Carrabba's Cavatappi Amatriciana (Side Dish Pasta) image

This is an approximate verision of Carrabba's. This is served in the restaurant as a side dish but would be just fine as a main dish when pancetta is added in. Cavatappi pasta is a short tubed corkscrew or S-shaped pasta. It can be hard to find but I was able to find it called "Twists" by the pasta brand DaVinci (blue bag).

8 -12 ounces cavatappi pasta
1 1/2 cups onions, chopped
2 garlic cloves, minced
1/2 teaspoon red pepper flakes
1/4 cup olive oil
3/4 cup dry white wine
2 (14 ounce) cans diced tomatoes with juice
salt and pepper, to taste
1 1/2 cups freshly grated pecorino romano cheese
pancetta (cured italian bacon) (optional)

Steps:

  • Cook cavatappi according to package directions; drain.
  • Saute onions, garlic, and red pepper flakes in olive oil over medium heat till onions are soft and translucent.
  • Add white wine and cook till nearly evaporated.
  • Stir in tomatoes with their juice till slightly thickened (3-5 minutes).
  • Taste, and add salt and pepper as desired.
  • Mix into cooked cavatappi.
  • Toss with cheese.
  • Add cooked pancetta (optional).

Posted from a copycat site in response to a recipe request. The author found that it tasted more like the Carrabba's dish when the melted lemon butter is poured over the scallops and shrimp and served instead of having it on the side.

4 scallops (size U-10 to U-20)
4 shrimp (size U-16 to U-20)
1/8 teaspoon kosher salt
1/8 teaspoon white pepper
2 tablespoons extra virgin olive oil
1/4 cup seasoned Italian breadcrumbs, for breading
2 ounces lemon butter
fresh parsley, chopped

Steps:

  • If using bamboo skewers, soak in water 1/2 hour.
  • Season scallops and shrimp with salt and pepper.
  • Lightly coat with olive oil, then dip in seasoned bread crumbs.
  • Skewer and grill on both sides.
  • Melt lemon butter and serve with seafood.
  • Sprinkle chopped parsley on top.

Cavatappi (I use 1/2 to 3/4 of a box)*
1 1/2 cups chopped onions

1/2 tsp. red pepper flakes

2 cans (14 ounce each) diced tomatoes in tomato juice
Salt and pepper, to taste
1 1/2 cups freshly grated Romano cheese

Steps:

  • Cook cavatappi according to package directions; drain. Saute onions, garlic, and red pepper flakes in olive oil over medium heat till onions are soft and translucent. Add white wine and cook till nearly evaporated. Stir in tomatoes with their juice till slightly thickened (3-5 minutes). Taste, and add salt and pepper as desired. Mix into cooked cavatappi.   • Make the sauce by melting 1 tablespoon of butter over medium heat in a large sauce pan. Once completely melted add pancetta and cook until a light golden brown, about 5 minutes. Stir in onions and garlic and cook for 8 minutes or until it becomes a rich, deep golden color. Make sure to occasionally stir while cooking the pancetta and onions.
  • While the onions are cooking, crush or chop the whole tomatoes from the can, do not discard the juices. Add them into the sauce pan along with the leftover juice from the can. Stir in one cup of water and hot pepper flakes. Bring to a boil, once boiling reduce heat to medium-low and simmer for 20 minutes. Remove from heat and stir in the remaining 2 tablespoons of butter. Season with salt to taste.
  • Cook noodles according to package directions. Drain and return pasta to cooking pot. Add the sauce and Romano cheese, stir until combined.
