1 1/2 cups quick oats
1 1/2 cups all purpose flour
3/4 cup brown sugar
1/2 tsp salt
3/4 tsp baking soda
3/4 cup butter (melted)
30 KRAFT caramel squares
1 tbsp milk
2 cups tart baking apples (peeled and chopped )
1/2 cup chopped nuts (pecans or walnuts - optional)

Steps:

  • Preheat oven to 350 degrees.
  • Line a 9x13 baking pan with parchment or lightly spray with non-stick cooking spray.
  • Combine oat, flour, brown sugar, salt, and baking soda in a medium bowl.
  • Stir in butter until nice and crumbly.
  • Press a little more than half of the oat mixture into the bottom of the pan and bake for 8 minutes.
  • Meanwhile, melt caramels and milk together in a microwave-safe container on high in 30 second intervals, stirring in between. Set aside.
  • Remove pan from the oven and sprinkle with apple and nuts. Drizzle caramel mixture over the top.
  • Crumble remaining oat mixture over the top of the caramel and return pan to the oven.
  • Bake for an additional 20-22 minutes or until top is lightly browned.
  • Let cool completely before cutting into bars.

1/2 cup (115g) unsalted butter, melted
1/4 cup (50g) granulated sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 cup (125g) all-purpose flour (spoon & leveled)
2 large apples, peeled and thinly sliced (1/4 inch thick)*
2 Tablespoons all-purpose flour
2 Tablespoons granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/2 cup (40g) old-fashioned oats
1/3 cup (70g) packed light or dark brown sugar
1/4 teaspoon ground cinnamon
1/4 cup (31g) all-purpose flour (spoon & leveled)
1/4 cup (60g) unsalted butter, cold and cubed
homemade salted caramel or store-bought caramel sauce

Steps:

  • Preheat the oven to 300°F (149°C). Line the bottom and sides of an 8-inch square baking pan with parchment paper leaving enough overhang on all sides. Set aside.
  • Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes and then remove from the oven. (As the crust bakes, you can prepare the filling and streusel.)
  • Combine the sliced apples, flour, granulated sugar, cinnamon, and nutmeg together in a large bowl until all of the apples are evenly coated. Set aside.
  • Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Set aside.
  • Turn the oven up to 350°F (177°C). Evenly layer the apples on top of the warm crust. It will look like there are too many apple slices, so layer them tightly and press them down to fit. Sprinkle the apple layer with streusel and bake for 30-35 minutes or until the streusel is golden brown.
  • Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Once cut, drizzle some salted caramel sauce on top of each. These apple pie bars can be enjoyed warm, at room temperature, or even cold.

Steps:

  • Preheat oven to 350°. Grease a 9x9 square baking pan.
  • In a large bowl, using a hand mixer or stand mixer, beat butter and brown sugar until creamy and combined. Add flour, oats, salt, and baking soda and beat until combined and crumbly, scraping the sides of the bowl as needed.
  • Reserve 1 ½ cups for the topping. Press the remaining crumble mixture into the bottom of the greased 9x9 pan, pressing it into an even layer.
  • In a separate bowl, combine all ingredients for apple filling. Toss until well combined. Dump the apple mixture on top of the crust and spread it out evenly. Crumble the reserved topping over the apples, pressing some of it together to form clumps.
  • Bake for 35-45 minutes until the topping is golden brown and the apples are tender (insert a sharp knife to check). Place on a wire rack to cool slightly. Drizzle with ⅓ cup caramel sauce. Serve warm, room temperature or chilled. Note: The bars will cut more neatly if chilled. Optional: top with ice cream and additional caramel sauce.

5 Granny Smith apples - peeled, cored and sliced

Steps:

  • Preheat oven to 350F. Line an 8-inch square pan with aluminum foil leaving overhang and spray with cooking spray, or grease and flour the pan; set aside.
  • In a large bowl, add the flour, brown sugar, and cut in the butter with two forks. Keep working until mixture is combined and pea-sized crumbly bits are present.
  • Turn mixture out into prepared pan, hard-packing it with your fingertips in an even, smooth, flat layer to form a crust.
  • Bake for 14-15 minutes, or just until set (set a timer). Remove from oven; set aside. While crust bakes, prepare the remaining layers.
  • In a large bowl (same one used for crust is okay, just wipe with a paper towel), add all ingredients and beat with a hand mixer (or whisk vigorously by hand) until smooth and combined, about 2 minutes on high power; set aside.
  • Peel, core, and dice apples and place in a medium bowl. Sprinkle with sugar, cinnamon, nutmeg, and toss well to combine; set aside.
  • In a medium bowl, add the flour, brown sugar, oats, and cut in the butter with two forks. Keep working until mixture is combined and pea-sized crumbly bits are present. If necessary, add an extra tablespoon or two of flour or oats for preferred consistency if mixture is loose.
  • After removing pan with the crust layer from the oven, pour cheesecake mixture over the crust, smoothing the top lightly with a spatula.
  • Lightly and evenly sprinkle the apples.
  • Evenly sprinkle with the crumble mixture. It looks like a lot, but it sinks some while baking.
  • Bake for 45 to 50 minutes (I baked 48 minutes), or until crumble topping is just set and very lightly golden browned. Place pan on a wire rack to cool for about 30 minutes.
  • After 30 minutes, evenly drizzle with (salted) caramel sauce.
  • Allow bars to cool, in pan, on wire rack for at least 4 hours, or overnight. Cover with foil if cooling overnight. Don't slice bars too early because you'll have a literal hot mess and bars will likely fall apart. Prior to slicing, lift bars out using foil overhang, slice, and serve.
  • Bars will keep airtight at room temp for up to 1 week, or in the freezer for up to 6 months. Optionally serve with ice cream.

2 cups (240g) all-purpose flour
3/4 cup (160g) light brown sugar, packed
1/4 cup (50g) granulated sugar
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp apple or pumpkin pie spice
1/2 tsp Kosher salt
1 cup (227g/2 sticks) unsalted butter, softened
1 large apple, peeled and very thinly sliced
1/2-2/3 cup caramel sauce, room-temperature
optional: 1/4 cup chopped walnuts
1/2 cup granulated sugar
3 Tbsp unsalted butter, cubed
1/4 cup heavy whipping cream
1 tsp pure vanilla extract

Steps:

  • (see recipe below). Set aside to cool.
  • to 350℉. Line a 9×9-inch baking pan with parchment paper, leaving about an inch overhang on two sides. Set aside.
  • In a large mixing bowl, whisk together the oats, flour, sugars, baking soda, and spices until well-combined.
  • Cut the butter into cubes, then use a pastry blender to cut the butter into the dry ingredients. Once it's mostly combined, switch to using your fingers and knead until completely incorporated. You should form a shaggy, crumbly dough, that easily sticks together when pinched. This may take a few minutes.

  • Drizzle the (room-temperature) caramel sauce across the apples, adjusting the amount to taste. Top with the remaining crumble mixture, from edge to edge. Sprinkle with the chopped walnuts, if using. Press the crumb topping down gently.
  • for 35-45 minutes, until the crumble topping is golden brown and has puffed up a bit. The caramel may be starting to bubble up through the crumbs. Remove from the oven and let cool completely before cutting into bars. Enjoy!!

1 cup heavy cream

5 cups apple slices (see note) from about 4 large Granny Smith apples
1 cup sugar
1 tablespoon freshly squeezed lemon juice
1 teaspoon cornstarch
1 teaspoon cinnamon

For Crust and Crumble
3 cups all purpose flour
1 cup sugar
1/2 teaspoon salt
1 teaspoon baking powder
16 tablespoons (1 cup) cold unsalted butter, diced

Steps:

  • Make the caramel : Assemble all the ingredients you will need for the caramel and place close to the saucepan you will be using. Place sugar in a large heavy sauce pan over medium high heat. Let the sugar begin to melt, then start to mix with a spoon. Mix occasionally until sugar has completely melted into a lightly golden color. Slowly and carefully pour in heavy cream-the sugar is going to immediately steam and harden into a lump. Turn the heat down to medium and continuously stir caramel until it is completely melted again and mixture is smooth, about 5 minutes. Stir in butter, vanilla, and salt, and mix until butter has melted completely. Take caramel off the heat and let come to almost room temperature.
  • While caramel is cooling, make apple layer : In a large bowl, combine apples, sugar, lemon juice, cornstarch, cinnamon, and nutmeg, and stir to make sure it is well mixed. Let stand for 10 minutes.
  • Make crust and crumble : Adjust oven rack to middle position and preheat oven to 375°F. Line the baking dish with foil, then grease foil with butter.
  • Put flour, sugar, baking powder, and salt in the bowl of a food processor. Pulse 5 times to combine. Add butter and pulse until it is cut to the size of peas. Add egg and heavy cream and pulse until mixture has the texture of wet sand and, when pressed between your fingers, holds its shape.
  • Take 3/4 of the shortbread dough and press it into the prepared baking sheet. The bottom crust should be about 1/2-inch thick. Use a slotted spoon to remove apples from the bowl and spread evenly over top of shortbread. Cover the apples with the caramel sauce, gently reheating it over low heat if it's become too thick to spread. Use your fingers to form the remaining shortbread into crumbs and sprinkle the top with crumbs.
  • Bake bars until top is golden and bubbling, about 50 minutes. Let cool completely before cutting.
