HOMEMADE CARAMEL POPCORN

Homemade Caramel Popcorn image

This homemade caramel popcorn recipe has the perfect crunch as you bite into each handful of candy coated kernels.

Provided by Jessica Gavin

Categories     Snack

Time 25m

Number Of Ingredients 9

3 tablespoons vegetable oil
½ teaspoon kosher salt
¼ cup corn kernels (3 cups popped corn for recipe)
¼ teaspoon ground cinnamon
¾ cup granulated sugar
2 tablespoons water
1 ¼ cups peanuts (dry roasted unsalted )
1 pinch kosher salt
2 tablespoons unsalted butter

Steps:

  • In a large heavy pot (5-6 quarts size), heat the oil and ½ teaspoon salt over medium-high heat. Add 1 to 2 kernels and cover pot. When the kernels pop, immediately insert the ¼ cup of kernels and cover pot.
  • Gently shake the pot, sliding it over the burner until the popping slows to a few seconds between pops. This should take around 4 to 5 minutes. Listen for the popping to stop. Turn off the heat and pour popcorn on a sheet pan to cool.
  • In a medium-sized bowl, add 3 cups of the cooled popcorn. Sprinkle cinnamon over the popcorn. Toss until evenly coated.
  • Lightly spray a sheet pan with baking spray. Grease the bottom of a spatula with the baking spray.
  • In a large saucepan, combine sugar with two tablespoons of water. Cook over medium heat, occasionally stirring until the sugar is dissolved and the liquid is clear. Use a heat stable on-metallic spoon for stirring.
  • Add the peanuts and pinch of salt. Increase heat to high and cook, constantly stirring, until the sugar begins to turn amber at the edges. About 2 to 3 minutes. The sugar will look granular but will melt into caramel with time.
  • Continue cooking and stirring to even out the color for another 4 to 6 minutes, until the caramel is liquid and medium amber in color. Be careful as the caramel can burn if cooked too long.
  • Turn off heat and remove the pan from the stove. Add the butter, and quickly stir.
  • Immediately add 3 cups of popcorn and stir until evenly coated with the caramel.
  • Carefully and quickly pour the caramel popcorn mixture onto the greased sheet pan. Using the greased spatula, spread into a thin layer. Do not touch the caramel popcorn because it is extremely sticky and hot.
  • Cool at room temperature for 1 hour or until the mixture completely cools and hardens.
  • Break the caramel popcorn into small clusters and store in an airtight container for up to 5 days.

NUTTY CARAMEL CORN

Nutty Caramel Corn image

Provided by Valerie Bertinelli

Categories     dessert

Time 40m

Yield about 10 cups

Number Of Ingredients 9

Nonstick cooking spray
3 tablespoons coconut or vegetable oil
Slightly rounded 1/2 cup popcorn kernels
3/4 cup light brown sugar
1/4 cup light corn syrup
6 tablespoons unsalted butter
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 cup roasted, salted mixed nuts

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with a piece of parchment paper and spray lightly with cooking spray.
  • Put the oil and 3 or 4 popcorn kernels in a large pot with a lid (at least 6 quarts). Cover the pot and turn the heat up to medium-high. Wait until you hear one of the kernels pop, then uncover the pot and add the remaining kernels. Quickly stir everything together then replace the lid. Cook the popcorn until the kernels begin popping and then reduce the heat slightly. Cook, shaking often, until the rate of popping starts to slow, 2 to 3 minutes. Do not wait for all of the kernels to pop or they will burn. Take off the heat.
  • Combine the brown sugar, corn syrup, butter and salt in a medium pot. Heat over medium heat until melted and smooth. Stir in the baking soda.
  • Pour the nuts on top of the popcorn. Then pour the caramel into the pot with the popcorn; stir to coat and spread the popcorn onto the prepared baking sheet.
  • Bake, stirring occasionally, until slightly golden, about 20 minutes. Cool completely, and then break apart before serving.

  • Line a large 15 x 21 inches jelly roll pan with foil (or use a large aluminum turkey roasting pan). Spray lightly with nonstick cooking spray. Add popcorn to pan in an even layer and place in the oven to warm (it’s okay if the oven isn’t all the way at 200 yet - caramel spreads much easier over warm popcorn).
  • Melt butter in a large saucepan over medium heat. Once melted, stir in brown sugar, corn syrup, and salt. Whisk until sugar dissolves.
  • Bring to a boil over medium heat, stirring occasionally. Once the caramel begins to gently boil, boil for 2-3 minutes stirring constantly (it will bubble quite a bit, just start timing when it begins to gently boil).

  • This recipe requires working very quickly to prevent your ingredients from burning, so begin by measuring out the ingredients. When you unwrap the caramels, keep them separated on a sheet of parchment or wax paper. Caramels tend to stick to glass and plastic. Try to keep the caramels separated (not clumped together into one ball) so they melt faster, thus preventing burning.
  • Make the popcorn. Add the coconut oil to the Whirley-Pop stovetop popcorn maker and heat on medium heat (do not preheat the burner before adding the coconut oil).
  • Once the coconut oil has melted (after approximately 30 seconds), add the popcorn kernels to the Whirley-Pop. Close the Whirley-Pop lid and turn the crank constantly until the sound of popping popcorn slows, then remove from the heat.

  • Spread the popped popcorn over a large cake pan or cookie sheet that has sides. Set the pan aside while you prepare the caramel coating. (For easy clean up, you can line your pan with parchment paper)
  • To begin the coating, use a medium saucepan, or dutch oven, and melt the sugar, butter, and corn syrup on medium to high heat. Be sure to stir it constantly to avoid burning. It will begin to bubble and pull away from the sides of the pan. Continue stirring for about 1-2 more minutes before removing from the stove top. Stir in the baking soda, which will begin to foam in the mixture. Keep stirring until it is well combined.
  • Pour the mixture evenly over the popcorn and toss the popcorn so each piece is coated in the caramel sauce. Use a rubber spatula to do this and not your hands! The caramel is VERY hot! (You can even divide the popcorn into two smaller cookie sheets, so you have more room to combine it with the caramel.)
