From time to time I receive e-mails asking some common questions for an Authentic Carne Asada recipe, the first one being how to marinate the meat. I always give out the same answer: every cook or grill master has their own unique way of seasoning their meat. I hope you enjoy this delicious recipe.

2 pounds of flank steak or skirt steak
The juice of 1 orange
The juice of 2 limes
1/4 cup of light beer
2 tablespoons of Kikkoman Soy Sauce
2 tablespoons of vegetable oil
Fresh ground pepper to taste
1 large white onion sliced (optional)
Vegetable oil to brush the grill before grilling
Corn tortillas
Guacamole
Salsa
Lime wedges
Grilled green onions and nopales or a salad of your choice.

Steps:

  • Place the flank steak in a large baking dish and, if using the sliced onion, spread the slices over the meat.
  • In a medium-sized bowl mix together the orange juice, lime juice, light beer, Kikkoman soy sauce, vegetable oil, and freshly ground black pepper.
  • Pour the marinade over the meat; cover with a plastic film and refrigerate for at least one hour.
  • Light up your charcoal grill, or preheat your gas grill. (You can also use a cast iron grill pan, the ones you use over the stove top). And brush your grill with a little vegetable oil as this will prevent the meat from sticking.
  • Remove meat from marinade and pat dry. Place meat on the grill and cook for 8 to 10 minutes per side. (Cooking time will depend on the meat thickness and your personal preferences, either medium or well done). Remove meat from grill and place it on your cutting board. Slice it and serve it with corn tortillas and other garnishes mentioned above.
  • If you would like to have the same effect as that of the Mexican-American restaurant, place the cooked meat on a preheated cast iron pan, add a few drops of Soy Sauce and serve immediately. Enjoy!

2 pounds skirt steak
1/2 cup cilantro leaves and stems, finely chopped
1/2 cup olive oil
1/3 cup freshly squeezed orange juice (1 large orange)
1/4 cup freshly squeezed lime juice (2 limes)
3 tablespoons honey
2 tablespoons Mexican oregano or other oregano
4 cloves garlic
1 serrano chile, seeds removed
Kosher salt and freshly ground black pepper
2 limes, cut into wedges, for serving

Steps:

  • Place the skirt steak in a large glass bowl or resealable plastic bag.
  • To make the marinade, add the cilantro, olive oil, orange juice, lime juice, honey, oregano, garlic and serrano chile to a blender. Season with a small pinch of salt and pepper. Blend for 35 to 40 seconds to combine.
  • Pour the marinade all over the steak, moving it around to make sure everything is covered. Cover or seal and transfer to the refrigerator and allow to marinate for at least 1 hour, but no more than 6 (too long in the marinade will cause the steak to begin breaking down).
  • Preheat a grill or grill pan over medium-high heat.
  • When ready, remove the steak from the marinade, letting the excess drip off. Sprinkle generously with salt and pepper and grill about 4 minutes per side for medium.
  • Remove to a cutting board and allow to rest for 5 to 7 minutes. Slice the steak against the grain and serve with the lime wedges.

5 pounds beef skirt steak, thinly sliced
1 cup water
1 orange, sliced
⅔ cup orange juice
⅔ cup lime juice
½ cup red wine vinegar
1 lime, sliced

Steps:

  • Place beef in a large resealable plastic bag.

2 jalapeños
1 medium tomato, cored and cut into quarters
1 small yellow onion or 1/4 large one, peeled and cut into quarters
5 cloves garlic
2 tablespoons white granulated sugar
1/4 cup ancho chili powder
1 tablespoon ground black pepper
1 tablespoon kosher salt
1/2 large bunch cilantro, leaves and stems, well rinsed
1/3 cup fresh-squeezed orange juice (about 1 orange)
3 tablespoons fresh-squeezed lime juice (1 or 2 limes)
1/4 cup mirin
1 12-ounce can (1 1/2 cups) Budweiser or other lager beer
2 pounds skirt steak, cut into 10-inch sections
2 tablespoons olive oil

Steps:

  • Preheat the broiler. Place the jalapeños on a cookie sheet or in a skillet with an ovenproof handle, and put them under the broiler until their skins begin to blacken and bubble. (You can also do this by putting the peppers directly over a burner on your stove or on a gas grill.) Pull the stems and seeds from the jalapeños and discard them; skin the peppers and put them into a food processor.
  • Add the tomato, onion, garlic, sugar, ancho chili powder, black pepper and salt to the bowl of the machine, and pulse to combine. Add the cilantro, the fruit juices, mirin and beer. Process again until smooth.
  • Transfer the marinade to a large, nonreactive bowl and submerge the steak in it. Cover and place in refrigerator for at least four hours or overnight.
  • Build a fire in your grill. If using a gas grill, turn all burners to high
  • When all coals are covered with gray ash and the fire is hot (you can hold your hand 6 inches over the grill for only a few seconds), remove steaks from marinade, drizzle with olive oil and placeon the grill directly over the coals and cook until deeply seared, turning a few times, approximately 10 minutes for medium-rare. Remove steaks from the grill and allow to rest a few minutes. Slice against the grain into thin strips and serve with warm corn tortillas, pico de gallo (see recipe), grilled scallions, whatever you like.

Steps:

  • Combine mayonnaise, sour cream, 1/2 cup cilantro, green onions, 1 1/2 tablespoon ground chipotle peppers, 1 tablespoon lime juice, garlic basil spread, 1 teaspoon cumin, salt, and black pepper in a bowl. Stir until combined. Cover and refrigerate chipotle mayonnaise for at least 1 hour.
  • Combine beef tri-tip, Anaheim chile peppers, onion, red bell pepper, green bell pepper, juice of 1 lime, olive oil, garlic, red pepper flakes, 1 teaspoon cumin, 1 teaspoon ground chipotle pepper, smoked paprika, and Mexican oregano in a large bowl; season with salt and black pepper and toss to combine.   • Heat a large pot or Dutch oven over medium-high heat. Add beef mixture and cook, stirring constantly, until onions soften and become golden and beef browns, 15 to 20 minutes. Stir in 1 cup chopped cilantro and jalapeno peppers.
  • Spread each hoagie bun with 2 tablespoons chipotle mayonnaise. Spoon beef mixture into buns and top each sandwich with 2 ounces Asiago cheese.

Ever had El Torito's Carne Asada? Well I love it and get it every time I go. There's just something about the sauce they pour on top that puts it *over* the top. So I finally decided to try my best at recreating it. How did I do? The key is the white vinegar. Oh and if you do not like your food very spicy, then please remember to remove the seeds and membrane from inside the peppers.

1 lb skirt steak
1 lime, juice of
1 tablespoon white vinegar
2 serrano peppers, chopped
1 teaspoon onion powder
1 garlic clove, chopped
1 teaspoon Mexican oregano
1 tablespoon cilantro, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 (14 1/2 ounce) can fire-roasted tomatoes
1 jalapeno, chopped
1 garlic clove, chopped
1 tablespoon white vinegar
1 teaspoon sugar
1 tablespoon cilantro, chopped
salt & pepper
1 corn tortilla
2 ounces monterey jack cheese

Steps:

  • Place all of the marinade ingredients, except for the steak, into a food processor and buzz them up. Then pour the mixture over the steak in a non-reactive container and marinade for about 15 minutes. Any longer and the acid from the lime juice will cook your steak for you!
  • Meanwhile prepare the sauce by buzzing the fire roasted tomatoes, jalepeno, garlic, vinegar, sugar, cilantro and salt & pepper in your food processor until you have a fine consistency.
  • Place this mixture in a pot over medium heat and cook for about 20 minutes, stiring constantly to make sure the tomatoes don't burn.
  • Grill the steak over high heat to your desired doneness (skirt steak is exceedingly thin so 2 minutes a side on my gas grill was about medium rare). It all depends on your heat, so since you're the cook, you decide!
  • Top the steak with the sauce and serve.
  • Optionally, to do it exactly like they do at El Torito, go ahead and roll the jack cheese inside a corn tortilla (which has been softened in a little bit of hot oil for 5 seconds), which you have baked just until the cheese melts. Place this enchilada on top of the steak before you spoon on the sauce.
  • Please enjoy.

This recipe has been in my family for many years. Originally, we are from Jalisco, Mexico where this Mexican favorite originated. This is better than anything you'll ever get in a "corporate" mexican restaurant in the U.S. Sorry, El Torito... Prep time does not include marinating time of one hour (min).

2 lbs flank steaks (preferably flap meat from Mexican grocery)
3/4 cup beer (6 oz)
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon achiote powder (optional)
1/4 cup orange juice
1 teaspoon sugar
3 garlic cloves, minced
salt
pepper
1 pinch red pepper flakes (optional)

Steps:

  • In a large ziploc bag, place beer, oregano (rub between palms to crush while adding), cumin, orange juice, sugar and garlic. Add salt and pepper to taste, making it a bit on the salty side.
  • Add red pepper flakes and achiote powder, if using. Achiote gives it a nice color and a subtle taste.
  • Zip bag closed and shake or knead to blend all ingredients well.
  • Add flank steak, zip closed and combine to saturate all sides of beef. Refrigerate at least one hour, turning and shaking bag from time to time.
  • Drink rest of beer while meat is marinating.
  • Place meat on hot grill, turning only once, about four minutes per side for medium well.
  • When done to your liking, place meat on cutting board, let rest for a few minutes, then cut into small 1/2 inch pieces.
  • Serve with warm corn and/or flour tortillas, guacamole, salsa and sour cream (or crema fresca). Beans and mexican rice on the side - see my recipe for the rice.
