Caramelized Onion and Coarse-Grain Mustard Mashed Potatoes image

From the Trenton Times: Caramelized onions practically melt into the warm potatoes, and coarse-grain mustard adds a pretty golden-flecked hue and subtle flavor. Cook time does not include time to make caramelized onions. I have made this using a combination of red potatoes and red gold potatoes and I don't bother to peel them. I also prefer to caramelize the onions in the crockpot on high for 3-4 hours.

2 lbs russet potatoes, peeled and cut into chunks
1/3 cup half-and-half
2 tablespoons butter
1 -2 tablespoon coarse grain mustard
1/4-1/2 cup caramelized onion
salt and pepper

Steps:

  • Boil potatoes in a large saucepan over medium heat in salted water to cover for 15 to 20 minutes, or until tender.
  • Drain water. Return to pan to heat for 1 to 2 minutes, shaking occasionally to dry out any remaining water.
  • Add the half-and-half and butter, and heat over medium heat just until the milk starts to simmer.
  • Remove from heat. Add the mustard and onions and mash to desired consistency. Taste and add more mustard if necessary.
  • Add salt and pepper to taste. Serve hot.
  • Note: To caramelize onions, heat 1 Tbsp olive oil in a heavy-based skillet. Add 1 thinly sliced medium yellow onion. Cook and stir over medium heat for 5 minutes until onion starts to soften. Lower heat and sprinkle with 1/4 tsp salt and a pinch of granulated sugar. Cook 20 minutes or until deep golden brown, stirring frequently. Lower heat if necessary to keep onions from burning. These freeze beautifully, so you can make extra to freeze for later use.

Caramelized onions and roasted garlic add deep flavor to buttery mashed potatoes.

2 to 4 heads garlic, depending on size
2 tablespoons olive oil
2 tablespoons olive oil
3 onions, sliced
2 pounds Idaho or Yukon gold potatoes, unpeeled
Kosher salt and freshly ground black pepper
1 cup whole milk
1 stick (8 tablespoons) unsalted butter

Steps:

  • Preheat the oven to 350 degrees F.
  • Slice the heads of garlic in half crosswise and drizzle with the oil. Wrap the garlic in foil and roast until creamy, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and mash lightly with a fork.
  • Heat the oil in a large skillet set over medium heat. Add the onions and cook, stirring occasionally and lowering the heat if the onions begin to burn, until golden, about 30 minutes.
  • Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and simmer the potatoes, uncovered, until tender, about 45 minutes. Drain.
  • Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Add the onions. Mash the potatoes and onions with the milk and butter using a fork or potato masher. Stir in the roasted garlic and 2 teaspoons salt; season with pepper.

While the potatoes are boiling, saute sliced white onions in olive oil or butter over low heat until soft and deeply caramelized. Add quartered potatoes to a large pot filled with salted water. Bring to a boil, then cover and turn to low. Cook until fork-tender, about 10 minutes. Drain potatoes and add to large bowl with sour cream, onions and the rest of the butter. Mash with potato masher or with an electric mixer until desired consistency is reached.

  • In a medium saucepan, combine potatoes, garlic, and enough water to cover by 1 inch. Bring to a boil; add salt. Cover; reduce heat, and simmer until tender, 15 to 20 minutes. Drain, reserving 1 cup liquid.

1 Vidalia onion, peeled and coarsely chopped, about 1 cup
1 fennel bulb, core removed, coarsely chopped
2 teaspoons sugar

1 eight-ounce container low-fat sour cream
1 cup 1 percent milk
Olive-oil cooking spray

Steps:

  • Place potatoes in a large saucepan with enough cold water to cover. Place over high heat, and bring to a boil. Reduce heat to simmer, and cook until potatoes are tender when pierced with a fork, about 20 minutes. Drain in a colander, and carefully remove skins. Pass potatoes through a ricer into a large bowl.
