This recipe has been a family favorite for 35 years. Serve on hamburger buns that have been buttered on both halves, and lightly browned under broiler. Freeze some for lunches or dinner in a hurry.

4 pounds boneless chuck roast
1 onion, chopped
2 tablespoons butter
3 tablespoons distilled white vinegar
12 ounces chile sauce
2 tablespoons brown sugar
1 teaspoon mustard powder
2 tablespoons Worcestershire sauce
½ teaspoon freshly ground black pepper
1 teaspoon salt
⅛ teaspoon ground cayenne pepper
3 cloves garlic, minced

Steps:

  • Place roast in a large covered pan. Roast at 325 degrees F (165 degrees C) for 2 hours, or until the meat falls apart and shreds easily.
  • In a large skillet, melt butter over medium heat. Add onions, and saute until onions become translucent.
  • Stir in vinegar and chili sauce. Fill empty chili sauce bottle with water, shake, and pour liquid into skillet. Mix in brown sugar, mustard, Worcestershire sauce, black pepper, salt, cayenne pepper, and garlic. Cook sauce over low heat, stirring often, until thickened.
  • With two forks, shred roasted beef. Stir meat into the sauce in the skillet, and simmer for 30 minutes.

1 medium onion, chopped
1/4 cup cider vinegar
1/4 cup molasses
2 tablespoons Worcestershire sauce
2 garlic cloves, minced
1/2 teaspoon salt

1/4 teaspoon garlic powder

Steps:

  • In a large bowl, combine the first 11 ingredients. Cut roast in half; place in a 5-qt. slow cooker. Pour ketchup mixture over roast. 1/4 cup packed brown sugar
1 Tbsp. HEINZ Worcestershire Sauce
1 boneless beef chuck roast (3 lb.)
1 cup beef broth
6 slices Texas toast white sandwich bread, grilled
3/4 cup HEINZ BBQ Sauce Kansas City Sweet & Smoky
1/2 cup small white onion slices, separated into rings
1/2 cup HEINZ Sweet and Spicy Pickle Chips

Steps:

  • Heat grill to medium-high heat.
  • Mix sugar and Worcestershire sauce until blended; rub evenly onto both sides of roast.
  • Grill roast 3 to 4 min. on each side or until seared on both sides. Meanwhile, heat oven to 325°F.
  • Transfer roast to shallow pan sprayed with cooking spray. Pour beef broth over roast; cover.
  • Bake 2 to 2-1/2 hours or until roast is done (160°F). Remove roast from oven; let stand 10 min. Transfer roast to cutting board, reserving cooking liquid in pan; chop meat into 1-inch pieces.
  • Skim fat from surface of cooking liquid; discard fat. Return chopped meat to cooking liquid in pan; mix lightly.

1 pint Al's barbecue sauce, recipe follows
1 gallon apple cider vinegar
1 (28-ounce) bottle ketchup
22 ounces light brown sugar
1/4 cup garlic powder
1/4 cup salt
1/2 cup crushed red pepper
1 tablespoon ground black pepper
1/2 teaspoon ground cloves

Steps:

  • Preheat oven to 325 degrees F. Wrap pork in aluminum foil and place in a broiler pan. Cook for 7 hours, about 1 hour per pound. Remove from oven and let stand for 1 hour.
  • Wearing heavy rubber gloves, pull skin from the meat and discard. Remove most of the fat and all of the bone. Cut meat into 8-ounce chunks and place in large pan.
  • Place meat on a charcoal fire and cook, covered, for another 30 to 45 minutes, until well smoked, turning meat over every 10 to 15 minutes. Pour barbecue sauce over meat during the last 10 to 15 minutes of cooking.
  • Remove meat from the grill and chop into bite size pieces. Serve with additional barbecue sauce if desired.
  • Mix all ingredients in a 6-quart stainless steel pot. Bring to a boil, then simmer, about 15 minutes. Turn off heat and let stand, about 30 minutes. Sauce can be refrigerated for up to 2 weeks.

2 Tablespoons butter (divided)
4 hoagie buns
1 onion (diced)
1 pound ground beef
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
8 slices American cheese
mayonnaise (to taste)
ketchup (to taste)
shredded lettuce (optional topping)
tomatoes (optional topping)

Steps:

  • Slice hoagie rolls open.
  • Heat a large skillet over medium high heat and add 1 Tablespoon butter. Once the butter is melted, place the hoagies on the skillet so that the inside surface gets toasted (it will take 2-3 minutes). Set toasted buns aside.
  • Add remaining butter to pan and saute onions until they are translucent (about 3 minutes). Push onions to the side of the pan and add ground beef to the pan as one large patty. Let the ground beef start to brown without breaking it up (let it sear for 3-4 minutes). Season with salt, pepper, and garlic powder and then flip the large ground beef patty over to sear the other side (it should take 2-3 minutes).
  • Start to chop up the ground beef using a spatula or ChopStir and work the onions in with the beef. Continue to chop and cook the beef until no pink remains (should take about 3 minutes). Divide the meat into 4 even portions and top each portion with 2 slices of cheese. Allow the cheese to melt while in the skillet.
  • Spread mayonnaise and ketchup on the inside of the buns, then top with beef and cheese mixture. Add other preferred toppings (like tomatoes and lettuce) and then serve.
