My mother gave me this to use at my mother group. Everyone loved it so I decided to post it and share the great blend of peaches and French toast. Smells great when cooking.

1 cup packed brown sugar
½ cup butter
2 tablespoons water
1 (29 ounce) can sliced peaches, drained
12 (3/4 inch thick) slices day-old French bread
5 eggs
1 tablespoon vanilla extract
1 pinch ground cinnamon, or to taste

Steps:

  • In a saucepan, stir together the brown sugar, butter and water. Bring to a boil, then reduce heat to low, and simmer for 10 minutes, stirring frequently.
  • Pour the brown sugar mixture into a 9x13 inch baking dish, and tilt the dish to cover the entire bottom. Place peaches in a layer over the sugar coating, then top with slices of French bread. In a medium bowl, whisk together the eggs and vanilla. Slowly pour over the bread slices to coat evenly. Sprinkle cinnamon over the top. Cover and refrigerate for 8 hours or overnight.
  • Remove the dish from the refrigerator about 30 minutes before baking to come to room temperature. Preheat the oven to 350 degrees F (175 degrees C).
  • Bake for 25 to 30 minutes in the preheated oven, or until the bread is golden brown. Spoon out portions to serve.

1/2 cup butter
1 tablespoon water
1 (29 ounce) can sliced peaches, drained,reserve liquid for syrup
1 loaf French bread, unsliced
6 beaten eggs
1 1/2 cups milk
1 tablespoon vanilla
2 tablespoons cornstarch
1/3 cup orange juice

Steps:

  • Melt margarine in a small saucepan; stir in brown sugar& water.
  • Cook, stirring gently until thickened.
  • Pour into well greased 10x15 or 9x 13 pan.
  • drain peaches& reserve liquid, place peaches on top of cooled sugar mixture in pan.
  • slice french bread into 1" thick slices& place slices over peaches, filling all the gaps.
  • mix eggs, vanilla,& milk and pour over bread.
  • cover& refrigerate overnight.
  • in the morning, uncover& bake@ 350 for 40 minutes.
  • cool for 5 minutes before inverting onto serving tray.
  • for peach syrup: mix reserved peach liquid with cornstarch& stir over low heat until thickened add juice.
  • serve warm.

1/2 cup packed brown sugar
3 medium peaches, divided
3 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 cup sour cream
1 teaspoon vanilla extract
4 large eggs, room temperature, lightly beaten

Steps:

  • Preheat oven to 350°. Line the bottom and sides of a 9-in. round baking pan with parchment. Pour butter into prepared pan; sprinkle with brown sugar. Slice 2 peaches and arrange in a single layer over brown sugar., In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream and vanilla. Add eggs; beat on low speed just until blended. Chop remaining peach; fold into batter. Spoon over peach slices. Place cake pan in a larger baking pan; add 1 in. of hot water to larger pan. , Bake until center is just set and top appears dull, 65-75 minutes. Remove cake pan from water bath. Steps:

  • Topping:.
  • In a 9 1/2 or 10 inch nonstick oven-proof skillet, mix sugar and 3 tsp water. Boil, swirling pan, about 5 minutes until sugar starts to caramelize and tuns a light honey color. A variation of the Upside Down Pineapple French Toast. I use sourdough and rye bread for this, but it's tasty with most breads. From "My Great Recipes" packet #36.

2 tablespoons butter or 2 tablespoons margarine
1/4 cup brown sugar, packed
4 slices canned pineapple, well drained
2 eggs
1/2 cup milk
1/8 teaspoon salt
4 slices white bread
parsley (to garnish)

Steps:

  • Melt butter in 8-9 inch square pan in oven as it preheats.
  • Sprinkle with brown sugar.
  • Lay pineapple slices over brown sugar, spacing evenly.
  • Beat eggs, milk and salt until blended.
  • Soak 4 bread slices in milk mixture until soft, using all of the mixture.
  • Arrange bread on top and pour extra milk mixture over the bread.
  • Bake at 400 degrees for 25 minute or until set and lightly browned.
  • Invert entire pan onto large serving platter. Or with pancake turner, lift each serving and invert onto heated individual serving plates. Garnish with parsley(I never do this though).
  • Good with syrup, bacon, coffee, juice, tea or milk.

5 tablespoons butter, melted
⅔ cup packed light brown sugar

½ teaspoon pure almond extract
2 cups flour
2 teaspoons baking powder

3 large, ripe peaches
1 1/4 cup/250 grams sugar
1 cup/128 grams flour

3/4 cup milk

  • Heat oven to 350°F.

¾ cup all-purpose flour
1 teaspoon baking powder
½ cup brown sugar
¼ cup melted butter
3 tablespoons amaretto liqueur
2 peaches, pitted and thinly sliced
½ cup chopped pecans
¼ cup butter
½ cup white sugar
2 medium eggs
1 teaspoon almond extract
¼ cup milk

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Whisk the flour and baking powder together in a small bowl; set aside.
  • Stir the brown sugar, 1/4 cup melted butter, and amaretto liqueur in a 9-inch pie pan until the sugar has dissolved. Arrange the peach slices in the pan and sprinkle with the pecans; set aside. Beat 1/4 cup butter and the white sugar with an electric mixer in a large bowl until light and fluffy. Beat in the first egg until incorporated, the beat in the second along with the almond extract. Pour in the flour mixture alternately with the milk, mixing until just incorporated. Gently pour the batter over the peaches and pecans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean and the cake is golden brown, about 25 minutes. Cool in the pan for 10 minutes before running a knife along the edges and inverting onto a serving plate to cool.

2 cups sliced peeled fresh or frozen peaches, thawed
2 tablespoons bourbon, optional
1/4 cup butter
1/2 cup packed brown sugar
BATTER:
1/2 cup butter, softened
3/4 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1-1/4 teaspoons baking powder
1/4 teaspoon salt
1/2 cup 2% milk

Steps:

  • Preheat oven to 350°. If desired, combine peaches and bourbon; let stand 10 minutes., Meanwhile, place 1/4 cup butter in a 10-in. cast-iron or other ovenproof skillet; heat in oven until butter is melted, 5-7 minutes. Sprinkle brown sugar evenly over butter. Arrange peach slices over brown sugar., For batter, in a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with milk, beating after each addition just until combined. Spread batter evenly over peaches., Bake until a toothpick inserted in center comes out clean, 40-45 minutes. Cool 5 minutes before inverting onto a serving plate. Serve warm.

1/4 cup dark brown sugar, firmly packed
10 ounces crushed pineapple with juice, drained
1/4 cup pineapple juice, reserved
2 large eggs
1 cup milk
1/4 cup half-and-half
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon vanilla
8 slices French bread (1")

Steps:

  • Preheat oven to 400F.
  • In a saucepan, melt butter over moderate heat and stir in sugar until dissolved.
  • Add pineapple, stirring well to incorporate.
  • In a bowl, whisk together eggs, milk, half and half, reserved pineapple juice, salt, cinnamon and vanilla.
  • Lightly grease a 13 x 9 pan and spread pineapple mixture evenly over bottom.
  • Dip bread slices into milk mixture and arrange in one layer on top of pineapple mixture.
  • Bake french toast in middle of oven 20-25 minutes or until bread is golden.
  • French toast can be made a day ahead of time, covered with plastic wrap and stored in the refrigerator.
  • Serves 4.
