OATMEAL CARMELITAS
Chewy gooey caramel, nuts and chocolate. We call them Goober Cookies. They taste great the next day if you get them to last that long.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x9 inch square pan.
- Combine the 1 cup flour, baking soda, oats, brown sugar, salt and melted butter. Mix to combine, mixture will be very crumbly. Press half of the mixture into the bottom of the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 10 minutes.
- Let cool slightly then sprinkle over the crust the chocolate chips and chopped nuts. Mix the caramel ice cream topping with the 3 tablespoons of flour and drizzle over the chocolate chips. Top with the remaining oatmeal mixture. You will need to break it into small pieces to cover.
- Bake at 350 degrees F (175 degrees C) for 15 minutes. Let bars cool before cutting.

CARAMEL APPLE OATMEAL CARMELITAS
Steps:
- Melt the butter in a large skillet, over medium heat.
- Add the apples, sugar, cinnamon, and salt. Cook, stirring occasionally, until the apples have softened slightly (about 5 to 10 minutes).
- Preheat the oven to 350 degrees F.
- Mist a 9-inch x 9-inch square baking pan with non-stick spray, and line it with parchment paper, allowing the excess to drape over the sides of the pan.
- Place the flour, oats, brown sugar, baking soda, and salt in a large mixing bowl and stir to combine.
- Cut the butter into half-inch pieces, and use a pastry blender or clean hands to combine it with the dry ingredients (the mixture should be very crumbly, like streusel).
- Press about 2/3 of the mixture into the bottom of the prepared pan.
- Top with the cooked and cooled apple filling, and drizzle with caramel sauce.
- Sprinkle the remaining crumb mixture over the top, leaving a few spaces for the caramel apple filling to peek through.
- Bake for 30 to 35 minutes, or until golden brown around the edges.
- Cool completely, then cut into bars. Garnish with more salted caramel sauce, if desired.

- Heat oven to 350*.
- Grease 13x9 inch pan.
- In large bowl, blend all crust ingredients at low speed until crumbly.
- Press half of crumb mixture, about 3 cups, in bottom of greased pan.
- Reserve remaining crumb mixture for topping.
- Bake at 350* for 10 minutes.
- Meanwhile, in small bowl combine caramel topping and 3 tbls.
- flour; set aside.
- Sprinkle warm crust with chocolate chips and nuts.
- Drizzle evenly with caramel mixture; sprinkle with reserved crumb mixture.
- Return to oven and bake an additional 18 to 22 minutes or until golden brown.
- Cool completely.
- Refrigerate 1 to 2 hours or until filling is set.
- Cut into bars.
- Enjoy!

- Preheat oven to 350 degrees F. Line an 8x8-inch square pan with foil, extending the sides of the foil over the edges of the pan. Spray the foil liberally with cooking spray. Trust me, you will want to line with foil and spray with cooking spray for easy removal later!
- In a medium bowl, mix together the melted butter, brown sugar, vanilla extract, flour, oats, and baking soda with a spoon until combined. Press half of the mixture into the prepared pan in an even layer. Bake for 10-12 minutes or until light golden brown. Remove from oven but keep oven on.
- While the crust bakes, in a small saucepan combine the caramels and heavy cream over medium-low heat, stirring occasionally until melted and smooth. Set aside.
- Sprinkle the chocolate chips evenly over the crust. Pour the caramel over the chocolate chip layer. Crumble the remaining oatmeal cookie dough over the caramel layer evenly. Return to the oven and bake for an additional 15-20 minutes or until the top is golden brown and the caramel is just about set. It may jiggle a little, but should not be sloshing around in the pan. Cool completely at room temperature, then refrigerate to set for at least 1-2 hours. Let bars come to room temperature before consuming, as cold caramel is not great for teeth!

- In a large bowl, combine 1 cup flour, oats, sugar, butter, baking soda, and salt. Mix to form crumbs. Put aside a rounded 1/2 cup of the mixture. Press remaining crumbs in the bottom of the prepared baking dish. Bake for 10 minutes.
- Sprinkle chocolate chips and nuts (if using) over baked mixture. Mix 3 tablespoons flour with caramel mixture and drizzle over chocolate chips and nuts.
- Sprinkle remaining crumb mixture on top trying to cover most of the caramel. Bake for 15-20 minutes or until golden brown. Cool completely before cutting. You can speed these up by placing the bars in the fridge. Serve and store bars at room temperature.
