Yummy peach cobbler made with cake mix. It makes you feel as though you are in the South on a warm sunny day. This recipe is inexpensive, easy, and surprisingly delicious!

2 (15.25 ounce) cans peaches in light syrup
1 (18.25 ounce) box yellow cake mix
½ cup butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pour peaches into a baking dish. Sprinkle cake mix on top and pour melted butter all over.
  • Bake in the preheated oven until golden brown, about 50 minutes.

8 large Fuji apples (about 4 1/2 lb), peeled, sliced
3/4 cup packed brown sugar
1 tablespoon Gold Medal™ all-purpose flour
1/4 teaspoon ground cinnamon
1 box Betty Crocker™ Super Moist™ carrot cake mix
1/4 cup butter, melted
2 eggs
3 cups powdered sugar
1/2 teaspoon vanilla
1/2 to 2/3 cup buttermilk

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, toss apples, brown sugar, flour and cinnamon until apples are coated. Pour into baking dish.
  • In same bowl, stir together cake mix, melted butter and eggs until blended. Spread or dollop batter over apples.
  • Bake 40 to 45 minutes or until filling is bubbly and topping is golden brown.
  • In medium bowl, mix powdered sugar, vanilla and enough buttermilk until glaze is thin enough to drizzle. Drizzle glaze over individual servings of warm cobbler.

1 cup flour
2 teaspoons baking powder
½ teaspoon kosher salt
¾ cup sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ cup unsweetened applesauce
¼ cup milk
¼ cup unsalted sweet cream butter (melted)
1 ½ teaspoons pure vanilla extract
1 cup grated carrots
⅓ cup sugar
⅓ cup light brown sugar
⅓ cup chopped walnuts
1 ½ cup hot water

Steps:

  • Preheat oven to 350°F and coat baking dish with non-stick spray.
  • Whisk together the dry cake ingredients in a large mixing bowl.
  • In a different mixing bowl, whisk together the applesauce, milk, melted butter, vanilla and grated carrots.
  • Slowly pour the wet ingredients into the bowl of dry ingredients, mixing as you go. When fully incorporated, scoop batter into your prepared baking dish.
  • In a medium mixing bowl, whisk together the dry topping ingredients (you don't need the hot water just yet). Sprinkle this mixture on top of your cake batter.
  • Carefully pour the hot water on top of the cake and bake for 45-55 minutes, or until the middle is set.
  • Allow to cool for 10 minutes, then scoop and serve.
