18 crisp ladyfinger cookies
1/4 cup maple syrup
2 tablespoons bourbon
1 cup heavy whipping cream, divided
1/4 cup sugar
3/4 cup canned pumpkin
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon salt
4 ounces cream cheese, softened
3 tablespoons confectioners' sugar
SAUCE:
3/4 cup caramel ice cream topping
2 teaspoons bourbon

Steps:

  • Using a serrated knife, cut 6 ladyfingers in half widthwise. In a shallow bowl, combine maple syrup and bourbon. Dip 6 whole ladyfingers and 6 halves into mixture; arrange in a single layer in an 8-in. square dish., In a small bowl, beat 1/2 cup cream until it begins to thicken. Gradually add sugar; beat until soft peaks form. In a large bowl, combine the pumpkin, cinnamon, ginger and salt; fold in whipped cream. In another bowl, beat the cream cheese, confectioners' sugar and remaining cream until thickened., Spread half of pumpkin mixture over ladyfingers in the dish. Dip remaining ladyfingers; arrange over the top. Top with remaining pumpkin mixture and the cream cheese mixture. Cover and refrigerate for 8 hours or overnight., In a microwave, heat caramel sauce; stir in bourbon. Serve warm with tiramisu.

  • In a large bowl or a stand mixer fitted with the whisk, combine 1 1/2 cups cream, mascarpone, pumpkin, 1/2 cup sugar, and pumpkin spice. Beat on high speed with a hand mixer or on medium-high speed in the stand mixer until stiffly whipped.
  • In a medium bowl, beat remaining 1/2 cup heavy cream with 1 tablespoon sugar until stiffly whipped.
  • In a small bowl, stir together coffee, rum, and remaining 1 tablespoon sugar.
  • Have ready 6 approximately 4-inch wide cups or ramekins. Dip ladyfingers in coffee mixture and line cups or ramekins with a single layer. Depending on size of cups or ramekins, ladyfingers may need to be cut shorter with a serrated knife.

3 tablespoons butter (no substitute)
1/2 cup firmly packed brown sugar
1/2 cup pure maple syrup
1/4 cup heavy whipping cream
1/2 cup granulated sugar
2 teaspoons cinnamon
1 teaspoon ginger
1/4 teaspoon clove
8 -12 ounces canned pumpkin
1/2 cup heavy whipping cream
1/2 teaspoon salt
1 (7 ounce) package ladyfingers
1/2 cup heavy whipping cream
1 tablespoon confectioners' sugar
1 tablespoon Bourbon
1 (8 3/4 ounce) container mascarpone cheese, at room temperature
1/4 teaspoon fresh ground nutmeg

Steps:

  • Make caramel: Melt butter in saucepan at medium heat add remaining caramel ingredients, mix well. Bring to a boil, reduce heat to low boil and let cook for 8 minutes until syrupy.
  • Remove and let cool for 10 minutes.
  • Make filling: in HOT skillet toast the spices (except salt) over med-high heat for 15-25 seconds. Add the pumpkin and granulated sugar to the pan and cook, stirring often for about 5 minutes until thickened. Stir in the cream and salt into the skillet.
  • Assembly prep: Place ladyfingers in a shallow dish in a single layer and pour caramel over top; turn to coat.
  • Let stand for 10 minutes turning occasionally.
  • Topping: Beat cream in a mixing bowl on med-high speed with a electric mixer until thickened.
  • Add confectioners' sugar and beat into soft peaks; beat in the bourbon.
  • Fold in 1/2 of the whipped mixture into the mascarpone to lighten. Fold in remaining whipped mixture.
  • Assembly: Arrange 1/2 of the ladyfingers in a single layer to cover the bottom of a 2-quart shallow casserole dish. Spread 1/2 the filling evenly over the fingers.
  • Repeat with remaining fingers and filling. Evenly spread the topping over the top and sprinkle with nutmeg.
  • Cover loosely with plastic wrap and refrigerate overnight.
  • Let stand at room temp for 1 hour before serving.

It's a no-bake dessert that's versatile enough to keep you warm and cozy with your boo on a wintry night or keep you cool in the summer thanks to the ease of preparation (no stovetop or oven required!) Make the tiramisu parfait-style in a clear glass and you'll feast with your eyes before you have a chance to savor the first bite!

1 tablespoon unsweetened cocoa powder
1/2 cup hot espresso or strong brewed coffee
1 tablespoon rum
2 teaspoons granulated sugar
1/3 cup mascarpone cheese
1/2 cup heavy whipping cream
2 tablespoons confectioners' sugar
1/2 teaspoon pure vanilla extract
6 lady fingers (each cookie measuring about 4 1/2 by 1 inch)

Steps:

  • Sift about 1/3 of the cocoa powder into the serving glasses, dividing it equally between the two.
  • Combine the espresso, rum and granulated sugar in a small, wide bowl and stir until the sugar dissolves. (Make sure your espresso is hot, which will help the sugar dissolve.)
  • Beat the mascarpone cheese, heavy cream, confectioners' sugar and vanilla together in a large bowl until soft peaks form. Set the mascarpone cream aside.
  • Break a lady finger in half so that the two halves will fit snugly into your serving glass. Dip both sides of the halves into the espresso mixture. (Don't linger in the espresso-the delicate lady fingers will disintegrate!)
  • Place the lady finger pieces, hump-side up, in a layer in the serving glass. About two halves will fit in each layer. Top with about 2 tablespoons of the mascarpone cream and spread in an even layer. Sift in half of the remaining cocoa powder. Repeat the dipping and layering of the lady fingers and dolloping with the mascarpone cream until you reach the top of the serving glasses, finishing with the cream.
  • Dust the remaining cocoa powder on top of each glass in an even layer. Refrigerate until ready to enjoy and serve chilled.

2 large pastured egg yollks, room temperature
8 oz mascarpone cheese
2 tablespoons caramel sauce, prepared, plus more for drizzling

½ cup espresso, strong brewed, cooled
whipped cream, for serving
flaky sea salt, for serving

Steps:

  • Add the sugar and egg yolks in a small bowl and whisk vigorously until the mixture thickens and falls back on itself in a ribbon when the whisk is lifted, 6-8 minutes. Fold in the mascarpone and caramel sauce to combine evenly.
  • Break each ladyfinger in half crosswise. Dunk each half briefly in the espresso and arrange 3 halves, side by side, in the bottom of each of two cocktail glasses. (You may need to squish them tightly together to fit). Top each with 3 heaping tablespoons of the caramel-mascarpone mixture and smooth the tops with the back of the spoon. Continue layering the ladyfinger halves and the caramel-mascarpone mixture to make 3 layers. Discard any remaining espresso. Cover the glasses with plastic wrap and refrigerate for at least 2 hours, and up to 24 hours (the longer it sits, the better it gets).
  • When ready to serve, uncover and top each glass with a dollop of whipped cream. Drizzle with more caramel sauce and sprinkle each with a pinch of flaky salt.

1 (8 ounce) package cream cheese, softened
3/4 cup powdered sugar
1 (15 ounce) can pumpkin
1 teaspoon vanilla extract
1/2 teaspoon rum extract (or 2 tbsp. actual rum)
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon ginger
1 cup heavy whipping cream
gingersnap cookie (enough for 2 layers in an 8x8 pan)
caramel ice cream topping (smucker's is the best)
1/2 cup cold espresso or 1/2 cup strong coffee

Steps:

  • Brew coffee or espresso and chill in freezer.
  • Mix cream cheese, powdered sugar, pumpkin, extracts, and spices in large bowl on high until combined, set aside.

4 tablespoons brandy-based orange liqueur (such as Grand Marnier®), divided
4 tablespoons white sugar, divided
1 teaspoon vanilla extract
3 egg yolks
1 cup mascarpone cheese
1 cup heavy whipping cream
1 (3 ounce) package savoiardi biscuits (ladyfingers)
2 tablespoons grated bittersweet chocolate, or to taste
2 tablespoons cocoa powder, divided, or as needed
1 cup white sugar
¼ cup cold water
½ cup heavy cream
2 tablespoons unsalted butter
1 teaspoon kosher salt, or to taste

Steps:

  • Combine brewed espresso, 2 tablespoons liqueur, 1 tablespoon sugar, and vanilla extract in a wide bowl. Set aside.
  • Set a bowl over a saucepan of barely simmering water. Add remaining liqueur, 3 tablespoons sugar, and egg yolks to the bowl. Beat using an electric mixer on medium speed until tripled in volume, 5 to 8 minutes. Remove from heat and beat in mascarpone cheese until just combined. Let cool, 5 to 10 minutes.
  • Whip cream in a bowl using an electric mixer until it holds stiff peaks, 3 to 4 minutes. Fold 1/2 of the whipped cream into the cooled mascarpone mixture. Fold in remaining cream until fully incorporated; whipped cream will deflate a little.
  • Dip 1/2 of the ladyfingers very quickly into the espresso mixture. Line the bottom of a 9-inch square dish with cookies, breaking a few to fit as needed. Spoon 1/2 of the mascarpone filling over and spread into an even layer. Top with grated chocolate.
  • Dip remaining ladyfingers quickly into espresso and arrange a second layer over filling. Spoon remaining mascarpone mixture over, and dust with 1 tablespoon cocoa powder. Cover with plastic wrap and refrigerate for at least 6 hours.
  • Remove tiramisu from the refrigerator and leave at room temperature for 20 minutes.
  • Meanwhile, stir sugar and cold water together in a saucepan over medium-high heat. Cook, without stirring, until sugar has turned a deep amber hue, 10 to 12 minutes.
  • Warm cream in a small saucepan over medium-low heat, 3 to 4 minutes. Whisk cream slowly into the caramel and let simmer over medium-low heat until smooth, 2 to 3 minutes. Remove from heat. Whisk in butter, followed by salt.
  • Dust tiramisu with remaining cocoa powder and serve with warm caramel sauce.
