MINI ROSEWATER TRIFLES WITH CARDAMOM CREAM



Mini Rosewater Trifles with Cardamom Cream image

Nonstick cooking spray, for the pan
2 cups almond flour
1 1/2 cups all-purpose flour
1 teaspoon kosher salt
3 cups sugar
1 1/2 cups (3 sticks) unsalted butter, softened
6 large eggs
1 teaspoon almond extract
3/4 teaspoon orange blossom water
Zest of 1/2 lemon
1 pint blackberries
1 pint strawberries, stemmed and quartered
1/2 pint blueberries
1/2 pint raspberries
2 tablespoons sugar
Splash rosewater
Zest of 1 lemon
3 cups heavy cream
1 cup whole-milk Greek yogurt
1 teaspoon ground cardamom
8 ounces candied rose petals
8 ounces roasted, unsalted pistachios

Steps:

  • For the orange blossom almond cake: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch loaf pan with cooking spray and line the bottom with parchment.
  • Whisk together the almond flour, all-purpose flour and salt in a medium bowl; set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment, cream together the sugar and butter until light and fluffy, for a few minutes. Add the eggs one at a time, mixing well after each. Add the almond extract, orange blossom water and lemon zest. With the mixer on low, add the dry ingredients and mix to combine.
  • Scrape the batter into the prepared cake pan and bake until browned on top and a toothpick inserted into the center comes out clean and the edges are just slightly pulling in from the pan. Begin checking for doneness at 55 minutes. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  • For the rosewater fruit: Add the blackberries, strawberries, blueberries, raspberries, sugar, rosewater and lemon zest to a medium bowl. Toss to combine and gently macerate with the back of a wooden spoon or spatula to release the juices from the berries. Cover with plastic wrap and allow the berries to marinate for 30 minutes and up to 4 hours.
  • For the cardamom cream: Whip the cream in a large bowl with a whisk or mixer until stiff peaks form. Fold in the Greek yogurt and cardamom until just combined. Set aside.
  • For serving: Slice the cake into 3/4-inch cubes. Distribute half of the whipped cream among twelve 12-ounce glasses. Top with half the fruit among the glasses. Then layer the cake (there will be extra cake leftover or you can use extra cake here), 8 to 10 cubes per glass. Finally, distribute the remaining fruit on top of the cake, then the whipped cream on top of that. Using the sharp edge of an offset spatula, swipe the top of the whipped cream so it creates a flat surface of cream flush with the rim of each glass. Garnish with a few candied rose petals and roasted pistachios as desired. Serve!

From: "Classic Vegetarian Cooking from the Middle East & North Africa"-Arabian Gulf. This is the BEST fruit salad my husband or I have ever tried! It's easy, healthy, refreshing and WONDERFUL. You have to like cardamom to really appreciate it though. You may find yourself doubling the sauce in the future because you want to drink it up. I don't repeat very many recipes because there are too many new ones to try but this one is repeated over and over during cantaloupe season. I'm sure it would work with other fruits as well but I like this combo so much I haven't experimented.

1 medium cantaloupe, peeled and cut into 1/2-inch cubes (2 lbs)
2 medium seedless oranges or 2 medium tangerines, peeled sectioned and sections cut in half
2 medium apples, peeled cored and cut into 1/2-inch cubes (I use Fuji)
1/2 cup seedless raisin (I use golden)
1/2 cup honey
2 tablespoons water
1/2 teaspoon ground cardamom
1/4 cup fresh lemon juice or 1/4 cup orange juice

Steps:

  • Sauce: In a small saucepan, combine honey, water and cardamom and bring to a boil, stirring a few times simmer for 2 minutes and remove from heat. Stir in lemon juice and cool completely.
  • When sauce is cooled- toss it together with the fruit and refrigerate until it's ready to be served.
  • Make sure to include some of the sauce with each serving!

1 tablespoon black cardamom seeds

Steps:

  • In a small saucepan, bring 1 cup of heavy cream and the cardamom to a boil. Reduce until only 1/4 cup remains. Allow to cool. Reserve. Whip the remaining 1 cup of heavy cream until stiff peaks form. Stir in the reserved mixture. Chill until ready to serve.

What is required here is not a cream that one can go out and buy. This "cream" is really a kind of pudding or kheer, thickened by boiling milk down, not by adding starch to it. In order to take some of the labor out of the process, Indians have taken to adding condensed milk. This works very well indeed. This is a thinnish cream, ideal to serve with fruit. I put the cut-up fruit (mangoes, guavas, pears, peaches, and bananas are ideal, but I have used berries as well) in individual bowls, or in old-fashioned ice cream cups, and then pour the flavored cream over the top.

Yield makes 2 cups and serves 4¿6

4 cups whole milk
6 cardamom pods
1/4 cup sugar
1/2 cup sweetened condensed milk

Steps:

  • Bring the milk to a boil over medium or medium-low heat in a very heavy, wide pan, deep enough to let the milk rise a bit without boiling over. Stir as the milk heats. (I prefer to heat up my milk in a microwave oven and just pour it into the pan to speed up matters.) As soon as the milk starts bubbling, add the cardamom pods and stir. Adjust the heat, generally to medium low, so the milk simmers steadily without boiling over or catching at the bottom. Cook this way, stirring now and then, for about 25 minutes. Stir in any skin that forms. (It tastes very good when cold.) Add the sugar and condensed milk. Stir and cook another 10 minutes. Remove cardamom pods, cover, and cool in the refrigerator.

SEMLOR (CARDAMOM CREAM BUNS)

Following the Christian tradition of exhausting supplies of animal products, such as butter and eggs, before Lent, many Swedes enjoy cream-filled, cardamom-scented semlor on the final day before fasting. "We Swedes call Mardi Gras 'Semmeldagen' or 'Semlor Day,'" explained Ingrid Schatz, who serves this recipe at her Swedish-focused Axelsdotter Bakery, in Richmond, Va. She uses a blend of both fine and coarsely ground cardamom, which gives more concentrated bursts of cardamom flavor, but you can simply use finely ground cardamom. A word of advice: Before filling the buns with almond cream, set one aside and slather its soft interior with butter for an irresistible snack.

7 tablespoons/100 grams unsalted butter
5 tablespoons/60 grams granulated cane sugar
14 grams active dry yeast
1 1/4 teaspoons ground cardamom
1 1/3 cups plus 1 tablespoon/333 milliliters whole milk
4 1/2 cups/535 grams bread flour (preferably King Arthur)
3/4 teaspoon fine salt
1 (7-ounce/198-gram) package Odense almond paste
2 cups/480 milliliters heavy whipping cream, plus 3 tablespoons (or more as needed)
1/2 cup/62 grams confectioners' sugar, plus more for garnish
1 teaspoon vanilla extract

Steps:

  • Prepare the dough: Melt the butter in a small saucepan over low heat. Weigh the cane sugar and yeast into the bowl of a stand mixer; add the cardamom.
  • Once the butter has melted, add the milk to the saucepan and allow it to warm up just slightly. The Swedes call this fingervarm, just above body temp. Add the milk-butter mixture to the bowl of the stand mixer and allow to sit for a couple of minutes, stirring once to combine.
  • Once the yeast starts to dissolve and activate (you'll see foam starting to appear on the surface), add the flour and salt. Mix on low speed with a dough hook until combined, then increase the mixing speed to medium and allow to mix for 3 to 5 minutes, until the dough is soft and smooth.
  • Remove the dough from the mixer and knead into one large ball and allow to rest in a large bowl, covered with plastic wrap, until roughly doubled in size, about 45 minutes.
  • Use a bench scraper or sharp knife to portion the dough into individual buns, each weighing 100 grams. If there is any dough left over, divide it into pieces and add to the rest.
  • To shape, flatten a portion of dough and fold the edges in toward the center to create surface tension in the dough, flip over so the seam you have created is facing down and roll clockwise with a cupped palm to form a tight ball. Repeat with each piece. Place onto parchment-lined baking sheets with about 3 inches of space between each bun. Cover with plastic wrap and allow to rise until almost doubled in size, about 45 minutes.
  • Heat the oven to 400 degrees. Remove the plastic wrap and bake for 12 to 14 minutes, rotating the pans and switching their position halfway through baking. The buns should be golden and have a hollow sound when tapped on the bottom when done. Transfer to a cooling rack and let sit until cool enough to handle.
  • While buns are baking, prepare the filling: Add the almond paste to the bowl of a stand mixer fitted with the paddle attachment. Add about 3 tablespoons of heavy cream and mix until it has a spreadable consistency (you may need more cream); transfer to a small bowl and set aside.
  • Once the filling is made, using a clean mixing bowl and the whisk attachment, combine the rest of the heavy cream, confectioners' sugar and vanilla and whip the cream to stiff peaks. Transfer the cream to a piping bag fitted with a large star tip.
  • To assemble the buns, begin by cutting the top third of the buns off horizontally and save the tops. Using your fingers, hollow out a small portion of the center of the buns and fill with about a tablespoon of the almond filling. Using an offset spatula, spread the paste to reach the edges of the cut portion of the bun.
  • Use the piping bag to pipe the whipped cream into a swirl on top of the almond filling. (Don't be afraid to go high!)
  • After the semlor are all filled, cut the reserved tops into triangle shapes and place them on top of the whipped cream. Sprinkle the semlor with confectioners' sugar to serve.
