EASY BANANA FRITTERS
I was craving apple fritters but wasn't able to get to the donut shop. So I looked around to find on hand ingredients to satisfy my craving. I didn't have apples, but I had some very nice ripe bananas. That's when I came up with these. You won't be disappointed!

Steps:
- In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
- Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.

Steps:
- Beat the egg in a small bowl and add the cornstarch, flour and 5 tablespoons water to make the flour batter.
- Cut each banana into 5 diagonal pieces.
- Sprinkle with flour and coat with flour batter.
- Deep fry in hot oil for 1 minute; remove from oil.
- Drain oil from pan.
- Heat (low heat) 1 tablespoons of new oil in a frying pan and add sugar and 2 tablespoons cold water. Stir often until this becomes a syrup consistency and then turn off the heat.
- Add the bananas and mix to coat carefully.
- Sprinkle with sesame seeds just before serving.
- Serve immediately.

- In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
- Heat the oil in a large skillet to 365 degrees F (180 degrees C).
- Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

- In a bowl, beat eggs, milk and oil. Combine flour, baking powder and salt; stir into egg mixture until smooth. Cut bananas into quarters (about 2 in. long). Dip each banana piece into batter to coat. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry banana pieces, two to three at a time, until golden brown. , Drain on paper towels. Dust with confectioners' sugar if desired.

- Mix together the sugar and water. Set aside. Beat the egg in a bowl. Add the cornstarch, flour, and water, and blend well.Cut a banana on the diagonal into 5 pieces. Sprinkle some added flour onto it and coat the pieces in the flour batter using your fingers. Repeat for each banana. Heat deep fryer and add oil for deep-frying. When oil is hot, drop the bananas into the hot oil and add a few pieces at a time, turning them once, until they are golden brown. Remove and drain on paper towels. Heat frying pan and add 1 tablespoon of oil. Give the sugar and water mixture a quick re-stir and add to the frying pan. Stir the mixture on low heat until the sugar dissolves and turns into a syrup. Turn off the heat and add the bananas. Mix carefully and serve immediately. Sprinkle sesame seeds over the bananas just before serving.

- Peel the bananas and place in a large bowl. Mash with a wooden spoon or potato masher to form a paste (it will have lumps in it and that's okay).
- Add the rest of the ingredients into the bowl except the oil for frying. Mix until just combine to form a batter. The batter will be light and drippy.
- Place oil in a pan up to 3 inches then heat up on high heat to 365 degrees Fahrenheit. Reduce the heat to medium (this is important because very hot oil will result in the fritters burning on the outside without cooking through. Place tablespoonfuls of the batter into the pan (if you have a small cookie scoop, use it to drop the batter into the oil). Do not overcrowd the pan. Let the fritters cook until golden. Flip to the other side and let them cook until golden too. Remove and place on paper towel to absorb excess oil. Repeat process with the rest of the batter.
