A delicious and unique way to prepare carrots. Chef Suzanne Goin serves this at her much-acclaimed L.A. restaurant. Recipe was printed in her cookbook, "Sunday Suppers at Lucques". It's a great dish for fish or poultry.

2 lbs carrots, peeled and cut into 1/4 inch rounds
cilantro, 1 handful stems and 1/4 cup leaves
3/4 cup extra virgin olive oil
1 cup diced white onion
kosher salt & freshly ground black pepper

Steps:

  • Steam the carrots with the cilantro stems for about 20 minutes, until tender.
  • When the carrots are almost done, heat a large pot over high heat for 1 minute. Pour in 1/2 cup olive oil, and add the onion. Season with 2 teaspoons of salt and a frew grindings of black pepper, and cook the onion for about 5 minutes, stirring often, until it's translucent.
  • Add the steamed carrots and cilantro leaves and cook another 8 minutes, stirring and scraping the pot with a wooden spoon, until the carrots are lightly caramelized.
  • Puree the mixture in a food processor until it's smooth. With the motor running, slowing pour in the remaining 1/4 cup olive oil, and process until the oil is incorporated and the puree is very smooth. Season to taste and serve warm.

6 large carrots
1/2 cup creamy yogurt, drained
3 cloves garlic, pureed with salt
1 lemon
1/4 teaspoon freshly grated nutmeg
Salt and freshly ground black pepper
1 tablespoon olive oil
1 tablespoon chopped fresh mint, for garnish

Steps:

  • Preheat oven to 350 degrees. Peel carrots and cut into 1/2-inch slices. Place in an oven-proof saucepan, cover and bake until tender, about 15 minutes.
  • Meanwhile, in a small bowl combine the yogurt, garlic, juice from 1/2 of the lemon, nutmeg, and salt and pepper to taste. Puree the carrots in a blender or food processor until smooth, adding the remaining lemon juice and olive oil. Season with salt to taste.
  • Spoon the carrot puree into a serving dish, and top with the yogurt sauce. Garnish with the fresh mint.

4 cups chopped baby carrots
1 teaspoon white sugar
1 ½ cups all-purpose flour
4 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
6 medium (blank)s eggs
2 cups white sugar
2 teaspoons vanilla extract
1 cup chopped walnuts
¼ cup confectioners' sugar, or as needed
1 (8 ounce) package cream cheese, softened
½ cup butter, softened
⅓ cup caramel topping
½ teaspoon vanilla extract
1 ½ cups confectioners' sugar

Steps:

  • Combine carrots and 1 teaspoon sugar in a saucepan; add water to cover. Cover the pan, bring to a boil over medium-high heat, and cook until fork tender, 3 to 4 minutes. Drain carrots, mash with a fork, and set aside to cool.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease two 10x15-inch baking pans and line with parchment paper. Lightly grease parchment paper and dust with flour.
  • Combine flour, cinnamon, baking powder, and salt in a medium bowl.
  • Beat eggs in a large bowl with an electric mixer on high speed for 5 to 7 minutes. Beat in 2 cups white sugar until thick. Mix in mashed carrots and vanilla extract. Fold in flour mixture. Spread batter into the prepared baking pans and sprinkle with walnuts.
  • Bake in the preheated oven until top springs back when lightly touched, 10 to 12 minutes.
  • While cakes are baking, dust 2 linen towels with confectioners' sugar.
  • Remove cakes from the oven and cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert each cake carefully onto the sugar-dusted towels. Peel off parchment paper and roll cakes up in the towels to cool.
  • Meanwhile, combine cream cheese, butter, caramel topping, and vanilla extract for the frosting in a large bowl; beat with an electric mixer until smooth and creamy. Gradually mix in confectioners' sugar until fluffy.
  • Carefully unroll cakes and spread filling to 1 inch from the edges. Roll up cakes, cover, and chill until serving.

2 tablespoons white wine vinegar

Salt and pepper to taste

Steps:

  • Boil carrots until very tender, about 20 minutes. Drain and return to pan, tossing over medium heat until dry. Coarsely mash with potato masher or fork.

2 pounds carrots, peeled and chopped
2 shallots, chopped
4 garlic cloves, minced

  • In a Dutch oven, heat oil over medium heat. Add carrots and shallots; cook and stir 12-15 minutes or until carrots are crisp-tender. Stir in garlic and thyme; cook 1 minute longer. This cheerfully colored soup can be the centerpiece of a summer meal, served with crusty bread or sandwiches and a bountiful salad.

Yield 6 to 8 servings

Number Of Ingredients 13

2 tablespoons olive oil
2 large onions, chopped
4 cups water with 2 vegetable bouillon cubes, or other stock option (page 9)
1 pound carrots, peeled and finely diced
1 large potato, peeled and finely diced
2 large ripe tomatoes, chopped
2 bay leaves
2 teaspoons salt-free seasoning (see page 4 for brands)
1 large broccoli crown, finely chopped
1 1/2 cups rice milk, more or less as needed
1/4 cup minced fresh dill, to taste, plus extra for garnish
Salt and freshly ground pepper to taste
Vegan Sour Cream (page 7) for garnish, optional

Steps:

  • Heat the oil in a soup pot. Add the onions and sauté over medium-low heat until golden.
  • Add the water with bouillon cubes, carrots, potato, and tomatoes. Stir in the bay leaves and seasoning. Bring to a rapid simmer, then lower the heat. Cover and simmer gently until the vegetables are tender, about 20 minutes. Allow the soup to cool to room temperature. Discard the bay leaves.
  • Transfer the solid ingredients to a food processor, in batches if necessary, and process until smoothly pureed. Return to the soup pot. Or insert an immersion blender into the pot and process until smoothly pureed.
  • Steam the broccoli in a large saucepan with about an inch of water until bright green and tender-crisp. Drain in a colander and rinse briefly with cool water. Stir the broccoli into the soup.
  • Add enough rice milk to give the soup a slightly thick consistency. Stir in the dill, then season with salt and pepper. Let the soup cool to room temperature, then refrigerate until chilled. Garnish each serving with a dollop of sour cream, if desired, and a sprinkling of dill.

1kg carrot , sliced
bunch of parsley , finely chopped

Steps:

  • Melt the butter in a large frying pan and cook the onions and sugar together for 20-30 mins, stirring from time to time, until very soft and dark golden.
  • Meanwhile, boil or steam the carrots for 15-20 mins until very tender. Drain well and return to the pan. Add the caramelised onions and using a hand blender, whizz to make a smooth purée. Stir in the parsley and serve.
