Use taco seasoning mix, black beans and fresh mango to create a tropical-tasting taco dip.

1 package (8 oz) cream cheese, softened
1/2 cup sour cream
1 tablespoon Old El Paso™ taco seasoning mix (from 1-oz package)
1 can (15 oz) Progresso™ black beans, drained, well rinsed
1/2 cup chopped red bell pepper
1/2 cup chopped mango
2 tablespoons chopped fresh cilantro
1 to 2 teaspoons finely chopped jalapeño chiles
Lime-flavored or plain tortilla chips

Steps:

  • In small bowl, mix cream cheese, sour cream and taco seasoning mix with spoon or electric mixer on medium speed until well mixed. Spread on 10-inch round serving plate.
  • Top cream cheese mixture with remaining ingredients except tortilla chips. Serve immediately, or refrigerate until serving. Serve with tortilla chips.

Steps:

  • Preheat oven to 350.
  • Combine butter, sugar and flour in mixing bowl, blending well; set aside.
  • Lightly spray 2 quart casserole.
  • Spread pineapple and pie filling in bottom of dish.
  • Sprinkle with sugar mixture and bake at 350 for 20-30 minutes or until golden brown.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup coconut
1 tablespoon grated lime peel (about 1 lime)
3 tablespoons lime juice
6 tablespoons butter or margarine, melted
1 egg
1/4 cup powdered sugar

Steps:

  • Heat oven to 350°F. In large bowl, stir cookie mix, coconut, lime peel, lime juice, butter and egg until soft dough forms.
  • Drop dough by level tablespoonfuls 2 inches apart onto ungreased cookie sheets.
  • Bake 9 to 13 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheet. Cool completely, about 15 minutes.
  • With small strainer, sift powdered sugar over cooled cookies. Store covered at room temperature.

15 ounces cream of coconut
1 1/2 cups orange juice
6 cups ice
1/4 cup heavy cream
46 ounces pineapple juice

Steps:

  • In a blender, puree a can of cream of coconut, orange juice, 4 cups ice, and heavy cream until smooth.
  • Pour half of mixture into serving pitcher. Add 2 cups of ice and 1 cup pineapple juice to the blender. Puree and add to pitcher. Stir remaining pineapple juice into pitcher.
