SALTED CARAMEL CHEESECAKE

Salted caramel cheesecake image

Our make-ahead salted caramel cheesecake means you can serve up a showstopper, save time in the kitchen and spend time with your guests

Provided by Barney Desmazery

Categories     Dessert

Time 1h5m

Yield cuts into 12 slices

Number Of Ingredients 8

50g butter, melted, plus extra for the tin
200g chocolate digestives
750g (3 tubs) cream cheese
300g caramel sauce (dulce de leche) from a tin or jar
1 tsp vanilla extract
150g golden caster sugar
2 tbsp plain flour
4 medium eggs

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter a 23cm springform cake tin and line the base with baking parchment. Tip the biscuits into a food processor, blitz to crumbs and pour in the melted butter. (You could also tip the biscuits into a bag, bash with a rolling pin into crumbs and mix in the butter.) Press the biscuit mixture into the base of the tin - the easiest way to do this is by flattening it with your hand under a sheet of cling film. Place the tin on a tray and bake for 10 mins, then remove from the oven to cool.
  • Meanwhile, scrape the cream cheese into a bowl with 3 tbsp of the caramel sauce, the vanilla, sugar and flour, and beat until smooth. Beat in the eggs, one at a time, until you have a thick, smooth custard consistency. Tip over the base, scraping the bowl clean, and bake in the oven for 10 mins. Reduce the temperature to 140C/120C fan/gas 1 and continue to bake for 25-30 mins until there is a slight wobble in the centre. Turn off the heat and leave the door just slightly ajar - a tea towel holding the door open is ideal. This should leave you with a completely smooth top, but if there are a couple of small cracks, don't worry. Leave the cheesecake in the oven until completely cool (overnight is fine), then chill until needed. Will keep in the fridge for two days.
  • On the day, loosen the sides of the cheesecake from the tin with a knife and remove the base (although I usually serve it straight from the tin base). Add a large pinch of flaky sea salt to the rest of the caramel sauce, then spoon it over the cake and swirl with the back of the spoon. The cheesecake will sit happily on a stand at room temperature for a couple of hours. Just before serving, sprinkle with extra sea salt, if you like.

CARAMEL CHEESECAKE MARTINI RECIPE - (4.3/5)

Caramel Cheesecake Martini Recipe - (4.3/5) image

Provided by rrxing

Number Of Ingredients 7

1 ounce vanilla vodka (I used Smirnoff)
1 ounce kissed caramel vodka (Smirnoff)
Fat Free Half & Half
1/2 graham cracker, smashed into crumbs
caramel sauce (with the ice cream toppings)
approx 1 teaspoon honey
caramel candies for garnish, optional

Steps:

  • Rub honey on the edge of a martini glass. Roll in graham cracker crumbs until coated well. Honey is the best way to get the graham crackers to stick and stay where you put them. If you're not too picky about it, just use water. In a shaker, combine both vodkas, about 3/4 cup half & half, and a handful of ice. Shake until mixed well. Using a spoon, drizzle caramel sauce on the inside of your martini glass. Immediately pour beverage into the martini glass. Add a skewer of two caramel candies for garnish if desired.

Molasses flavour from muscovado sugars and a topping of thinly sliced fudge... this make-ahead pud is pure indulgence

Provided by Good Food team

Categories     Dessert, Dinner, Treat

Time 25m

Number Of Ingredients 10

50g unsalted butter
140g plain digestive biscuit
4 gelatine leaves (I used Supercook), cut into wide strips (or 1 x 11g sachet, see Know-how, below)
400g crème fraîche
100g light muscovado sugar
50g dark muscovado sugar
1 tsp vanilla extract
400g ricotta
50g fudge , finely sliced
icing sugar , for dusting

Steps:

  • Gently melt the butter in a small pan over a low heat. Place the digestives in a plastic bag and crush to fine crumbs using a rolling pin; you can also do this in a food processor. Tip them into the pan with the melted butter, stir to coat, then transfer to a 20cm springform cake tin (9cm deep). Using the back of a spoon, press them into the base, making sure you seal the edges. Place in the fridge while you prepare the next stage.
  • If using leaf gelatine, place in a bowl, cover with cold water, soak for 5 mins, then drain. Pour 3 tbsp boiling water over the soaked gelatine and stir to dissolve. If using a sachet, see Know-how, below.
  • Place the crème fraîche in a small pan with the muscovado sugars and a pinch of sea salt, then gently heat, stirring constantly with a wooden spoon until the mixture liquefies and the sugar has dissolved. Give the mixture a quick whisk to get rid of any lumps. It should be warm, roughly the same temperature as the gelatine solution. Stir the gelatine and vanilla extract into the crème fraîche mixture, transfer to a bowl and cool.
  • Place the ricotta in a food processor and whizz until smooth, then add the crème fraîche mixture and whizz again. Pour this on top of the cheesecake base. Cover with cling film and chill overnight.
  • Run a knife around the sides of the tin, then undo the clip and remove it. Transfer to a plate or leave the cheesecake on the base for ease of serving. Pile the fudge flakes in the centre and dust with icing sugar. Cover and chill until required.

SALTED CARAMEL NO-BAKE CHEESECAKE

Salted caramel no-bake cheesecake image

Looking for a centrepiece dessert? Our salted caramel no-bake cheesecake is a winner every time and it's so easy to put together

Provided by Adam Bush

Categories     Dessert

Time 20m

Number Of Ingredients 10

250g digestive biscuits
125g unsalted butter, melted
2 tbsp salted caramel sauce
750g full-fat soft cheese
2 tbsp salted caramel sauce
3 tbsp icing sugar
1 tsp vanilla extract
handful of chocolate-covered malted milk balls
20g chocolate-covered honeycomb, chopped
3 tbsp salted caramel sauce

Steps:

  • Tip the digestive biscuits into a food processor and pulse to fine crumbs. Pour in the butter and caramel sauce and pulse again until damp and sandy. Tip the mixture into a 20cm springform cake tin and use a spoon to press it into an even layer in the base of the tin. Chill for 30 mins.
  • For the filling, mix together the soft cheese, salted caramel sauce, sugar and vanilla extract. Once the base is cold and has firmed up, spoon over the filling and smooth the top with the back of the spoon. Chill for at least 4 hrs. If making ahead, wrap the cheesecake and freeze for up to three months instead. Leave in the fridge overnight to defrost.
  • To serve, carefully remove the cheesecake from the tin and put onto a serving platter or cake stand. Scatter over the shop-bought chocolates, crushing a few of the malted milk balls, then drizzle with the salted caramel sauce before cutting into slices.

ESPRESSO MARTINI CHEESECAKE

Espresso martini cheesecake image

Make this grown-up dessert for a celebration dinner, or as an alternative to Christmas pudding. Spiked with coffee liqueur, it's sophisticated and luxurious

Provided by Esther Clark

Categories     Dessert

Time 50m

Number Of Ingredients 15

70g salted butter, plus extra for the tin
100g dark chocolate digestive biscuits
150g almond cantuccini or biscotti
150g dark chocolate, chopped
500g full-fat soft cheese
180g icing sugar
300ml double cream
30ml espresso or strong coffee
50ml coffee liqueur
1 tsp vanilla bean paste, or 1 vanilla pod, split and seeds scraped out
50ml coffee liqueur
50ml espresso or strong coffee
50g golden caster sugar
200g soured cream
30g chocolate-coated coffee beans

Steps:

  • Butter a 20 x 25 x 4.5cm loose- bottomed cake tin or a roughly 23cm loose-bottomed square cake tin and line with baking parchment. Melt the butter in a pan over a low heat, then pour into a large bowl and set aside.
  • Put the digestive biscuits and cantuccini or biscotti in a food processor and blitz to fine crumbs. Alternatively, put them in a sealed sandwich bag and bash to crumbs with a rolling pin. Tip into the bowl containing the butter and stir to combine. Transfer the buttery crumbs to the prepared tin and firmly press into the base. Chill for 30 mins, or freeze for 10 mins.
  • Melt the chocolate in a heatproof bowl set over a pan of simmering water, making sure the bottom of the bowl doesn't touch the water. Stir until smooth, then leave to cool to room temperature, about 15 mins.
  • Divide the soft cheese, icing sugar and double cream equally between two bowls. To one bowl, add the cooled melted chocolate and beat with an electric whisk until thick and creamy. To the second bowl, add the coffee, coffee liqueur and vanilla, and beat until thick and creamy, about 3-5 mins (the coffee mixture will not get quite as thick). Spoon the chocolate mixture over the biscuit base and level with a palette knife. Freeze for 30 mins, or until starting to firm up. Spoon over the coffee mixture, level the surface and return to the freezer for at least another 24 hrs. Will keep frozen, well covered, for up to two weeks.
  • On the day you want to serve the cheesecake, make the coffee syrup. Pour the coffee liqueur, coffee and sugar into a small saucepan. Bring to a simmer and cook for 5 mins, or until syrupy enough to coat the back of a spoon. Leave to cool completely.
  • Take the cheesecake out of the freezer 1 hr before serving. Once defrosted, the cheesecake will keep in the fridge for up to three days. Spread the soured cream over the top, drizzle with the coffee syrup, then scatter over the coffee beans. Cut into 12 squares and serve straightaway (after about 5 mins the syrup will crack the soured cream).
