CARAMELIZED ONION & CHEESE PASTRIES
I came up with this as an appetizer for my Christmas dinner, but now I serve it year round. I love French onion soup, and the caramelized onions, herbs and Swiss cheese make this taste like French onion soup in crisp, flaky crust. Steps:
- In a large skillet, saute onions in butter until softened. Reduce heat to medium-low; cook for 30 minutes or until deep golden brown, stirring occasionally. Stir in the paprika, salt, thyme and pepper. Remove from the heat; cool. Stir in Swiss cheese., Lightly brush one sheet of phyllo dough with some of the melted butter; place another sheet of phyllo on top and brush with butter. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.) , Cut the two layered sheets into three 14x3-in. strips. Place 1 teaspoon of onion mixture on lower corner of each strip. Fold dough over filling, forming a triangle. Fold triangle up, then fold triangle over, forming another triangle. Continue folding, like a flag, until you come to the end of the strip. Brush end of dough with butter and press onto triangle to seal. Turn triangle and brush top with melted butter. Repeat with remaining strips of dough and with remaining sheets of phyllo and onion mixture., Place triangles on greased baking sheets. Sprinkle with Parmesan cheese. Bake at 375° for 15-17 minutes or until golden brown. Serve warm.

CARAMELIZED ONION AND CHEESE BAGEL SWIRLS

Steps:
- Combine the warm water, sugar and yeast in the bowl of a stand mixer fitted with the paddle attachment, and let the mixture stand until bubbly, about 5 minutes. Add 2 cups of the flour and 2 teaspoons of the salt and mix on low speed until well combined, about 2 minutes. Switch the paddle attachment to the dough hook. Add the remaining flour and mix on low speed until fully incorporated, about 2 minutes longer. Turn the dough out onto a lightly-floured surface and knead until stiff, smooth and elastic, 5 to 7 minutes. Place the dough into a lightly-oiled bowl, cover loosely and set aside to rise until doubled, about 1 hour. Meanwhile, render the bacon in a large skillet over medium-high heat, about 5 minutes, and then remove from the skillet and let cool. Add the onions into the skillet with the bacon fat and cook over medium-low heat, stirring occasionally, until soft and golden, 20 to 25 minutes. Set aside to cool. Mix the cream cheese and Gouda in a medium bowl until well combined. Crumble in the bacon and stir in the caramelized onions, parsley and tarragon. Preheat the oven to 375 degrees F. Roll out the dough on a lightly-floured surface to form a 12-by-16-inch rectangle. Spread the cream cheese mixture over the dough, leaving a 1/2-inch border around the sides. Roll the dough up tightly starting with the long side, and then trim the ends and cut into 12 rolls. Place the rolls on a parchment paper-lined baking sheet. Beat the egg with 1 tablespoon water, and then brush the rolls with the egg wash and sprinkle with poppy and sesame seeds. Bake until golden brown and the filling is bubbly, 10 to 12 minutes. Drizzle the Cream Cheese and Chive Drizzle over the top
- Combine the cream cheese and whole milk in a small bowl using a hand mixer until a homogenous mixture forms. Mix in the yogurt until smooth, about 1 minute. Fold in the chives and season with salt and pepper.
CARAMELIZED ONION AND CHEESE FILLED PUFFS

- Prep: 55 min. Bake: 22 min. + cooling In a large skillet, sauté onion in 3 tablespoons of margarine over medium-high heat. Once onion becomes soft and translucent, continue to cook for about five minutes, stirring occasionally, until onion is caramelized. The onion should be a rich brown color, but not burnt. Remove from heat. Reserve one cup of the onion for the filling. Spray 3 baking sheets with non-stick cooking spray and set aside. Preheat oven to 400 degrees. In a medium-sized pot, bring water and remaining margarine to a rolling boil. Lower heat; add in flour, garlic powder, salt, and parsley. Stir until flour and spices are completely mixed into the water, forming a soft dough. Immediately transfer the dough into a mixing bowl and beat in eggs until the dough is very smooth. Fold in the caramelized onion (excluding the one cup for the filling) and the shredded cheddar cheese. Using a teaspoon, drop dough onto the baking sheets, leaving about an inch in between each puff. Bake for 22 minutes or until dough is puffed and golden in color. Immediately transfer to a wire rack to cool. Once cool, cut the top off of each puff to spoon in filling*. Replace the tops and refrigerate until ready to serve. *For the filling, combine cream cheese and sour cream until smooth. Stir in the one cup reserved caramelized onion and 1 tablespoon chopped fresh parsley. Spoon ½ teaspoon of filling into each puff. Garnish with fresh parsley for added color, if desired.
CHEESY ONION AND TOMATO PUFFS
Flaky puff pastries hold a tasty topping of caramelized onions, sun-dried tomatoes and Camembert cheese.

- Heat oven to 400°. Spray 2 cookie sheets with cooking spray. Unfold pastry on lightly floured surface. Roll into 12-inch square, trimming edges to make even. Cut into 6 rows by 6 rows to make 36 (2-inch) squares. Place on cookie sheets. Bake 12 to 15 minutes, rearranging cookie sheets after 6 minutes, until puffed and golden brown. - Heat oven to 400°F
- Heat water and butter to rolling boil. Stir in flour, salt and garlic powder. Stir vigorously over low heat 1 minute or until mixture forms a ball; remove from heat. Beat in eggs until smooth. Stir in cheese and onion. Drop dough by scant teaspoonfuls 1 inch apart onto lightly greased baking sheet. Bake until puffed and golden, 20 to 25 minutes.
- Tip-Top Puffs: Place pimiento-stuffed olive or 1/2 inch-square cheese slice on each puff. Bake as directed.
- Filled Puffs: Place salted peanut, 1/2 inch ham or bologna cube or half of pimiento-stuffed olive on each puff. Top with enough dough to cover. Bake as directed.

- Melt butter in a large skillet over medium-low heat. Add onions, brown sugar, and vinegar; cook, stirring frequently, until onions are golden brown and caramelized, about 15 minutes. Transfer to a bowl with a slotted spoon and cool to room temperature.
- Roll puff pastry out into a 11x18-inch rectangle on a lightly floured surface. Spread Brie cheese over pastry. Layer with caramelized onions and sprinkle with caraway seeds. Roll up one long edge towards the center. Roll up from the other side so the 2 rolls meet in the center. Cut into 1/2-inch slices using a serrated knife.
- Line a baking sheet with parchment paper. Arrange slices on top; flatten to 1/4-inch thickness. Refrigerate for 15 minutes.
