ORANGE CRANBERRY BUNDT CAKE
Orange Cranberry Bundt Cake - super moist orange cake dotted with cranberries, topped with cream cheese frosting and sparkling cranberries is perfect dessert for the holidays.

Steps:
- Preheat the oven to 350 F and place the rack in the lower third.
- To make the cake, first sift together the flour, corn starch, baking powder, baking soda, and salt, then set aside.
- In a large mixing bowl cream softened butter for 1 minute, then add sugar and cream together for another 4-5 minutes.
- Next, add eggs and vanilla and mix to combine. Add orange zest and juice and mix to combine.
- First, add half of flour mixture and mix to combine. Add sour cream and mix well. Finally, mix in remaining flour mixture.
- Using a rubber spatula, fold in cranberries.
- Generously grease 9-inch (10-12 cups volume) fluted bundt pan with BAKING spray and set aside. (read the instructions in the post How to Prevent Bundt Cakes from Sticking to The Pan)
- Spread the batter in prepared pan. Make a few wobbles to distribute the batter evenly.
- Bake 45-60 minutes, or until the toothpick inserted in the cake comes out clean with a few moist crumbs attached. Baking time might vary depending on the type of pan you use.
- Cool the cake for 10 minutes in the pan, then invert on a rack to cool completely.

- Heat oven to 180C/160C fan/gas 4. Rub a little butter over the base and sides of two 20cm cake tins (use cake tins rather than sandwich tins as the higher sides work better), then line the base and sides with baking parchment. Melt 150g butter with 100g of the chocolate in a bowl set over a small saucepan of gently simmering water - make sure the base of the bowl doesn't touch the water. Stir the butter and chocolate every min or so until it has melted. Set aside to cool a little.
- Meanwhile, measure 250g flour, 2 tsp baking powder, ½ tsp bicarb and 250g sugar in a large bowl. Make a well in the middle and add 150g yogurt, 2 tsp vanilla extract, half the orange zest and juice, 3 eggs and 2 tbsp milk. Whisk everything together, then stir in the melted butter and chocolate.
- When the cake mixture is smooth (this makes a very wet pourable batter), divide it equally between the two cake tins. Bake on the middle shelf for 25-30 mins, they will look golden and evenly risen when cooked. Check they are done by pushing a skewer into the centre of the cakes - it should come out clean. If there is any wet cake mixture on the skewer, return the cake to the oven for a few more mins, then check again.
- Leave the cakes to cool in their tins for 5 mins, then transfer to a cooling rack. Wash out the tins and repeat steps 1 and 2, to make two more sponges in total. You can make them a day or two before icing, then wrap them in a double layer of cling film once cool. They can also be frozen for up to two months.
- To make the compote, simmer the cranberries and sugar in a small pan for 4-5 mins until jammy, then leave to cool.
- For the icing, melt the chocolate, either in 20-30 secs bursts in a microwave or in a bowl over simmering water. Set aside to cool a little. Roughly mash the butter and icing sugar together, then beat until smooth with an electric whisk or mixer. Add the chocolate and cream cheese and beat again until smooth.
- To assemble the cake, place one sponge on a cake board the same size as the sponge, then sandwich the other sponges on top with a little icing and the cranberry compote. Use the cake with the neatest edge, flipped upside down, on top to give your cake a good shape.
- Pile about half the remaining icing on top of the cake and use a palette knife to spread it thinly over the top and down the sides of the cake. This is a crumb coat, it catches any crumbs, ensuring the final layer looks clean and professional. Chill the cake for 10-20 mins to firm up the icing or leave it somewhere cool for longer. Spread the remaining icing over the top and sides of the cakes, giving it nice sharp edges. We've left some of the cake exposed for the 'naked' cake look, or cover it completely if you like. Will keep for three days.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch fluted tube pan (such as Bundt®) with baking spray.
- Combine flour, sugar, oil, eggs, orange juice, baking powder, vanilla extract, and salt in a bowl using an electric mixer until thoroughly incorporated. Stir in cranberries and orange zest. Pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

- Preheat oven to 350°F Grease bottom only of 13x9 baking pan.
- Prepare cake mix with water, eggs and oil according to package directions.
- Add half cranberry sauce, mix, until well blended.
- Pour into prepared pan.
- Bake about 30 minutes or until a toothpick inserted in center comes out clean. Cool completely on wire rack.
- Meanwhile, place whipped topping in a medium sized bowl. Sift cocoa over whipped topping, fold mixture until well blended.
- When cake has cooled, place remaining cranberry sauce in small microwaveable bowl, microwave on high 15 seconds or until softened. Spoon over cake, spread evenly. Top with whipped topping mix.
- Sprinkle with almond pieces, just before serving.
- TIP: Use a large container of whipped topping, and also toast the almonds in a 350F oven on a cookie sheet until slightly browned, this brings out the flavor.

- Preheat oven to 350°F. Butter and flour two 9-inch-diameter cake pans with 2-inch-high sides. Sift flour, baking powder and salt into medium bowl. Using electric mixer, beat butter in large bowl until creamy. Gradually add sugar; beat until light and fluffy, occasionally scraping down sides of bowl. Add egg yolks 1 at a time, beating well after each addition. Beat in orange peel, vanilla extract and orange extract. Whisk milk and yogurt in small bowl to blend. Add dry ingredients to yolk mixture in 3 additions alternately with milk mixture in 2 additions, beating well after each addition.
- Using clean dry beaters, beat egg whites in another large bowl until stiff but not dry. Fold 1/3 of whites into batter, then fold in remaining whites. Divide batter between pans. Smooth tops.
- Bake cakes until tester inserted into center comes out clean, about 35 minutes. Cool cakes in pans on rack 15 minutes. Run small knife around sides of pans to loosen cakes. Turn cakes out onto racks and cool completely. (Can be made 1 day ahead. Wrap in plastic and store at room temperature.)
- Place 1 cake layer, flat side up, on platter. Spread top of cake with 3/4 cup Creamy Brown Sugar Frosting. Spread 1 cup Cranberry Glaze over frosting, leaving 1/2-inch border all around cake. Top with second cake layer, flat side down; press slightly to adhere. Spread 2 cups frosting over sides of cake. Spoon remaining frosting into pastry bag fitted with medium-size star tip. Pipe decorative border around top edge of cake. Refrigerate until frosting is firm, about 1 hour. Spread remaining Cranberry Glaze over top center of cake. Chill until glaze is set. (Can be made 1 day ahead. Cover with cake dome and refrigerate.)

- Combine cranberries and sugar.
- Set aside.
- Combine flour, sugar, baking powder, baking soda and salt in mixing bowl.
- Stir well to blend.
- Beat eggs, orange juice, oil and orange rind together.
- Add dry ingredients, stirring just until moistened.
- Fold in cranberry mixture, chocolate chips and nuts.
- Divide batter into 8 well greased 10 oz cans.
- Bake at 350 degrees for 35 to 40 minutes, or until cake tester inserted in centre comes out clean Cool 10 minutes, then run thin bladed knife around sides of tin to loosen.

- Wrap and store overnight before slicing or freeze for later use.
- When ready to give as gifts, decorate can with tinfoil and christmas stickers, return cake to can, seal ends of can with tinfoil, tie with ribbons OR wrap cake in colourful saran wrap, decorate with ribbons and bows.
