into a 10-inch disc.
- Preheat the oven to 425 degrees F (220 degrees C). Grease an 8-inch tart pan.
- Carefully place dough into the prepared tart pan. Trim dough from the edges of the pan. Prick holes into the dough on the bottom and along the sides of the pan.
- Bake in the preheated oven until lightly browned, 20 to 23 minutes. Remove from oven and allow to cool completely, about 1 hour.
- Pour heavy whipping cream into a microwave-safe bowl. Microwave for 2 minutes or until bubbles start to form along outside of the bowl. Add chocolate chips and let sit for 15 to 20 seconds. Whisk until smooth. Pour chocolate ganache into cooled crust. Let cool at room temperature until set, about 30 minutes. Keep refrigerated.

Uncover; boil until liquid is slightly reduced, about 4 minutes. Add bell pepper and zucchini. Cover; cook until almost tender, about 5 minutes. CALIFORNIA TORTE
Not sure where this one came from, but it's a nice, colorful appetizer - and delicious, too! Servings are approximate, cooking time is refrigeration time.

Steps:
- Line a one-quart dish with plastic wrap.
- Place the garlic and cheeses in a food processor, and process.
- Add oil and thyme, and process again until well combined.
- Spread 1/3 of the cheese mixture in the dish.
- Then spread the pesto over the cheese.
- Spread another 1/3 of the cheese mixture over the pesto.
- Next, layer with the chopped red peppers.
- Finish with the final layer of cheese.
- Cover and chill at least 2 hrs.
- When ready to serve, unmold onto serving plate and garnish with additional red pepper strips, and fresh herbs (thyme or basil) if desired.
- Serve with crackers or raw veggies.
