7 tablespoons butter, divided
3/4 cup packed brown sugar
1/2 cup sugar, divided
3 tablespoons cornstarch
1-1/4 cups water
6 cups chopped fresh or frozen rhubarb, thawed
3 to 4 drops red food coloring, optional
1-1/4 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup 2% milk
Cinnamon-sugar
Whipped cream or ice cream, optional

Steps:

  • In a saucepan over medium heat, melt 3 tablespoons butter. Add brown sugar, 1/4 cup sugar and cornstarch. Gradually stir in water and rhubarb; cook and stir until thickened, 5-8 minutes. Add food coloring if desired. Pour into a greased 2-qt. baking dish and set aside. , In another bowl, combine flour, baking powder, salt and remaining sugar. Melt remaining butter; add to dry ingredients with milk. Mix well. Drop by tablespoonfuls onto rhubarb mixture. Bake at 350° for 35-40 minutes or until the fruit is bubbly and the top is golden brown. Sprinkle with cinnamon-sugar. Serve warm, with whipped cream or ice cream if desired.

1 lb fresh rhubarb, chopped
1/2 cup packed brown sugar
2 teaspoons vanilla
1 teaspoon lemon juice
1 cup Original Bisquick™ mix
2 tablespoons butter, softened
1/4 cup milk
Freshly whipped cream or vanilla ice cream

Steps:

  • Heat oven to 350°F. Grease 8-inch square (2-quart) glass baking dish with butter or cooking spray.
  • In large bowl, mix rhubarb, brown sugar, vanilla and lemon juice. Pour mixture into baking dish.
  • In small bowl, stir together Bisquick mix, butter and milk with fork just until combined. Using hands, break dough into small pieces and sprinkle evenly over rhubarb mixture.
  • Bake 40 to 45 minutes or until topping is golden brown and fruit is bubbly.
  • To serve, scoop warm cobbler into bowls; top with whipped cream.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9 inch square baking dish.
  • In a saucepan, mix sugar and cornstarch for filling. Stir in the rhubarb and water. Bring to a boil. Cook and stir for 1 minute. Transfer to the prepared baking dish. Dot with butter, and sprinkle with cinnamon.
  • In a medium bowl, sift together flour, sugar, baking powder, and salt for topping. Cut in the butter until the mixture resembles coarse crumbs.
  • In a small bowl, mix together milk and egg. Add all at once to dry ingredients, stirring just to moisten. Drop by teaspoonfuls on top of the rhubarb mixture. Sprinkle with sugar.
  • Bake for 20 minutes in the preheated oven, until crisp and lightly browned.

¾ cup white sugar
3 tablespoons butter
1 cup all-purpose flour
½ cup milk
1 teaspoon baking powder

This is an easy cobbler to put together and one I have been making for years, I find that one cup of sugar is the perfect amount for my taste if you prefer a less sweeter and more tart taste then reduce the sugar by a couple of tablespoons.

4 1/2 cups rhubarb, cut into 1/2-inch pieces
1 cup sugar
1 1/4 cups flour
3 tablespoons sugar

1/3 cup cold butter, cut into pieces (no subs please!)
1 egg, beaten
1/2 cup half-and-half cream or 1/2 cup full-fat milk

Steps:

  • Set oven to 375 degrees F.
  • Grease a 9-inch baking dish.
  • Mix the rhubarb and 1 cup sugar, and place in the baking dish.
  • To make the cobbler batter: combine flour, 3 tablespoons sugar, baking powder and salt.

Rhubarb is often paired with strawberries, but in this cobbler it courts a new dance partner, the raspberry. If rhubarb is young and fresh, you can trim it in seconds. If it has fibrous outer strings, peel these off as you would those of celery. The cornmeal in the biscuit dough will nicely offset the nubbiness of the raspberry seeds. You can eat it warm from the oven, smothered in heavy cream for dessert, then spoon up the leftovers cold the next morning for breakfast, topped with yogurt.

2 1/2 cups fresh raspberries or 1 10-ounce package frozen raspberries, defrosted
1 cup plus 2 tablespoons sugar

1 cup all-purpose flour, more as necessary
2/3 cup fine cornmeal
1/4 cup sugar
1 1/2 tablespoons baking powder

Steps:

  • Preheat oven to 350 degrees. For filling, in a large bowl, toss together rhubarb, raspberries, sugar and cornstarch. Allow mixture to stand while preparing biscuit dough.
  • To prepare biscuits, place flour, cornmeal, sugar, baking powder and salt in a food processor and pulse to combine (or whisk everything together in a bowl).

3 1/2 cups sliced rhubarb (about 1/2 inch thick)
1 cup sugar, divided
1 tablespoon water
1 1/2 cups 18% table cream
3 tablespoons pure maple syrup
4 eggs
1/3 cup whipped cream

Steps:

  • Preheat oven to 425°F On a parchment paper-lined baking sheet, roast rhubarb for 20 minutes or until it softens and most of the moisture evaporates; set aside.
  • Reduce oven temperature to 300°F Butter 3/4 cup heatproof custard cups or ramekins; place them in a 13x9 inch baking dish.
  • In a small saucepan over medium-low heat, thoroughly combine 3/4 cup of the sugar with water.
  • Turn heat to medium-high; bring to a boil without stirring, 5-7 minutes or until sugar is completely melted and amber in colour. immediately divide among prepared custard cup, swirling to coat the bottoms. Set aside.
  • In a small saucepan, heat table cream over medium-high heat for 4-5 minutes or until steaming.
  • Alternatively, in a microwave-safe bowl, heat table cream for 1 1/2 to 2 minutes on high power or until steaming.
  • In a separate medium bowl, whisk remaining 1/4 cup sugar, maple syrup, and eggs, gradually whisk in heated table cream. STir in roasted rhubarb.
  • Divide custard among prepared custard cups.
  • Pour enough hot water into baking dish to come halfway up sides of custard cups.
  • Bake for 50-55 minutes or until custard is set in center. Remove custard cups from water; let cool on wire rack for about 30 minutes.
  • Loosely cover with plastic wrap; refrigerate until chilled, about 4 hours or up to 2 days.
  • Run a sharp knife around cups to loosen custards; invert onto serving plates. Decorate with a dollop of whipped cream.
  • COKKING TIPS: To prevent burning,as the the sugar cooks to caramel, brush down sides of pan with wet pastry brush and swirl sugar mixture occasionally. Prepare sugared custard cups and roast rhubarb a day in advance. The remaining steps can be done in a mater of minutes.

Steps:

  • Heat oven to 425 degrees.   • Put the rhubarb in the oven and roast, stirring halfway through, until the rhubarb has softened and the liquid has formed a syrup, about 30 minutes.
  • Remove pan from oven and use tongs to remove the vanilla bean pods.
  • Lower oven temperature to 375 degrees. Arrange biscuit rounds on top of the rhubarb, leaving space in between them. Brush biscuits with remaining tablespoon of heavy cream and sprinkle with Demerara sugar.
  • Bake cobbler until biscuits are golden brown, about 25 to 35 minutes. Serve warm or at room temperature, with cream or ice cream, if you like.
