1 pkg (15.25oz each) Duncan Hines® Signature Carrot Cake Mix
3/4 cup water
1/3 cup vegetable oil
2 eggs
1 egg yolk
1 container (16 oz each) Duncan Hines® Creamy Cream Cheese Frosting
24 walnuts halves (about 1/2 cup)

Steps:

  • Preheat oven to 350°F. Spray 9x13 pan with baking spray.
  • Beat cake mix, water, oil, eggs and egg yolk in a large bowl with an electric mixer on low speed for 1 minute. Spread batter evenly into baking pan. Bake 22 to 25 minutes or until toothpick inserted into center comes out clean. Remove from oven and cool completely in pan.
  • Remove cooled cake from pan onto large serving platter (or serve out of baking pan). Slice cake into 24 squares with serrated knife, and frost each square with cream cheese frosting. Top each carrot cake bite with walnut halves and serve.

15 dates pitted Deglet Noor dates
5 medium dried apricots
1 cup chopped carrot
1 cup chopped walnuts
⅓ cup unsweetened coconut flakes
¼ cup toasted almond butter
2 tablespoons flax seed meal
1 ½ teaspoons ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
½ teaspoon vanilla extract
1 pinch salt

Steps:

  • Combine dates and apricots in a small measuring cup or bowl. Add enough hot water to cover and allow fruit to soak for 15 minutes to soften.
  • Drain dates and apricots and add to the bowl of a food processor. Add carrots, walnuts, coconut flakes, almond butter, flax meal, cinnamon, ginger, nutmeg, vanilla extract, and salt. Pulse, scraping down the sides frequently, until mixture comes together to form a mostly smooth, sticky dough, 5 to 7 minutes.
  • Scoop out tablespoon-sized balls of dough using a lightly greased tablespoon measure. Roll into balls with lightly greased hands.
  • Place bites into an airtight container and freeze until set, at least 1 hour. Keep stored in the freezer.

¼ cup peanut butter
3 tablespoons honey
2 tablespoons chopped walnuts
2 tablespoons chopped raisins
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon ground ginger
⅛ teaspoon salt

Steps:

  • Line a baking sheet with parchment paper and set aside.
  • Combine carrots, oats, flax meal, peanut butter, honey, walnuts, raisins, vanilla, cinnamon, ginger, and salt in a bowl. Beat with a hand mixer until well combined.
  • Roll mixture into 12 equal-sized balls and place on the baking sheet. Freeze until they hold their shape, at least 1 hour. Transfer to a freezer-safe container and store in the freezer.

2/3 cup shortening
1 cup packed brown sugar
2 large eggs, room temperature
1/2 cup buttermilk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 cups quick-cooking oats
1 cup shredded carrots
1/2 cup chopped pecans

Steps:

  • In a large bowl, cream shortening and brown sugar until light and fluffy, 5-7 minutes. Beat in the eggs, buttermilk and vanilla. Combine the flour, cinnamon, salt, baking powder, baking soda, nutmeg and cloves; gradually add to creamed mixture. Stir in the oats, carrots and pecans., Drop dough by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° until lightly browned, 6-8 minutes. Remove to wire racks to cool., Freeze option: Drop dough by rounded teaspoonfuls onto parchment-lined baking sheets. Freeze until firm. Transfer cookie dough balls to resealable freezer containers; seal tightly and freeze for up to 3 months. To bake, place frozen dough 2 in. apart on ungreased baking sheets. Bake at 375° until lightly browned, 10-15 minutes. Remove to wire racks to cool.
