World's Best Scones! From Scotland to the Savoy to the U.S. image

My grandmother is Scottish and her family made GREAT scones.... In search of the best scone recipe in the world I have adapted their recipe with my own touches and with the famous scone recipe from the world renowned Savoy hotel in London. I now believe I have adapted the BEST SCONE RECIPE IN THE WORLD!

1 ¾ cups all-purpose flour
4 teaspoons baking powder
¼ cup white sugar
⅛ teaspoon salt
5 tablespoons unsalted butter
½ cup dried currants or raisins
½ cup milk
¼ cup sour cream
1 egg
1 tablespoon milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Sift the flour, baking powder, sugar and salt into a large bowl. Cut in butter using a pastry blender or rubbing between your fingers until it is in pea sized lumps. Stir in the currants. Mix together 1/2 cup milk and sour cream in a measuring cup. Pour all at once into the dry ingredients, and stir gently until well blended. Overworking the dough results in terrible scones!
  • With floured hands, pat scone dough into balls 2 to 3 inches across, depending on what size you want. Place onto a greased baking sheet, and flatten lightly. Let the scones barely touch each other. Whisk together the egg and 1 tablespoon of milk. Brush the tops of the scones with the egg wash. Let them rest for about 10 minutes.
  • Bake for 10 to 15 minutes in the preheated oven, until the tops are golden brown, not deep brown. Break each scone apart, or slice in half. Serve with butter or clotted cream and a selection of jams - or even plain.

1 ½ cups all-purpose flour
2 cups rolled oats
¼ cup white sugar
4 teaspoons baking powder
½ teaspoon salt
½ cup dried currants
1 egg, beaten
½ cup butter, melted
⅓ cup milk

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
  • In a large bowl, mix the flour, oats, sugar, baking powder, salt, and currants. Make a well in the center. In a small bowl, beat egg until frothy, and stir in melted butter and milk. Pour into the well, and mix to create a soft dough. Pat dough into two 1/2 inch thick circles. Place on the prepared baking sheet. Score 8 wedges into each circle of dough.
  • Bake 15 minutes in the preheated oven, until risen and browned. Split wedges, and serve warm.

1/3 C. milk
1 egg
1 C. unbleached flour
1/2 C. whole wheat flour
1 1/2 C. regular oatmeal, uncooked
1/4 C. brown sugar
1 Tbsp. baking powder
1 tsp. cream of tartar
1/4 tsp. salt (optional)
1/2 - 1 C. raisins or dried cranberries

Steps:

  • Combine first three ingredients in small bowl. Combine all other ingredients in large bowl. Add wets to dry - mix just until moistened. Shape into ball - flatten out to 8 inch circle. Cut into 12 wedges. Place on greased cookie sheet. Bake in 425 oven 10-11 minutes.

1-1/2 cups all-purpose flour
1/3 cup sugar

1/2 cup fat-free milk
1/3 cup canola oil
1/4 cup butter, melted
1 egg
1 egg yolk
1/2 cup raisins
1/2 cup dried cranberries
TOPPING:
1 egg white
1 teaspoon water
1 teaspoon sugar

Steps:

  • In a large bowl, combine the oats, flour, sugar, baking powder and salt. In a small bowl, combine the milk, oil, butter, egg and yolk; stir into oat mixture just until blended. Stir in raisins and cranberries (dough will be sticky). , Turn dough onto a well-floured surface; divide in half. 4 cups all-purpose flour
1 cup brown sugar, packed
1 1/2 tablespoons baking powder
1/2 teaspoon salt
2 tablespoons shortening
1 cup milk
1 egg white, beaten
1 egg yolk

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Mix dry ingredients together.
  • Cut in shortening until mixture resembles a bowl of small marbles.
  • Add milk and beaten egg white and blend well. Add more milk slowly if mixture is dry.
  • Turn onto floured cutting board.
  • Knead slightly.
  • Roll out 1 inch thick.
  • Brush with egg yolk evenly over top.
  • Cut into diamond shapes.
  • Bake at 375 degrees Fahrenheit for 15 to 20 minutes until top is golden brown.

When you pull one away from the others, it should look baked all the way through; the edge shouldn't look wet or unbaked. Remove the scones from the oven, and cool briefly on the pan. Serve warm.

CLASSIC SCOTTISH SCONES RECIPE
Divide dough into 2 equal parts. Flatten each with the knuckles into a round disc. About 6 inch in diameter and ½ inch thick. Prick about a dozen times with fork. Then cut in four sections each. Bake on lightly greased baking sheet until tan. At 375℉ (190℃) for about 15 minutes. You can add ½ cup raisins or currants if you wish.
