CARIBBEAN-STYLE OXTAILS

Steps:
- Add the olive oil to the One Pot (or any pressure cooker, or a Dutch oven) and heat over medium heat until hot. Season the oxtails with the salt and pepper. Add half of the oxtails to the One Pot and cook until well browned on both sides, about 3 to 4 minutes per side. Set the seared oxtails on a platter once browned and repeat with the remaining oxtails.
- Once all the oxtails are browned, add the onions, carrots and celery to the pan. Saute the vegetables until softened, about 3 to 4 minutes. Add the leeks, garlic, green onions and ginger to the pan and saute for 1 minute, stirring often. Add the tomato paste and stir well to incorporate. Sprinkle the flour over the vegetables and stir to combine. Cook, stirring, for 3 minutes. Add the beer to the One Pot and increase the heat to medium-high. Bring the beer to a boil and cook for 5 minutes.
- Add the stock and allspice, stir, and return the oxtails to the pan. Return the pan to a boil and place the lid over the pan. Once a steady stream of steam is emitted from the pan, lower the heat to a simmer, and cook the oxtails until tender, about 1 hour in a pressure cooker or 2 hours in a Dutch oven. Remove the lid, and stir the chopped parsley into the pan. Serve immediately.
CARIBBEAN PANCAKES
My son and I like to make different flavored pancakes. This recipe was created from ingredients found in the pantry and it's often requested by the rest of the family as it's considered the best pancakes we have ever made. The caramelized marshmallows and white chocolate chips are what makes these great! Serve with whipped cream.

Steps:
- Combine pancake mix, water, vanilla, and banana extract in a large bowl. Stir just until large lumps disappear; do not overmix. Let stand until thickened, 1 to 2 minutes.
- Heat a lightly oiled griddle over medium heat. Pour a ladleful of batter onto the griddle; sprinkle a few marshmallows, white chocolate chips, and coconut flakes on top. Cook until bubbles form, 3 to 4 minutes. Flip and cook until edges are dry and bottom is golden brown; marshmallows and chocolate chips will melt and caramelize into the pancake. Repeat with remaining batter and toppings.

CARIBBEAN BAKED TOFU CUTLETS
There are several ways to serve these cutlets. I like to serve them hot alongside a rice dish or cut up as an appetizer.

Steps:
- Press tofu slices between two pans for one to two hours to squeeze out the wanter and compress the tofu.
- While tofu is draining, combine remaining ingredients. Mix well and set aside.
- Preheat over to 350 degrees.
- Lightly oil a 7 X 11 inch baking pan.
- Spoon about a third of the sauce into prepared pan. Place pressed tofu on sauce and top with remaining sauce.
- Bake uncovered, 45 minutes.
- NOTE: preparation time does not include the one - two hours to compress the tofu.

TOFU CUTLETS
This recipe is so quick and easy to make, yet it adds a wonderfully tasty protein to many of my vegetarian meals. Add some steamed brown rice and sauteed broccoli with garlic for a filling and delicious meal in minutes!

Steps:
- Slice the low-fat tofu into 1/4 inch thick slices. Set aside.
- Using a non-stick frying pan, spray the pan with olive oil cooking spray and pre-heat pan over a medium heat. (Be careful not to turn the heat up to a high setting because the cooking spray will begin to smoke in the pan - and that's not good).
- Combine the Nutritional Yeast, Curry Powder and Thyme into a plastic sandwich bag with a zip closure and zip and shake to mix the dry ingredients.
- Open the bag and add a tofu slice, seal the bag and shake well to coat completely.
- Remove the coated slice of tofu from the bag using a fork and place it carefully into the heated frying pan.
- Repeat steps 4 and 5 until all of your tofu slices are in the pan.
- While the slices are sauteeing on one side, spritz the slices with the liquid aminos.
- Use a spatula to flip the slices after about 2 to 3 minutes.
- Continue cooking for another 2 to 3 minutes or until uniformly brown.
- Remove from heat and enjoy!
