vegetable oil (for frying)
2 cups self-rising white cornmeal mix
1 cup yellow cornmeal
1 1/2 cups buttermilk
2 teaspoons sugar
1 1/2 teaspoons white onion (chopped)
1/4 teaspoon salt

Steps:

  • Pour enough oil into a deep fryer or heavy bottomed pot so the depth is 3 to 4 inches.
  • Heat the oil to 350 degrees.
  • In a medium bowl, stir together the white cornmeal mix, yellow cornmeal, buttermilk, sugar, diced onion, and salt.
  • Use a 1-ounce cookie scoop to drop portions of the batter into the hot oil. Fry only a few at a time for best results. If you add too many at once, the oil temperature may drop, and they make not cook well.
  • Fry the hush puppies for 1 to 2 minutes, until browned.
  • Transfer the fried hush puppies to a wire rack to drain.

1 quart vegetable oil for frying, or as needed
½ cup all-purpose flour
½ cup self-rising cornmeal
½ onion, minced
½ cup milk
1 egg, beaten
1 stalk celery, minced
2 cloves garlic, minced
1 pinch Cajun seasoning, or to taste

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Mix flour, cornmeal, onion, milk, egg, celery, garlic, and Cajun seasoning in a bowl.
  • Drop ping pong ball-sized balls of batter, about 5 at a time, into the hot oil. Fry until golden brown, about 5 minutes. Remove hush puppies with a slotted spoon and drain on a paper towel-lined plate. Repeat with remaining batter.

1 cup yellow cornmeal
1/4 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, room temperature, lightly beaten
3/4 cup 2% milk
1 small onion, finely chopped
Oil for deep-fat frying

Steps:

  • In a large bowl, combine the cornmeal, flour, baking powder and salt. Whisk the egg, milk and onion; add to dry ingredients just until combined. , In a cast-iron Dutch oven or an electric skillet, heat oil to 365°. Drop batter by tablespoonfuls into oil. Fry until golden brown, 2 to 2-1/2 minutes. Drain on paper towels. Serve warm.

2 tablespoon sugar
2 cups self-rising white cornmeal mix
1 cup yellow cornmeal
1 1/2 cups buttermilk
1 1/2 tablespoon white onion chopped
1/4 tablespoon salt
Vegetable for frying

Steps:

  • Take hold of a deep fryer and pour enough oil into it. You can use a deep pan and heat oil in it as well.
  • Grab a medium-sized bowl and mix the yellow cornmeal with the white cornmeal. Also, pour the buttermilk into it and mix in sugar. Add chopped onion along with salt.
  • Another utensil that you will need in this recipe is a cookie scoop. Take the cookie scoop and use it to take balls of the batter and drop them in the heated oil.
  • Fry for a few minutes after baking. Do not add too many of them to the oil at the same time they may not cook properly as the temperature of the oil will be dropped.
  • Fry until golden browned, drain on the rack, and Serve with your favorite sides.
