Steps:

  • For the caramel: Mix 2 cups sugar, 1/4 cup light corn syrup and 1/2 cup water in a small saucepan. Bring to a boil over medium-high heat, stirring just until the sugar dissolves. Cook, swirling the pan (do not stir), until the mixture is light amber and a candy thermometer registers 320 degrees, 8 to 10 minutes. Remove from the heat; slowly whisk in 1/2 cup heavy cream, then 2 tablespoons unsalted butter, 1 teaspoon vanilla extract and a pinch of salt. Return to low heat and whisk until smooth.
  • Stir 1 1/3 cups chopped nuts into the warm caramel; cool until the mixture is thick enough to hold its shape. Drop spoonfuls onto an oiled parchment-lined baking sheet; let set. Top with melted chocolate and sprinkle with coarse sea salt.

CARAMEL PEANUT CLUSTERS

Caramel Peanut Clusters image

Try your hand at this Caramel Peanut Clusters recipe this year. You don't need to have a diploma from candy-making school to make these luscious Caramel Peanut Clusters. They're really (really) easy to make.

Provided by My Food and Family

Categories     Home

Time 2h

Yield 30 candy clusters

Number Of Ingredients 5

1 bag (11 oz.) KRAFT Caramel Bits
2 tsp. water
1 jar (16 oz.) PLANTERS Dry Roasted Peanuts
3 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, broken into squares
1 Tbsp. butter

Steps:

  • Pour Caramel Bits into a microwave-safe bowl, with 2 teaspoons of water and microwave in 30 minute increments, stirring in between each heating. It took 1 ½ minutes to melt the caramels with only a few left unmelted. Stirring the warm, creamy caramel allowed the last chunks to completely melt and be incorporated.
  • Pour the jar of peanuts into the caramel and stir to completely coat all peanuts.
  • Drop by spoonful onto a buttered or greased sheet of wax paper, or a silicone baking mat. Allow the caramel clusters to cool and set up, about 10 minutes.
  • While the clusters cool, prepare the dipping chocolate. In a microwave-safe bowl add the butter and chocolate. Breaking the chocolate into small pieces along the perforations to helps it melt more quickly.
  • Again, 30 second increments in the microwave, stirring in between each, will help the chocolate melt quickly and prevent burning or scorching. After 1 ½ minutes, you may still have a few soft chunks of chocolate in the mixture, but stirring will allow them to melt and be combined with the melted chocolate dip.
  • After the chocolate is melted, dip each cluster into the chocolate and turn it to be sure all sides are covered. Lift the cluster out of the chocolate on the tines of a fork. Gently tap the fork handle against the rim of the bowl, allowing excess chocolate to drip through the tines of the fork, back into the bowl.
  • Place the clusters back onto the prepared surface and leave them to cool and harden 1 to 2 hours.

CARAMEL CASHEW CLUSTERS

Caramel Cashew Clusters image

Caramel Cashew Clusters make the perfect gift for any cashew lover! Chewy homemade caramel, salted cashews and white chocolate create a gourmet treat that you can make at home!

Provided by Janelle

Time 1h30m

Number Of Ingredients 7

2 cups white sugar
1/8 teaspoon salt
1 cup white Karo syrup
3 cups heavy whipping cream
Candy thermometer or digital thermometer. I prefer a digital meat thermometer.
3 cups whole cashews
16 ounces white melting chocolate

Steps:

  • This recipe works best with a silicone baking mat, silpat or non-stick foil. DO NOT USE WAX PAPER.
  • Line a table or counter with baking mats or non-stick foil (non-stick side up).
  • Place approximately 40 clusters of cashes all over baking mat or foil in round mounds. I had 6 cashews per mound, close together.
  • In a LARGE pot mix sugar, salt, corn syrup and whipping cream.
  • Clip a candy thermometer onto the pan if your pan allows. If not, you'll have to check the temperature regularly with your thermometer then rinse it off after each time.
  • Cook caramel mixture over medium heat (I like to cook mine at a 7.5 level on my stove) until caramel reaches 241*F. Caramel should cook at a heavy simmer / boil and will double, if not triple, in volume from the bubbles.
  • Stir caramel mixture every few minutes to prevent from scorching the bottom of the caramel.
  • The mixture will come to 218*F pretty quickly, so don't panic. Between 218*F - 241*F will take a little while.
  • As you cook and stir, the caramel will start off white, then a light caramel then eventually a rich caramel color.
  • Once caramel reaches 241*F, remove from stove.
  • Using a cookie scoop, scoop out 1-2 Tablespoons of caramel and pour over each pile of cashews.
  • Allow to cool completely. Gently pick up one cashew mound and fold caramel edges under cluster.
  • Melt white chocolate according to package directions an dip clusters into chocolate then replace on baking mat or non-stick foil to dry.
  • Place in cute jars or bags and give away to friends and family (or eat them all yourself!)

Yield Makes about 12 cups

Number Of Ingredients 10

2 tablespoons vegetable oil
1/3 cup popcorn kernels
1 stick (1/2 cup) unsalted butter
11/2 cups packed light brown sugar
1/2 cup light corn syrup
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup salted peanuts (5 oz)
Special Equipment
a candy thermometer

Steps:

  • Heat oil with 3 kernels in a 3-quart heavy saucepan, covered, over moderate heat until 1 or 2 kernels pop. Remove lid and quickly add remaining kernels, then cook, covered, shaking pan frequently, until kernels stop popping, about 3 minutes. Remove from heat and uncover.
  • Line bottom of a large shallow baking pan with foil. Lightly oil foil. Melt butter in a 6-quart heavy pot over moderate heat. Add brown sugar and corn syrup and bring to a boil over moderate heat, stirring, then boil, without stirring, until syrup registers 300°F on thermometer, 8 to 10 minutes. Remove pot from heat.
  • Using a wooden spoon or a heatproof spatula, stir salt and baking soda into syrup, then quickly stir in peanuts and popcorn to coat. Immediately spread mixture in baking pan as thinly and evenly as possible. Cool completely, then break into bite-size pieces.

CHOCOLATE-CARAMEL PECAN CLUSTERS

Chocolate-Caramel Pecan Clusters image

Sweet, chewy and crunchy, all at the same time -- these bite-size treats go perfectly with a cup of coffee after a meal.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Time 45m

Yield Makes 1 dozen

Number Of Ingredients 3

1 cup pecan halves (3 1/4 ounces)
12 soft caramel-candy cubes
1 1/2 ounces bittersweet chocolate, broken into 12 pieces (1/2 inch each)

Steps:

  • Preheat oven to 350 degrees. Arrange pecans in a single layer on a rimmed baking sheet; toast in oven until fragrant, about 10 minutes. Remove from oven (leave oven on); set aside 36 pecans on baking sheet. Finely chop remaining pecans (for about 1/4 cup); set aside.
  • When pecans are cool enough to handle, make 12 clusters by arranging 2 pecans vertically, side by side, below 1 pecan placed horizontally. Gently flatten each caramel; place 1 on top of each cluster. Bake clusters 5 minutes. Remove from oven (leave oven on).
  • Place 1 piece of chocolate on top of each cluster. Return to oven; bake until chocolate begins to melt, 1 to 2 minutes. Remove from oven. With the back of a spoon, gently spread chocolate over caramel without completely covering it.
  • Sprinkle clusters with reserved chopped pecans. Refrigerate until set, about 15 minutes. Bring to room temperature before serving.
