1 3/4 pounds boneless skinless chicken breast halves, cut into 1 1/2-inch pieces
1/4 cup vegetable oil
3 tablespoons Caribbean jerk seasoning (dry)
1 small pineapple, rind removed and pineapple cut into 1-inch cubes
1 medium red bell pepper, cut into 1-inch pieces
1 small red onion, cut into 1-inch pieces

Steps:

  • Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.
  • Brush chicken with 2 tablespoons of the oil. Place chicken and jerk seasoning in resealable plastic food-storage bag. Shake bag to coat chicken with seasoning. Thread chicken, pineapple, bell pepper and onion alternately on each of eight 12-inch metal skewers, leaving 1/4-inch space between each piece. Brush kabobs with remaining 2 tablespoons oil.
  • Cover and grill kabobs over medium heat 15 to 20 minutes, turning once, until chicken is no longer pink in center.

1 egg, lightly beaten
1 pound ground beef
1 tomato, finely chopped
1 red onion, finely chopped
¼ cup finely chopped cilantro
¼ cup finely chopped mint
2 teaspoons ginger-garlic paste
2 teaspoons coriander seeds, crushed
1 teaspoon salt
¾ teaspoon ground cumin
¾ teaspoon ground cayenne pepper
¼ cup vegetable oil for frying, or more as needed
2 tomato, sliced into rounds

Steps:

  • Spray a small skillet with cooking spray; warm over medium-high heat. Pour egg into the skillet; cook and stir until scrambled and set, 3 to 5 minutes.
  • Combine scrambled egg, beef, chopped tomato, onion, cilantro, mint, ginger-garlic paste, coriander seeds, salt, cumin, and cayenne pepper in a bowl. Mix by hand until well combined. Shape mixture into patties. Press a tomato slice into the center of each patty.
  • Heat oil in a deep skillet to 375 degrees F (190 degrees C). Cook patties in the hot oil in batches until charred, 4 to 6 minutes per side.

1/4 cup mango chutney
1 tablespoon water
1 tablespoon cider vinegar
1 teaspoon curry powder

1 pound beef top sirloin steak, cut into 1/4-inch strips
CHUTNEY SAUCE:
1/2 cup plain yogurt
3 tablespoons mango chutney
1 teaspoon lemon juice
1/2 teaspoon curry powder
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper

Steps:

  • In a large shallow dish, combine the first 5 ingredients. Add the beef; turn to coat. Refrigerate, covered, overnight., In a small bowl, combine the sauce ingredients. Cover and refrigerate until serving., Drain beef, discarding marinade. Thread beef onto 8 metal or soaked wooden skewers., On a lightly oiled grill rack, grill kabobs, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes or until meat reaches desired doneness, turning occasionally. 1 (16 ounce) can pineapple chunks
1/2 cup soy sauce
1/4 cup honey
1 garlic clove, minced
1/2 teaspoon ground ginger
1 green peppers, cut into 1-inch pieces or 12 cherry tomatoes

Steps:

  • Cut chicken in 1" cubes.
  • Drain pineapple, reserving 1/3 cup juice. Set pineapple aside.
  • Combine pineapple juice and next 4 ingredients for marinade. Marinate chicken for at l east 1 hour.
  • Arrange chicken, pineapple chunks and vegetable on skewers. Reserve marinade.

Steps:

  • In a small bowl, combine the shrimp, ginger, garlic and pepper; set aside. In another small bowl, combine the scallops, paprika and cayenne; set aside. Place the pineapple, mango, pear, 2 tablespoons lime juice and allspice in a small bowl; toss to combine. , On 12 metal or soaked wooden skewers, alternately thread the shrimp, scallops, fruits and serrano peppers. 2 large red bell peppers, ribs and seeds removed, cut into 24 pieces (about 1 1/2 inches each)
2 tablespoons dark rum
1 tablespoon olive oil, plus more for grill
1 1/2 teaspoons curry powder (preferably Madras)
1/4 teaspoon ground allspice
1/8 to 1/4 teaspoon cayenne pepper
Coarse salt
Cilantro Dipping Sauce

Steps:

  • Heat grill to high. Assemble 8 kebabs (using 2 short skewers for each), alternating 4 shrimp with 3 pieces of pepper on each. Arrange skewers in a nonmetallic dish.
  • In a small bowl, whisk together rum, oil, curry powder, allspice, and cayenne. Pour marinade over skewers, and turn to coat. Let stand 5 minutes. Season with salt.
  • Lightly oil grates. Place skewers on grill; cover grill, and cook until grill marks are visible and shrimp are opaque throughout, 2 to 3 minutes per side. Season with more salt, if desired. Serve with sauce.

¼ cup orange juice
2 tablespoons fresh lime juice
2 tablespoons mango chutney
2 teaspoons grated fresh ginger
1 tablespoon olive oil
½ teaspoon hot pepper sauce
1 teaspoon minced fresh oregano
2 cloves garlic, minced

Steps:

  • In a nonporous glass dish or bowl combine the orange juice, lime juice, chutney, ginger, oil, pepper sauce, oregano and cloves. Mix all together and add chicken. Toss to coat, cover dish and place in refrigerator. Marinate overnight.
  • Preheat grill to medium high heat or set oven to broil
  • Remove chicken from dish (dispose of remaining marinade) and grill or broil the chicken 6 inches from the heat source.

1/3 cup A.1. Thick & Hearty Sauce
2 Tbsp. chopped fresh cilantro
2 Tbsp. honey
1 tsp. zest and 3 Tbsp. juice from 2 or 3 limes
1/2 tsp. grated fresh ginger
1-1/2 lb. beef flank steak, cut into 1/2-inch-wide strips

Steps:

  • Mix all ingredients except meat until blended.
  • Thread meat onto 6 skewers; place in shallow glass dish. Pour 1/2 cup steak sauce mixture over kabobs. Refrigerate 30 min. to marinate, turning occasionally.
  • Heat grill to medium heat. Remove kabobs from marinade; discard marinade. Grill kabobs 12 to 15 min. or until meat is done, turning occasionally and brushing with remaining steak sauce mixture for the last 5 min.

10 bamboo skewers
1/2 medium fresh pineapple
1 medium red bell pepper, cut into 1 inch pieces
3/4 lb boneless skinless chicken breast, cut into 1-inch pieces
1/2 cup mango chutney, bottled
2 tablespoons orange juice or 2 tablespoons pineapple juice
1 teaspoon vanilla
1/4 teaspoon ground nutmeg

Steps:

  • Soak skewers in water at least 20 minutes before assembling kabobs to prevent burning.
  • Peel and core pineapple, cut into 1 inch chunks.
  • Alternately thread bell pepper, pineapple and chicken onto skewers.
  • Place in a shallow baking dish.
  • Combine chutney, orange juice, vanilla and nutmeg in a small bowl; mix well and pour over kabobs;

  • Peel the onions and chop.Using a large heavy pan, heat the oil then add the onions and cook until they become transparent. Make sure you don't let the onions brown as this will result in a bitter taste.
  • Add the remaining ingredients to the pan. Stir to combine and leave to boil on a medium heat for 30 minutes stirring occasionally to ensure nothing sticks to the bottom of the pan.
  • After 30 minutes, turn the heat down and let the chutney reduce down until it becomes a thick jam like consistency. This should take between 1 1/2 to 2 hours. Stir every now and again to prevent sticking to the bottom of the pan. When the chutney has reduced enough so it is thick (like jam), you can use a potato masher to mash it down or if you like the texture lumpy, leave as it is. I have mashed mine (in the photo above) until it is only slightly lumpy.
  • If you are going to use the chutney within the next few days, it will keep nicely in the fridge once cooled, in an air tight container.
