CHAI TEA BREAD



Chai Tea Bread image

I love chai tea and thought I would try incorporating it into a bread recipe. This is a bread machine recipe. I ran it on the Dough cycle and then braided and baked the bread in the oven.

1 cup 2% milk
3 chai tea bags (such as Oregon Chai®), divided
3 cups bread flour
1 egg, separated
2 tablespoons butter, softened
⅓ cup white sugar
2 ¼ teaspoons active dry yeast
½ teaspoon salt
1 tablespoon water
1 tablespoon white decorator sugar, or to taste

Steps:

  • Heat milk in the microwave for 1 minute. Steep 1 tea bag in the warm milk for 7 to 10 minutes. Whisk contents of the remaining tea bags into flour.
  • Pour milk into a bread machine, discarding tea bag. Add egg yolk, butter, flour, sugar, yeast, and salt, in that order. Run Dough cycle.
  • Remove dough from the machine after the cycle is done, about 90 minutes. Place on a floured surface and punch down gently. Divide dough into 3 equal parts and braid together. Tuck ends under.
  • Place the braided loaf on a greased baking pan and cover loosely with a towel. Let rise in a warm place until doubled, about 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Whisk egg white with water to make egg wash. Brush egg wash over the loaf. Sprinkle decorator sugar on top.
  • Bake in the preheated oven until golden brown, about 20 minutes.

9 ounces dried red sorrel buds
3 teaspoons grated ginger
3 strips dried orange zest
1 white clove
1 quart water
⅔ cup white sugar
ice cubes

Steps:

  • Combine sorrel, ginger, dried orange zest, and clove in a bowl.
  • Bring water to a boil in a saucepan or kettle; pour over sorrel mixture. Stir in sugar until dissolved. Let mixture steep at room temperature, 8 hours to overnight.
  • Strain sorrel mixture through a fine-mesh sieve into a pitcher; discard solids. Serve over ice.

1/2 cup margarine
1/2 cup sugar
1 teaspoon vanilla
1 egg, well beaten
2 cups flour
1 tablespoon baking powder
1/2 teaspoon ground nutmeg
1/4 teaspoon allspice
1 pinch salt
3 medium ripe bananas, mashed
1/4 cup nuts, chopped
1/4 cup raisins

Steps:

  • Cream together first four ingredients.
  • Sift together flour, baking powder and spices.
  • Gradually add banana, then flour mixture alternately to margarine mixture. The result will be a sticky dough.
  • Mix in raisins and nuts.
  • Turn into greased 9-inch loaf pan. Bake 55 minutes at 350 degrees until golden brown.

50 g butter, melted
155 ml milk
2 eggs, lightly beaten
280 g plain flour
15 ml baking powder
1 pinch salt
115 g caster sugar
25 g desiccated coconut
75 g ready to eat dried tropical fruit, coarsely chopped

Steps:

  • Remove the bread pan from the bread machine and fit the kneader.
  • Add the melted butter, milk and eggs to the bread pan. Sift the flour, baking powder and salt together. Stir in the caster sugar, desiccated coconut and tropical fuits.
  • Sprinkle the mixture over the liquids in the bread pan.
  • Insert and lock the bread pan into the bread machine. Select program 10 (Cake/Quick Bread). Press start. After 6 minutes, open the lid and, using a plastic spatula, scrape down the sides of the bread pan to remove any dry flour pockets.
  • At the end of the cycle, turn off and remove the bread pan, using oven gloves.
  • Leave to stand on a cooling rack for 5 minutes then turn out and place on a wire rack to cool.
