Steps:

  • Preheat oven to 400 degrees. On a parchment-lined rimmed baking sheet, arrange bacon in a single layer. Bake until fat is rendered and bacon is beginning to brown, 15 to 18 minutes. Carefully remove from oven and brush with pure maple syrup. Bake until bacon is browned and sticky, 3 to 5 minutes. With tongs, transfer to a wire rack, then set rack on baking sheet and let bacon drain. Serve warm.

2 navel oranges
1 tablespoon cane syrup or honey

Steps:

  • Preheat oven to 400 degrees. Lay bacon on a baking sheet. Juice oranges into a small saucepan, and add cane syrup. Cookover medium heat until glaze is thick enough to coat theback of a spoon, about 8 minutes.
  • Brush some glaze over the bacon, and bake for 10 minutes.Brush with more glaze. Continue to bake until golden,about 15 minutes more (10 minutes if using regular bacon).Brush bacon with remaining glaze, and transfer to a parchment-or paper-towel-lined plate to drain before serving.

1 pound thick-cut bacon

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Combine maple syrup and chipotle powder in a small bowl.
  • Place a disposable aluminum pan on the upper rack of your grill or over one burner on indirect heat.
  • Place bacon strips directly on the hot grate and reduce heat to low. Grill bacon, turning frequently, until evenly browned and crisped to your liking, 4 to 6 minutes. Transfer cooked bacon to the prepared pan to keep warm.
  • Return all cooked strips to grill and brush with maple-chipotle glaze on both sides and cook for 1 minute more. Serve immediately.

1 teaspoon finely grated lime zest
Four 3/4-inch-thick slices of skinless slab bacon, halved crosswise
Freshly snipped chives, for garnish

Steps:

  • Light a grill or preheat a grill pan. In a small bowl, whisk the maple syrup with the vinegar and orange and lime zests. Grill the bacon over moderately low heat, turning occasionally, until lightly browned and tender, about 12 minutes. Brush with the maple-citrus syrup and continue grilling, turning occasionally, until glazed, 2 to 3 minutes longer. Transfer the bacon to a platter, garnish with snipped chives and serve.

1/4 cup maple syrup
1 teaspoon Dijon mustard
1 -2 teaspoon brown sugar

Steps:

  • Cook the bacon in a large skillet over medium-high heat until browned, but NOT crispy; drain on paper towels; set aside.
  • In a small bowl whisk together the maple syrup, Dijon mustard and brown sugar; set aside.
  • Return the bacon back to the skillet and brush with glaze, then turn the bacon over.
  • Cook the glazed side down for 2 minutes over low heat.
  • Glaze then turn and cook for another 2 minutes over low heat.
  • Repeat until all the glaze is used up.
  • Serve immediately.

  • Combine syrup, brown sugar, mustard, lemon juice and salt in a 10 inch skillet over medium heat.
  • Stir until mixed.
  • When hot, add bacon slices and gently shake pan until the bacon slices are coated.

3/4 cup maple syrup
1 tablespoon brown sugar
1 lb approximately Canadian bacon

Steps:

  • Preheat oven to 300°F (150°C).
  • Combine vinegar, maple syrup, and brown sugar in a bowl. Set aside.
  • Slice Canadian bacon about ½-inch thick. Arrange the slices in a casserole or baking dish, and spoon the syrup mixture over the slices.
  • Bake for 30 minutes. Serve hot or at room temperature. (To serve as a snack, cut slices into bite-sized pieces and serve with toothpicks.).

Freshly ground pepper

Steps:

  • Adjust oven rack to middle position. Heat oven to 375°F. Line cookie sheet with sides with foil.
  • Place bacon on cookie sheet in single layer. Bake 10 minutes. Drain off fat.
  • Meanwhile, in 1-quart saucepan, heat syrup and jelly, stirring occasionally, until jelly melts and syrup is warm. Remove from heat.
  • Use pastry brush to brush about half the syrup mixture on bacon (you don't have to use it all, just enough to moisten bacon), then sprinkle with pepper. Bake 15 minutes.
  • Flip bacon, brush with remaining syrup mixture and sprinkle with pepper. Bake 20 minutes longer or until bacon is glazed and done. Serve warm.

One of the things that made this meal so memorable was the praline bacon that I had, so I took it upon myself to recreate it. The only difference is that I like mine better.

1 pound bacon
½ cup chopped pecans
3 tablespoons maple syrup
3 tablespoons butter
½ cup packed brown sugar
2 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (135 degrees C). Line a baking sheet with parchment paper.
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
  • Spread the pecans onto an unlined baking sheet, and toast 7 to 10 minutes in the preheated oven, until golden brown and aromatic. Watch the nuts carefully as they bake, because they burn quickly. Set aside to cool.
  • Stir the maple syrup, butter, brown sugar, and white sugar together in a large skillet over medium-high heat and cook, stirring constantly, until the hot candy resembles foamy caramel and a candy thermometer reads 270 degrees F (130 degrees C) (soft crack stage). Quickly stir in the pecans.
  • Toss the bacon in the candy mixture to coat each strip, and remove with tongs to cool and harden on the prepared baking sheet. Last but not least... eat up!
