My friend & I went to this one restaurant, Haywood Smokehouse in Dillsboro, NC, & we both had their Campfire Potatoes. They were soooo good! She asked me if I could either find a recipe or create one. I couldn't find a recipe close to it, so I created it. I hope you enjoy!

Number Of Ingredients 11

1 lg bag(s) tater tots, frozen (thawed)
1 large onion, diced
1/4 of a - green pepper, diced into small pieces
1/4 of a - red pepper, diced into small pieces
6 clove(s) garlic, minced
1 1/2 stick(s) butter
8 slice(s) bacon, cooked crisp & crumbled
3/4 cup(s) cheddar cheese, shredded
1/2 cup(s) parsley, minced
2 tablespoon(s) worcestershire sauce
- salt & pepper, to taste

Steps:

  • Make tater tots according to directions on package (they should be crunchy). Cool slightly.
  • In a large bowl, combine tots, onion, peppers & garlic; mix well.
  • Add mixture to a aluminum pan & pour butter over.
  • In another bowl, combine bacon, cheese, parsley, Worcestershire, salt & pepper; mix well, then sprinkle over mixture.
  • Cover aluminum pan with aluminum foil.
  • Grill, covered, over medium heat for 35 - 40 minutes or until tot's are golden brown; stirring occasionally.

My family enjoys camping and cooking over a fire. These hearty foil-packet potatoes turn out beautifully over a campfire, on the grill or in the oven at home. We sometimes leave out the sausage and serve the potatoes as a side dish. Either way, it's so easy, and the spuds can be served right from the foil pouch for easy cleanup. 3 pounds red potatoes, cut into 1/2-inch cubes
2 packages (12 ounces each) smoked sausage links, cut into 1/2-inch slices
4 bacon strips, cooked and crumbled
1 medium onion, chopped
2 tablespoons chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon pepper
Additional chopped fresh parsley, optional

Steps:

  • Prepare campfire or grill for medium heat. In a large bowl, toss potatoes with sausage, bacon, onion, parsley, salts and pepper. , Divide mixture among eight 18x12-in. pieces of heavy-duty nonstick foil, placing food on dull side of foil. Fold foil around potato mixture, sealing tightly. , Place packets over campfire or grill; cook 15 minutes on each side or until potatoes are tender. Open packets carefully to allow steam to escape. If desired, sprinkle with additional parsley.

DUTCH OVEN MOUNTAIN MAN BREAKFAST

Our kids request this meal every time we go camping, and seeing as we have about 15 laying chickens, it's a great way to use up eggs! Please note, this makes a LOT! You may want to consider sharing it with your camping friends or, if you're like our family and enjoy leftovers, just save the leftovers for the day you're leaving the campground and need a quick breakfast without a lot of mess and fuss. You can easily re-heat it in a microwave or in a skillet over low heat. Feel free to add more spices and personalize this recipe to suite your taste buds!

1 pound mild pork sausage (such as Jimmy Dean®)
1 onion, chopped
1 clove garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 (2 pound) package frozen shredded hash brown potatoes
12 eggs, beaten
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Build a campfire and allow the fire to burn until it has accumulated a bed of coals.
  • Cook and stir the sausage, onion, and garlic in a 12-inch cast iron Dutch oven with lid, raised over the coals to medium-high heat, until the sausage is no longer pink and the onion is tender. Stir in the red bell pepper, green bell pepper, and hash brown potatoes until evenly mixed. Cook, stirring occasionally, until the hash browns are hot and the peppers are tender, about 15 minutes.
  • Pour the beaten eggs evenly over the top of the potatoes, allowing them to sink into the potatoes. Cover the Dutch oven, and place 6 to 9 coals underneath, and 12 to 18 on top. Allow to bake until the eggs are firm, about 40 minutes. Sprinkle with Cheddar cheese, cover, and continue cooking until the cheese has melted, about 5 minutes.

¼ cup butter, softened

Steps:

  • Poke each potato several times all over with a fork. Smear each potato with 1 tablespoon of butter, then double wrap in aluminum foil. Bury the potatoes in the hot coals. Allow to cook for 30 to 60 minutes until soft.

5 medium potatoes, peeled and thinly sliced
1 medium onion, sliced
6 tablespoons butter
1/3 cup shredded cheddar cheese
2 tablespoons minced fresh parsley
1 tablespoon Worcestershire sauce
Salt and pepper to taste
1/3 cup chicken broth

Steps:

  • Place the potatoes and onion on a large piece of heavy-duty foil (about 20 in. x 20 in.); dot with butter. Combine the cheese, parsley, Worcestershire sauce, salt and pepper; sprinkle over potatoes. , Fold foil up around potatoes and add broth. Seal the edges of foil well. Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender.
