Canelés de Bordeaux, also know as cannelé Bordelais, are magical French bakery confections, little fluted cakes with a rich rum and vanilla interior enclosed by a thin caramelised shell. This brilliant recipe was developed a long ago by an anonymous Bordeaux cook, whose innovation has been subjected to 300 years of refinements. Glossy and dark brown almost black at first sight, bittersweet at first bite, the crunchy burnt sugar canelé-shell makes an exquisite contrast to the smooth, sweet filling, fragrant with vanilla and rum. These little cakes have recently gained cachet after years of neglect, to the extent that they may one day rival the popularity of crème brûlée in the category of caramelized French desserts. Baked in special tin-lined copper moulds, these delicious dessert cakes are often served with Cognac and Wine if you partake of a local degustation! The copper moulds are quite hard to find even in France - if you cannot find them, then these cakes can be made in individiual dariol moulds, small pudding basins, or the silcon moulds which are quite easy to find. This recipe makes 12 to 16 canelés, depending on the size of your moulds. Traditionally beeswax is used to line the moulds, I have dispensed with this and have suggested a sprinkling of sugar inside the well buttered moulds.

1/2 liter milk
2 whole eggs, plus
2 egg yolks, beaten
1/2 vanilla beans or 1/2 teaspoon vanilla extract
3 -4 tablespoons rum
1 cup plain flour
1 cup light brown sugar
2 tablespoons butter
butter, for greasing
sugar, for sprinkling

Steps:

  • The day before: boil the milk with the vanilla and butter.
  • Take off the heat, allow to cool VERY slightly.
  • Mix the flour and sugar together, then add the eggs and egg yolks, pour this mixture in the hot milk.
  • Gently mix in order to obtain a fluid and smooth mixture, like a pancake batter, let it cool, then add the rum.
  • Place it in the refrigerator for 24 hours to 48 hours maximum.
  • When you are ready to bake the caneles: preheat the oven to 250C/495°F.
  • Butter the moulds liberally and then sprinkle some sugar in to the moulds.
  • Pour the batter in to the buttered and sugared caneles moulds, they should be 3/4 full - NO more.
  • Place the moulds on a baking sheet, and cook on high for 5 minutes, then lower the temperature to 175C/350F and continue cooking for 1 hour at least. (It depends on your oven, it can take up to 1 and a quarter hours!) The tops will have a brown crust when they are ready, and they should still be moist inside.
  • Carefully unmould them whilst they are still hot. Allow them to cool.
  • Serve with tea or coffee for breakfast, or with a glass of wine or cognac in the late afternoon or evening.

2 cups Milk
1.25 cups Granulated Sugar
2 Whole Eggs
1 cup Flour
7 tablespoons Butter
2 Egg Yolks
1 teaspoon Rum

Steps:

  • 01 - Combine Milk, Vanilla and Butter and boil in a small pan. 02 - In the meantime, in a bowl, mix the Flour and Sugar. 03 - Add the Eggs to the Flour/Sugar mixture. Mix well till everything is well combine. 04 - Now, combine the bowl and the boiling Milk. Make sure to remove all the lumps. Stir slowly to obtain liquid Pastry Mixture or until it will have the same texture as pancakes. 05 - Let the Batter cool down and then add the Rum and mix. 06 - Cover with clean film and leave in the refrigerator for one hour or even all night. The more it rests the better. 07 - Preheat the oven to 270C / 520F with the tray you will bake the Caneles inside the oven. 08 - Pour in the Batter in the buttered moulds filling them only half full. 09 - After putting them in the oven for only 5 minutes, lower the temperature to 180C / 350F and continue to cook them for about an hour. 10 - The cakes are meant to be quite dark on the outside and soft inside. Unmold the cakes while they are still hot and let them cool before serving.

These extraordinary little confections are a specialty of Bordeaux, where nuns were said to have created them more than 200 years ago using the flour they salvaged from the holds of sailing ships anchored in the Port de la Lune. I like to call them "portable creme brulee" because they contrast a crunchy caramelized exterior with a moist, custardy center. This recipe is a bit particular. You really need authentic copper cannele molds and you really do need to coat them with beeswax (which you can find at some health food store and farmers' markets). The wax makes the unmolding easier, and - most important - gives the canneles their distinctive, crunchy crust. Make sure you let the batter rest for the full 12 hours. The best way to eat these is with a cup of strong coffee. You can also serve them as a dessert, cut in half and drizzled with caramel sauce.

3 cups milk
1/2 vanilla bean, split lengthwise and scraped
7 1/2 ounces (3 tablespoons plus 3/4 cup) unsalted butter
1 cup sugar
2/3 cup pastry flour
1 extra-large egg yolk
2 extra-large eggs
3 tablespoons dark rum
3 ounces beeswax, finely chopped (about 1/3 cup)

Steps:

  • In a small saucepan, combine the milk, vanilla bean, and its scrapings. Bring the milk to the scalding point over medium high heat, then remove the pan from the heat and add the 3 tablespoons of butter. Set aside to cool to lukewarm.
  • In a large bowl, whisk together the sugar and flour. In a separate small bowl, whisk together the egg yolk, eggs and rum. Whisk the egg mixture into the sugar and flour mixture, then whisk in the lukewarm milk mixture. Strain into a container; cover and refrigerate for at least 12 hours.
  • To prepare molds for baking, melt the beeswax in a saucepan over low heat. Add the remaining 3/4 cup butter to the melted wax and stir until the butter is melted. Remove the mixture from the heat and, using a narrow pastry brush, carefully coat the inside of 18 (2 by 1-inch) canneles molds. (Dedicate this brush to canneles making because the wax will get into the brush.) If the wax mixture starts to set up or thicken, return it to the heat for a moment until it thins.
  • Remove the batter from the refrigerator for at least 1 hour before baking it.
  • Preheat the oven to 425 degrees F.
  • Place the waxed canneles molds on a heavy baking sheet with a rim to prevent any wax and butter that melts from the molds from dripping onto the bottom of your oven and creating a fire hazard. Fill the molds 3/4 full with the batter, whisking the batter frequently and well to ensure that the sugar and flour remain evenly distributed.
  • Bake for about 50 minutes, or until the surface of the canneles is dark brown. Remove from the oven, being very careful not to spill any of the hot wax on yourself. (It is wise to keep children and pets out of the kitchen during this part of the process.) Using tongs or an old towel, pick up each mold and tap it upside down to remove the canneles. If it doesn't come out after a few taps, using a paring knife to loosen it from the sides. And...viola! Serve warm from the oven.

These crispy French custard cakes are traditionally baked in special fluted molds, but the molds were no longer available in my local shop. So I improvised with muffin tins and the results were pretty amazing. Just be sure you bake them long enough to achieve the classic crispy exterior.

1 cup all-purpose flour
1 cup white sugar
4 egg yolks
¼ cup rum
1 teaspoon vanilla extract
¼ teaspoon kosher salt
2 cups whole milk
2 tablespoons unsalted butter

2 tablespoons butter
2 tablespoons beeswax

Steps:

  • Place flour, sugar, egg yolks, rum, vanilla extract, and salt in a mixing bowl. Mix and smear into a smooth paste using a spatula. Continue mixing until flour is fully incorporated.
  • Place butter and pour milk into a saucepan. Bring to a simmer over medium-high heat. As soon as milk mixture comes to a simmer, remove from heat. Slowly add half the milk to the flour mixture to prevent the egg yolks from cooking. Whisk until well blended and smooth. Slowly pour in the rest of the milk mixture; whisk until batter is smooth. Batter will be thin.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Melt 2 tablespoons plus 1 teaspoon butter and beeswax in a skillet over medium heat. Stir with a pastry brush. Remove from heat. Brush the bottom and the sides of each muffin cup generously with the butter/beeswax mixture.
  • Ladle batter into muffin cups until mixture is almost to the top. Place pan in preheated oven. Bake 10 minutes.
  • Reduce heat to 375 degrees F (190 degrees C). Bake until canelés are very well browned, about 50 minutes.
  • Allow to cool just 5 minutes. Run a thin blade around the sides and carefully remove canelés from cups. Invert onto a cooling rack. Let cool completely to room temperature to create the crispy surface.

*I generally list recipes in cups and tablespoons, but the ingredients in this recipe are mostly listed by weight for more precise measuring since this is such a technical dessert to make.

FOR THE CANELE BATTER:
500 ml Whole Milk, cold
2 Vanilla Beans (Madagascan, if you can get them)
250 grams Raw Cane Sugar (do not use a coarse grained sugar)
100 grams All-purpose Flour
50 grams Butter, melted
2 large Eggs
2 Egg Yolks
¼ cup Rum
TO COAT THE MOLDS:
40 grams Beeswax
60 grams Butter

Steps:

  • FOR THE CANELE BATTER:
  • Pour the milk into a saucepan. Slit the vanilla beans in half lengthwise and scrape out the seeds. Add the seeds and the cut vanilla beans to the milk. Place the saucepan over medium heat and bring to a simmer. Remove from heat and let sit for a few minutes.
  • In a mixing bowl, add the sugar, eggs, and egg yolks and whisk together. Add the melted butter and whisk until well combined.
  • Remove the vanilla beans from the milk. Add ¼ cup of the milk mixture (milk should still be hot - this step tempers the eggs and creates the correct consistency of custard) to the egg mixture and whisk together. Add the flour to the mixture and whisk in until smooth and lump free. Slowly whisk in the remaining milk. Whisk in the rum. The batter should be smooth and quite runny.
  • Cover the canele batter and refrigerate for a MINIMUM for 24 hours. The batter needs to sit to develop the proper depth of flavor and correct texture. A 48 hour rest time is recommended. I have baked caneles after a 24 hour, 36 hour, 48 hour, and 60 hour rest and I personally prefered the caneles whos batter had sat for 36 hours. Test yours out, if you like, to find out what you like best. The batter can sit in the fridge for up to 4 days.
  • TO COAT THE MOLDS:
  • Coat molds just before baking.
  • Melt the beeswax and butter together, stirring to combine.
  • Heat the molds in the oven for a few minutes as it's preheating. When they are super hot, take a few out at a time and (wearing oven mits) fill one mold up to the top with the melted beeswax mixture. Then pour that mold into another hot empty mold, moving to the next and next, until all molds are coated. The hot molds will make sure that only a thin coating of mixture sticks to the surface. If you pour the mixture into cool molds, the beeswax will quickly begin to firm up, leaving a thick coating, which you don't want.
  • TO BAKE THE CANELES:
  • Preheat the oven to 550 degrees. Line a baking sheet with parchment paper (the beeswax coating can run down the sides of the molds while baking and can be difficult to remove from a bare sheet surface). Coat molds as instruced in above. Place the coated molds on the lined baking sheet.
  • Remove the canele batter from the fridge. Whisk the batter well for 2 minutes.
  • Fill the prepared molds with batter to 1 cm from the top of the mold.
  • Place the caneles in the preheated oven and bake for precisely 10 minutes. At 10 minutes, reduce the oven temperature to 375 degrees and continue to bake the caneles for another 45-50 minutes. *see notes above the recipe for details regarding baking times as it can vary from oven to oven.
  • Remove caneles from the oven. Working quickly, invert the caneles onto a cooling rack and remove the molds. As long as you do this as soon as they come out of the oven (and assuming the molds have been properlly coated), the caneles should simply slip right out of the molds.
  • Let cool. Caneles are best eaten on the same day they are made, and at room temperature. Since caneles are so time consuming and technical to prepare, I like to make a large batch and freeze a few dozen canele as soon as they have cooled down. They thaw quickly and make a really lovely treat when you need something special( or if you just want something spectacular, just because. That's usually my excuse).

470ml full-fat milk
50g good-quality French unsalted butter
½ vanilla pod , split lengthways and seeds scraped out
230g granulated sugar
1 medium egg and 2 medium egg yolks, beaten
50ml dark rum
120g plain flour
beeswax (available from amazon.co.uk), melted, to grease the moulds (if they are copper)

Steps:

  • Make the batter a day in advance. Put 160ml milk, the butter, the vanilla pod and seeds, and 20g sugar in a medium saucepan and bring to a simmer over a medium heat. Remove from the heat and let cool to about 38C or until lukewarm to the touch - too cool and the butter will congeal, too hot and the eggs will start to cook.
  • Whisk in the egg mixture until incorporated, then mix in the rum and the rest of the milk.
  • Mix the flour, remaining sugar and 1/2 tsp salt together in a bowl. Whisk in the liquid in thirds, scraping down the sides and bottom of the bowl between additions. Avoid over-whisking: too many air bubbles will result in dry canelés. The batter should have the same consistency as double cream.
  • Strain the batter through a sieve into an airtight container. Press clingfilm directly onto the surface of the batter to prevent a skin from forming. Close the lid tightly and chill in the fridge overnight to rest the batter.
  • Heat oven to 230C/210C fan/gas 8. Warm eight (or 16 if you have them) 5cm canelé moulds on the middle shelf in the oven for 5-10 mins. This helps to give the canelés a crunchy, caramelised exterior.
  • Brush the moulds with a thin layer of melted beeswax (too much will cause the mixture to spill out during baking). Wring the clingfilm of any mixture that sticks to it, then gently mix to recombine ingredients that may have settled overnight. Do not overmix, or you risk incorporating too much air. The more uniform the batter, the better the final product.
  • Fill each mould with batter. Be sure to leave 0.5cm at the top - when the canelé bakes, it will rise slightly and then sink, so it is important to account for this.
  • Put the moulds on a baking tray and bake on the middle shelf for 10-15 mins. Rotate the tray by 180 degrees, reduce oven temperature to 180C/160C fan/ gas 4 and bake for 30-35 mins. (Baking time can vary depending on your oven.) Keep an eye on the canelés' colour during the final mins to avoid over- or under-baking. The bottom should be a deep maple syrup colour.
  • Remove the canelés from the oven, let sit for 10 mins, then turn the moulds upside down and gently tap the base until the canelé drops out. Cool completely before serving.

2 cups (50 cl) whole milk
1 vanilla pod, seeds + pod
3 Tablespoons rum
2 Tablesoons (25g) unsalted butter
2 large eggs + 2 yolks
1 cup + 1 Tablespoon (130g) all-purpose flour
1 1/4 cups (250g) sugar
1 Tablespoon butter, melted (for coating the molds)

Steps:

  • In a medium saucepan, bring milk, vanilla pod and seeds, rum and butter to a boil.
  • Meanwhile, whisk the eggs (2 plain + 2 yolks). Pour in the flour, sugar, and stir well with a rubber spatula until well combined.
  • Remove the vanilla pod from the milk, then pour the milk, little at a time, to the egg mixture, stirring well between each increment. In the end, you must have a liquid batter looking like a crepes batter.
  • Cover and let sit in the refrigerator for 24 hours or at least overnight.
  • Preheat the oven to 480°F (250°C) and grease the canelé molds generously with melted butter.
  • Remove the batter from the refrigerator and fill in the canelés forms up to 3/4. Bake for 10 minutes at 480 F (250°C) and 50 minutes at 350 F (180°C).
  • Unmold the canelés and let cool completely.

40 cl (~ 1.75 cup) of milk
2 eggs
2 egg yolks
1/2 vanilla bean
1.5 tablespoon of rum
75 g (~ 2/3 cup) all-purpose flour
180 g (~ 1 cup) sugar
40 g (3 tablespoons) of butter

Steps:

  • Instructions 1. Generously spread butter into the cannelé mold and place in the refrigerator until ready to fill. 2. Boil the milk on the stove top with the vanilla bean and the butter (split open the vanilla bean, scrape the insides into the milk). While the milk is boiling, mix the flour and sugar together in a bowl. Then add two whole eggs and another two egg yolks. Add a pinch of salt and mix vigorously. Add the boiled milk mixture and mix everything until the batter is liquid-like and smooth. 3. Set aside to cool down for about 5 minutes. When it is cool, add the rum and mix well. Place into the refrigerator for 1 hour. 4. Preheat the oven to 460 degrees with a baking sheet inside. Place the batter into the mold, filling each one around 2/3 full. Put the mold into the oven onto the baking sheet and bake for 12 minutes. After 12 minutes, lower the temperature to 350 degrees and bake for an hour.

500 g sugar
2 whole Vanilla beans
50 g unsalted butter
2 eggs
6 egg yolks
250 g flour
15 cl rum

Steps:

  • In a saucepan, bring the milk to a boil with half of the sugar and the split and scraped vanilla bean.
  • Turn off the heat and add the butter.
  • In a mixing bowl, gently whisk together the eggs, egg yolks and remaining sugar. Add the flour and stir to combine.
  • Pour in the boiled milk/ sugar/ butter mixture.
  • Add the Rum then strain through a fine mesh sieve and refrigerate for at least 24 hours.
  • Brush the canelé molds with butter or a mix of butter and (edible) beeswax. And fill each mold 3/4 of the way up.
  • Bake for 40 to 45 minutes in a relatively hot oven (180°), on a baking tray placed in the lower part of the oven.
  • Unmolded the canelés when there are still hot.

  • Pierre Hermé recommends that before you use your copper canele molds for the first time, clean them, and then season them by coating them with butter and placing them for 20 minutes in a hot oven - 250° C (500° F) or more. Remove them from the oven, clean them with a paper towel while they’re still hot, and allow them to cool before using. Never wash the molds, simply wipe with a dry cloth or a paper towel after each use.
  • Slit the vanilla beans lengthwise, and scrape the seeds from them with a small knife. Put the seeds, vanilla pods, and milk in a saucepan and bring them to a gentle simmer, and then turn off the heat and let sit for two minutes.
  • In a separate bowl, whisk sugar, eggs and egg yolks. Add melted butter and whisk more until combined.
  • Remove the pods from the milk. Add 1/4 of the hot milk into egg mixture and mix well. Add flour and continue mixing until combined. Then slowly add the remaining milk while continuing to mix until all ingredients are mixed well. Add rum and mix. This way you will avoid lumps and will end up with the perfect consistency of the batter. (Note: this step is very important. Adding hot milk to egg mixture will temper the eggs and create custard which will ensure perfect consistency of your caneles).

  • In a large bowl, whisk together the sugar and flour. In a separate small bowl, whisk together the egg yolk, eggs and rum. Whisk the egg mixture into the sugar and flour mixture, then whisk in the lukewarm milk mixture. Strain into a container; cover and refrigerate for at least 12 hours and up to 48 hours, the flavors will develop as the mixture sits.
  • If using copper molds, melt the beeswax in a saucepan over low heat. Add the remaining 3/4 cup butter to the melted wax and stir until the butter is melted. Remove the mixture from the heat and, using a narrow pastry brush, carefully coat the inside of 18 (2 by 1-inch) canneles molds. (Dedicate this brush to canneles making because the wax will get into the brush.) If the wax mixture starts to set up or thicken, return it to the heat for a moment until it thins.
  • If using silicone molds, there is no need to coat them. However, they should be placed in the freezer for at least 30 minutes prior to using, in order to help develop a nice crust.
