UPSIDE DOWN CARAMEL APPLE PIE

Steps:
- Preheat oven to 425 degrees F (220 degrees C). On a lightly floured surface, roll out pie crusts, and set aside. In a large bowl, toss apples with lemon juice; set aside.
- Combine 1/4 cup brown sugar, butter and corn syrup; spread in bottom of a 9 inch pie dish (glass or ceramic works best). Sprinkle with chopped pecans. Cover with one pie crust. In a small bowl, mix together 1/2 cup brown sugar, flour, and cinnamon.
- Arrange half of the apples in pastry lined plate. Sprinkle with half the brown sugar mixture. Repeat layers. Cover with remaining pie crust, fold top edge under, and crimp. Cut a few slits in the top to vent steam.
- Bake in preheated oven for 50 to 60 minutes, or until golden brown. Let stand 5 minutes. Loosen edge of pie, and carefully invert pie onto a serving dish. Serve warm.

I thought there must be a simpler (and less messy!) way to enjoy a caramel apple-and I was right! I developed this recipe myself, and my caramel apple-loving family approved.

Steps:
- Place apples in a strainer to drain. Place caramels and water in a double boiler or metal bowl over simmering water; heat for 10 minutes or until caramels are partially melted. Cover and set aside, keeping caramels in pan over heated water. , In a small bowl, whisk the butter, brown sugar, corn syrup, flour and eggs. Squeeze excess moisture from apples and stir into egg mixture. Add peanuts. Add melted caramels and stir to mix. Pour into pie shell. , Bake at 350° for 45 minutes or until set.

- Mix sugar, pumpkin pie spice and corn starch in a large bowl. Cut apples into 1/4-inch thick slices and place in a separate bowl. Sprinkle apples with lemon juice and rum; add to dry ingredients. Stir to combine. Place in piecrust. Dot with 2 tablespoons of butter. Drizzle with caramel sauce.
- Stir flour and brown sugar together in small bowl. Cut in 1/4 cup butter until mixture resembles coarse meal. Sprinkle evenly over top of pie.
- Bake in a preheated 400 degrees F oven for 10 minutes. Reduce heat to 350 degrees F and bake an additional 40 to 50 minutes, until golden brown. Delicious when served warm with a scoop of vanilla ice cream.

- Place one of the piecrusts into a deep dish pie plate and press into dish. Refrigerate this and other crust for 30 minutes.
- In a large Dutch oven, stir together the apples, brown sugar, cinnamon, nutmeg and lemon juice over medium heat.
- Cover and cook, stirring occasionally about 20 minutes.
- Uncover and cool to room temperature.
- Stir in the cornstarch.
- In a heavy 4 quart saucepan combine the brown sugar, corn syrup, butter and salt over medium heat.
- Cook about 9 minutes or until bubbling, stirring only during the first few minutes.
- Remove from heat and gradually stir in the cream.
- Cool until just warm.
- Let the pie crusts stand at room temperature for 5 minutes.
- Combine 3/4 cup of the caramel with the apples. Reserve the rest of the caramel for serving.
- Pour the apple mixture into the piecrusts and top with the other crust.
- Brush the top of the crust with the egg wash and sprinkle with sugar.
- Place the piecrusts and bake until the crust is golden brown, about 45 minutes.
- Cool at least 2 hours before serving. Warm the caramel sauce and serve alongside.

- Preheat oven to 475°F.
- In very large bowl combine butter and cinnamon; add apples and toss gently to coat.
- Spread apples evenly in a parchment paper- or foil-lined, large roasting pan or two 15x10x1-inch baking pans.
- Roast (one pan at a time if using baking pans) 4 to 5 inches from heat for 7 to 10 minutes or until apples start to brown on edges, turning once halfway through.
- Cool apples in pan(s). Reduce heat to 375°F.
- Prepare pastry or let refrigerated pastry stand at room temperature according to package directions.
- Line 9-inch pie plate with half of pastry (a deep one).
- In very large bowl stir together brown sugar, flour, and salt.
- Add apple slices and any juices; stir to coat.
- Transfer to pastry-lined pie plate.
- Trim top crust to edge of pie plate.
- Fold top pastry edge under bottom pastry; crimp edge.
- Brush top with mixture of beaten egg and water.
- Cover edge of pie with foil to prevent overbrowning.
- Place on middle shelf in oven; place foil-lined baking sheet on lower rack beneath pie.
- Bake 30 minutes; remove foil from pie. Bake for 35 to 40 minutes more or until top is golden and filling is bubbly.
- Remove to a wire rack.
- While warm, drizzle with some of the caramel topping.
- Cool completely.
- Serve with remaining topping.

- Heat the butter, brown sugar, and corn syrup in a small sauce pan, over medium heat. Stirring constantly, as to not burn the brown sugar.
- Peel, core and slice the apples. Melt the butter in a 10-12 inch skillet. Cook the apples over medium heat for about 15-20 minutes or until soft. Sprinkle with brown sugar, sugar, and lemon juice while they cook. Stir with a wooden spoon occasionally, making sure they do not burn.
- On a lightly floured work surface, roll out the bottom crust slightly larger in diameter than your baking dish. Gently place the pie crust into a 9 or 9 1/2-inch pie dish lightly, using your fingers. Use kitchen shears to trim the edges of the crust, to about ½-inch past the pan rim.
