1/2 cup butter
1 1/2 cups packed brown sugar
1 large egg
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 cup apple (peeled and grated)
1 cup raisins or 1 cup dried cranberries
1 cup pecans
1/4 cup milk
icing
2 tablespoons butter
2 tablespoons brown sugar
3/4 cup powdered sugar
4 teaspoons milk

Steps:

  • Beat butter, sugar and egg well.
  • Add apple, milk, raisins and nuts.
  • Add all dry ingredients.
  • Drop onto greased sheets.
  • Bake 350° for 10 minutes or until done.
  • Cool and top with icing.
  • Icing: Melt butter and sugar in small pan.
  • Stir and bring to a boil over medium heat.
  • Simmer 2 minutes.
  • Remove heat add icing sugar and milk.

½ cup butter, softened
1 ¼ cups packed brown sugar
1 teaspoon baking soda
1 teaspoon apple pie spice
¼ teaspoon salt
1 egg
½ cup apple juice or milk
2 ¼ cups all-purpose flour
¼ cup whole wheat flour or all-purpose flour
1 large tart apple (such as Granny Smith), peeled, cored, and coarsely shredded (about 1 cup)
½ cup packed brown sugar
3 tablespoons butter
3 tablespoons apple juice
2 ⅔ cups powdered sugar
½ cup finely chopped pecans, toasted

Steps:

  • In a large mixing bowl beat 1/2 cup butter with an electric mixer on medium to high speed for 30 seconds. Add 1-1/4 cups brown sugar, baking soda, apple pie spice, and salt. Beat until well combined, scraping sides of bowl occasionally. Beat in egg until well combined. Add 1/2 cup apple juice; beat on low speed until combined (mixture will look curdled). Beat in as much of the flours as you can with the mixer; stir in any remaining flour. Fold in apple.
  • Drop dough by slightly rounded teaspoons 2 inches apart onto parchment paper-lined cookie sheets. Bake in 350 degree F oven about 10 minutes or until tops are lightly browned. Let stand 2 minutes on cookie sheets. Transfer cookies to wire racks to cool.
  • In a small saucepan heat and stir 1/2 cup brown sugar, 3 tablespoons butter, and 3 tablespoons apple juice over medium heat until sugar dissolves. Remove from heat. Whisk in powdered sugar. Spread frosting on cooled cookies and immediately sprinkle with pecans. If frosting begins to harden, stir in a small amount of apple juice to make spreading consistency. Makes about 3 dozen cookies.

2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 small Granny Smith apples, peeled and chopped
1 tablespoon lemon juice
½ cup unsalted butter, softened
1 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
½ cup (scant, remove 1 tablespoon) frozen apple juice concentrate, thawed but still cold
½ cup packed light brown sugar
¼ cup butter
2 ½ tablespoons apple juice concentrate
⅛ teaspoon salt
2 ½ cups powdered sugar
1 teaspoon water
½ cup finely chopped pecans

Steps:

  • For Cookies:
  • Preheat oven to 350 degrees F.
  • In a mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg for 20 seconds, set aside.
  • Place peeled and chopped apples in food processor. Pulse a few times to chop coarsely - creating very small chunks. In a small bowl, combine finely chopped apple (including juices from the apples) and lemon juice, set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment, blend together butter and brown sugar until creamy - scrape down sides of bowl and bottom of bowl, occasionally.
  • Mix in egg and vanilla extract. Add half of the flour mixture, and then (with mixer running on low speed), slowly add in apple juice concentrate, and remaining half of flour mixture. Add apple and lemon mixture.
  • Scoop dough with a tablespoon and drop onto parchment paper lined baking sheets - placing cookies 2-inches apart.
  • Bake in preheated oven 11-12 minutes. Cook on baking sheet before transferring to wire rack to completely cool.
  • In a small saucepan, combine brown sugar, butter, apple juice concentrate and salt. Heat mixture over medium heat and cook, whisking constantly until sugar has dissolved.
  • Remove from heat and whisk in powdered smooth. Spread over cookies, and immediately sprinkle with pecans as frosting sets quickly.

1/4 teaspoon salt
1 large egg, room temperature

1/2 cup miniature semisweet chocolate chips
48 round toothpicks
1 package (11 ounces) Kraft caramel bits
2 tablespoons water
1 cup finely chopped pecans, peanuts or M&M minis

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and salt until light and fluffy. Beat in egg and vanilla. Gradually add flour and mix well. Stir in chips., Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Bake until set, 10-12 minutes. Immediately insert a round toothpick in center of each cookie. Remove to wire racks to cool completely., In a small saucepan, combine caramels and water. Cook and stir over medium-low heat until smooth. Holding a cookie by the toothpick, dip cookie in caramel mixture, turning to coat. Allow excess to drip off. Immediately dip the bottom and sides in pecans., Place on waxed paper. Repeat with remaining cookies, caramel mixture and pecans. Let stand until set.

1 cup butter or margarine, softened
1-2/3 cups granulated sugar

2 env. (0.22 oz. each) KOOL-AID Green Apple Flavor Unsweetened Drink Mix
20 KRAFT Caramels
1/4 cup water
1-1/2 cups powdered sugar

Steps:

  • Heat oven to 325ºF.
  • Mix flour, baking powder and salt. Beat butter and granulated sugar in large bowl with mixer until light and fluffy. Add eggs; mix well. Gradually add flour mixture, mixing well after each addition. Add dry drink mixes; beat until blended.
  • Drop rounded tablespoonfuls of dough, 2 inches apart, onto baking sheets.
  • Bake 13 to 14 min. or until slightly puffed. Cool 1 min. Remove to wire racks; cool completely.
  • Microwave caramels and water in medium microwaveable bowl on HIGH 1 to 1-1/2 min. or until caramels are completely melted and mixture is well blended, stirring every 30 sec. Whisk in powdered sugar until blended. Spread onto cookies.

1 box Betty Crocker™ Super Moist™ spice cake mix
Water, vegetable oil and eggs called for on cake mix box
1 large Braeburn apple, peeled, chopped
1 cup chopped pecans, toasted*
1/2 cup packed brown sugar
1/4 cup butter
3 tablespoons milk
1 teaspoon vanilla
1 cup powdered sugar

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease 8- or 9-cup fluted tube cake pan with shortening; lightly flour.
  • Make cake mix as directed on box, using water, oil and eggs. Stir apple and 1/2 cup of the pecans into batter. Pour into pan.
  • Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour.
  • In 2-quart saucepan, mix brown sugar, butter and milk. Heat to boiling over medium heat, stirring constantly with whisk. Boil 1 minute. Remove from heat; stir in vanilla. Gradually stir in powdered sugar until smooth. Stir gently 2 to 3 minutes or until slightly thickened. Immediately spoon glaze over top of cake, allowing some to drizzle down side. Top with remaining 1/2 cup pecans.
